Message from the Chief Executive
It was fantastic to see so many people at our conference this year in Glasgow. The conference combined a
mixture of social activities, business sessions, awards ceremonies and the opportunity to meet and speak
with our industry supporters. Every one of our speakers was excellent and brought a great mix of bakery,
business experience and the political and business insight provided by Lord Digby Jones was outstanding.
Since the conference we have launched the James Allan Memorial Trophy – thanks to Iain Campbell for
hosting us and to Michelle McManus for helping raise much needed funds for the Make a Wish Foundation.
Thanks also to Macphie who will host the winner for one week at their fantastic Head Office in Glenbervie.
Jim McCormack, Senior Training Adviser and I joined the centenary celebrations of Voe Bakery in Shetland in May. I think the
whole population of Shetland descended on Voe during the weekend, including a regiment of Viking Warriors and the Royal Navy.
It was an absolute privilege to be invited to attend and we wish Laurence and Tracey Thompson every success on their journey to
the next 100 years.
We had the Scottish Development International (SDI) In-Country Market Specialists in Scotland recently. We are part funding
them as part of our Export Group and they are promoting Scottish food and drink across the world for the benefit of our members.
We had an exclusive meeting between them and members of our Export Group to critique products and packaging and determine
suitable markets.
We also have 25 bakers going to Zeelandia in Holland on a 40 Group Study Tour in June and I look forward to telling you how this
went in the next newsletter.

Message from the President
Well, what can I say? The feedback we have had on this year’s conference has been fantastic with many
people saying that they didn’t think we could better last year’s conference but we did!
It was lovely to see 400 members of the bakery sector having a great time and I would like to say a big
thank you to everyone who attended and to congratulate all of the winners of this year’s awards. I would
also like to thank all of our sponsors and exhibitors whose support is invaluable and enables us to put
on an event of this quality. It was great to see so many people from our trade there and it was great to
catch up with friends and to make new ones. It’s encouraging to see new faces at conference and the
mix of business, awards and social activities just seems to work.
Business goes on and we are now into a new financial year and have increased the number of learners on our training
programmes across the UK and are supporting members with pasty tax and labelling issues. We have launched this year’s
search for the Bakery Apprentice of the year who will be awarded the James Allan Memorial Trophy. I would encourage you
to enter anyone in your business who is currently completing or who has recently completed a bakery apprenticeship.
For those of you who attended conference I hope you enjoyed and benefited from it and for those of you who didn’t, I would
encourage you to join us next year for our 125th anniversary conference. I know you will not be disappointed.

Our conference this year
was our biggest and best
yet. A huge thanks to all
who attended – we very
much hope that you not
only enjoyed yourself
but also found it to be a
worthwhile experience.
For those of you who weren’t able to
attend, we kicked off our weekend
on Friday with our ever expanding
supplier showcase, with 36 impressive
exhibition stands over three rooms.
As usual each and every exhibitor
went to a tremendous amount of effort
to ensure that their stands looked
professional and interesting, and it has
to be said that the exhibition areas
looked fantastic.
Friday afternoon’s drinks reception
which followed the official opening
from President John Gall was kindly
sponsored by Reynards and the
networking really got going once the
refreshments started to flow. With
the supplier showcase wrapping up
at 5pm on the Friday afternoon it
was off to get ready for the evening
events which commenced at 7pm
with another drinks reception kindly
sponsored by Glasgow City Council.
Once seats were taken for dinner,
welcome speeches were given by
Glasgow City Council’s Depute
Lord Provost Bailie Gerald Leonard,
Scottish Bakers Chief Executive Alan
Clarke, Scottish Bakers President
John Gall and Scottish Bakers
Ambassador Mich Turner MBE.
Guests were teased before dinner
with a sneak preview of The Bay
City Rollers set which really set the
atmosphere for a fantastic evening.
Following dinner was the Regional
Scottish Baker of the Year Awards –
a first for this year and something
we hope to repeat in future years
due to its success. The awards were
compered by Mich Turner MBE and
Alan Clarke and presented by each
4
of the category sponsors. The Bay
City Rollers were playing live on stage
very soon afterwards maintaining the
electric atmosphere within the room.
As always the Rollers got everyone up
on the dance floor waving their tartan
and shang-a-lang-ing along! A disco
topped off the night which ended at a
(relatively!) respectable hour to allow
people to wake up refreshed
for Saturday’s proceedings.
Saturday morning kicked off bright
and early with a superb cake
decorating master class from
Mich Turner MBE. Mich skilfully
demonstrated decorated a Fabergestyle cake with sugar paste,
decorating with hand-piped detail,
hand rolled lustered pearls, gold
leaves and a hand moulded rose.
It was a really interesting session
and one we bet guests were glad
they got up for, despite the early hour!
Once the Product awards had been
announced and given out it was on to
the Business awards where the Craft
Baker of the Year, Retail Baker of the
Year, Wholesale Baker of the Year
and the overall Scottish Baker of the
Year would be crowned. After much
build-up and some fantastic footage
of the finalists’ video interviews the
results were revealed. Following
the formalities of interviews and
photographs for the winners there
was nothing else to do but get the
disco going and enjoy the rest of the
night – which on Saturday was on
until 2am with some staying up far
later! Needless to say there were a
few tired souls on Sunday but all in
all a fantastic weekend all round and
we hope as many of you as possible
will join us again next year when we
do it all over again!
The day continued with a wonderful
programme of speakers (more about
them over the page) who were all
quite obviously much appreciated and
enjoyed by the audience. The finale
of the day was of course Lord Digby
Jones whose presentation earned a
standing ovation!
And on to the evening entertainment,
kicking off with our Presidential Drinks
Reception sponsored by Flemings
and then the Presidential Banquet
where top table guests, including the
Craft Bakers Association and the Irish
Association of Master Bakers, were
welcomed by President John Gall. The
Special Awards for Life Members and
Honorary Members were presented
before the banquet was served.
Once dinner was over and done with
it was down to the serious business
of the National Scottish Baker of the
Year Awards and the trophies were
ceremoniously piped in and on to
the stage. The awards were again
presented by Mich Turner and Alan
Clarke and Regional Winners from the
Friday night were on the edge of their
seat as they awaited the results.

Scottish Baker Life Member & Honorary Member Awards
At the Scottish Bakers Conference weekend in Glasgow, Scottish Bakers recognised four individuals for the service they
have given to the bakery sector in Scotland. Firstly Immediate Past President Gordon McGhee who was instrumental in
modernising the Association. During his Presidency Scottish Bakers relocated to a new Head Office in Dunfermline and
significantly increased their training and range of services on offer. Gordon was presented with a Life Member Award.
The second Life Member Award went to Dennis Brown of BFP. He has spent most of his career in the bakery industry both
working for bakeries and working for suppliers and plans to retire from full time employment later this year. He is currently
employed as Area Sales Manager for BFP in Scotland although his career has seen him working in Aulds Bakery and
Bako. He has been a keen supporter and advocate for Scottish Bakers and along with his Managing Director Nick Harris
hosted the first ever winners of the Scottish Bakers Awards at their Innovation Centre in Lille in France. Dennis is known as
a hard worker and well-liked by everyone he meets. He always has a good word for everyone and always has a smile on
his face.

The final Scottish Bakers Life member Award went to Terry Tredget from Rondo. Terry started his career as an apprentice
at a small bakery then joined a larger bakery where he became Bakery Manager, overseeing the manufacture and supply
of top quality products to prestigious customers. He then left, transferred to sales and joined a supplier to the bakery
trade and has travelled the UK and much of the world installing and demonstrating their range of equipment. He jointly
led a Scottish Bakers 40 Group study visit to Germany and Switzerland last year and many of the people who took part in
that visit hold him in the highest regard. His outgoing character, deep bakery knowledge and likeable personality saw him
become a respected and trusted partner to many bakers around the UK and there are many who have benefitted from his
knowledge and honest approach to problem solving.
The final award presented was the highest accolade Scottish Bakers can award, and Keith Houliston of British Bakels
was made an Honorary Member. Keith joined the Scottish Baking Industry in 1981, and quickly became active in Scottish
Bakers making many friends. He progressed through the ranks and ended up serving most of his career in England.
Although he is based in England he is a keen supporter of Scottish Bakers and has been instrumental in assisting to
plan and deliver recent 40 Group Study Tours, and acts as an advocate for the Scottish Bakery industry assisting to
substantially increase the number of bakers in Scotland who took part of Craft Baker Week last year when he was
chairman of the organising committee. A very deserving recipient indeed.

Our line-up of speakers this year was considered by many to be one of our
best yet, and from a business point of view it was definitely the most insightful.
After the Presidential Welcome from John Gall we then had Alan Clarke
speaking on Scottish Bakers and the progress the organisation has made
over the past year. Following on from this was Peter Sidwell from Britain’s
Best Bakery discussing his work with the NHS in Scotland and how bakers
can profit from producing healthier items.
Mich Turner MBE then returned to the stage with her session on baking for
celebrities, intriguingly titled ‘Confessions of a Cake Lady’. Following this we
were entertained by Martin Lightbody who regaled us with the story of how his
company Lightbody Ventures came about. Next up was Paul Grant who is the
Chairman of Mackays Jam who explained how his company rose to success.
After lunch was last year’s Scottish Baker of the Year Winners George and
Ali Asher followed by World Scotch Pie Champion Linda Hill, who all told the
audience what their win had meant to them and for their business.

Last but by no means least was Lord Digby Jones who delivered an
outstanding presentation, giving his unique take on business and politics
and making a great deal of sense to everyone listening. We’re sure there will
be many lessons learned and ideas taken away from the day’s key session.

Shetland Bakery still rising after 100 years
Shetland’s Voe Bakery, famed for its bannocks, pies and
biscuits, celebrated its centenary last weekend. Hundreds
of locals descended on Voe harbour to ensure that the
bakery celebrated in style.
The event involving representatives from the Royal Navy
and a regiment of Viking warriors was held in the village of
Voe on Saturday 23rd May in its honour. The celebrations
saw stalls erected at the waterside, music, food, a pie
eating competition and children’s entertainment. Voe
Bakery is owned by Laurence and Tracey Thompson,
Tracey was proud to be leading the celebrations, and said:
“There can’t be many places in the UK still doing the same
thing as 100 years ago.”
Scottish Bakers Chief Executive Alan Clarke and Senior Training Adviser Jim McCormack joined the celebrations.
Alan said that the company’s anniversary highlights the
importance of family owned craft bakers. “Of our 200plus bakery members, Voe Bakery is situated in one of
the most picturesque locations and I am delighted to be
visiting them again this weekend to support their centenary
year celebrations. In this challenging economic climate it is
encouraging to see family businesses thriving as much as
Voe Bakery is and it is testament to the family’s commitment
and passion that the bakery has continued to survive and
flourish providing employment and high quality bakery
products for local people.
War One. The crews were in the isles as part of Britain’s
blockade to stop the enemy from getting supplies - such
as metal, oil, foodstuffs and fabric, by patrolling the North
Atlantic to intercept merchant ships from non-combatant
countries that may have been supplying items to Germany.
The 750 tonne Portsmouth-based Royal Navy mine hunter
HMS Middleton arrived in Lerwick on Thursday where it
remained stationed for five days to mark the occasion.
With a number of ships stationed in Shetland, there was a
need for easily reached sustenance - but the basic staple of
bread wasn’t readily available. The bakery’s range of products
has developed over the years and now includes a full range
of bakery products which differs from the basic white unsliced
bread and biscuits of its emerging years. However, their
iconic bannocks, remain the most popular item on sale,
with the festive period dubbed “bannock season”.
“I hope that Lawrence and Tracey have a great weekend
and that the business goes on to celebrate its 200th
anniversary in years to come.”
The bakery began life in 1915 at the request of the Navy to
feed hungry sailors stationed in nearby waters during World

I run a bakery and I have recently discovered an error on a previous VAT
return. We have incorrectly recovered VAT on a number of duplicated
invoices. Can you tell us how we can correct this error and what implications
this may have for us with HMRC?

Dear MB,
Firstly, when you discover an error on a previously submitted VAT
return you have an obligation to correct this. The way in which you
do that will depend on its value. HMRC generally allows businesses
to correct errors on the VAT return during the period in which the
business discovers the error, where:

• it is below a net value of £10,000 VAT; or

However, where the net value of the error exceeds the limits above, you

Your business may also be liable to a penalty assessment which is
calculated based on the amount of the VAT due and the circumstances
which led to the mistake. However, where the business has fulfilled
all of its obligations in so far as disclosing and correcting the error, the
penalty may be suspended or mitigated in full.

Food funding – Cabinet Secretary
launches £70m support scheme
A massive funding programme for food and drink
businesses across Scotland has been launched by
Cabinet Secretary for Food Richard Lochhead.
On a visit to The Breadwinner Bakery in Edinburgh
during Real Bread Week in Scotland’s Year of Food
and Drink, Mr Lochhead announced the new Food
Processing, Marketing and Co-operation (FPMC) grant
scheme is now open for capital-related applications.
The scheme will widen to non-capital and co-operation
bids later in 2015.
The scheme will plough £70 million into food and drink
processing in Scotland as part of the new Scottish Rural
Development Programme (SRDP) 2014-2020, which is
expected to receive formal EU approval shortly.
Mr Lochhead said:
“Scotland’s £13.9 billion food and drink growth sector
has already rocketed since 2007. Turnover here has
shot up 21 per cent compared to growth of 8.6 per
cent across the rest of the UK, with Scotland’s massive
success fuelled by the unwavering support of the
Scottish Government and our agencies.
“Under the last Food Grants Scheme the Scottish
proud to support Scottish Bakers
Government supported 172 projects between 2007 and
2013. Our £47 million investment levered £114 million
private sector funding and safeguarded or created about
8,500 jobs.
“I am delighted to be launching the new scheme
in Scotland’s Year of Food and Drink, and to have
increased funding by 50 per cent which will enable us to
invest even more in Scottish food and drink businesses.”
The Breadwinner Bakery has previously received
£20,000 in support via the food grants scheme and was
last year named 2014 Bakery of the Year at the Scottish
Food Awards.
Director Kris McVey said:
“Since receiving our FPMC grant, our business has gone
from strength to strength. The funding enabled us to
move into bigger premises and win new contracts, such
as the deal to supply Scotmid and Patisserie Valerie
- while remaining true to our values as a ‘Real Bread’
Bakery. As a consequence, we have been able to take
on 17 more staff, including two apprentices through
our partnership with Bernardo’s – with many more
opportunities available to us, the challenge now is to
manage the growth.”

A Skills Competition for Young Bakers in Scotland
in memory of the late James Allan
ABOUT THE COMPETITION
THE PRIZES
Entrants will be expected to demonstrate their
bread making skills by making a batch (8) of
six strand plaited loaves on the day of the
competition in the Macphie of Glenbervie
Product Applications Bakery.
The Winner receives the James Allan Memorial
Trophy and a week long, all expenses-paid visit
to Macphie of Glenbervie, staying in a modern
cottage situated on the picturesque Glenbervie
estate. He or she will have a fantastic, one-off
opportunity to work with a team of baking experts,
learning new skills and techniques to help them
in their future careers.
Entrants are required to provide a product specification
for their chosen product and from the 8 produced they
will select 3 for the judges to score.
Each candidate will also be required to finish a
batch of confectionery products of their choice.
They must bring unfinished bases (eg. sponges/
eclairs) of product with them to Macphie where
they can use supplied creams, icings and
frostings to demonstrate their finishing skills.
The 1st runner up receives
£150.00 bursary

James Allan was born in Forres in 1901 and raised in Nairn. He served in
the Merchant Navy as a Wireless operator towards the end of the Great War.
Upon leaving the Navy, he started as an apprentice grocer with one
of Scotland’s leading grocery shop chains at that time - Cooper & Co becoming Assistant Manager in Inverness in 1922 and then Manager of
the Crieff branch one year later.
James Allan
1901 - 1963
James was always determined to open a high-class delicatessen and bakery
of his own. With that aim in mind, he moved to Glasgow in 1930 to acquire the
bakery experience he required by joining City Bakeries. Unfortunately
the advent of the Great Depression forced James to abandon his dream.
He remained at City Bakeries and was still working there when they were eventually taken over by
Mr Garfield Weston’s Allied Bakeries group just after the Empire Exhibition in the early 1940s. He
remained with Allied Bakeries and moved to London in 1955 to take over the running of the Aerated
Bread Company (ABC), one of London’s biggest bakeries and the most recent acquisition to the group at
that time. Within just six months, through astute selling of property, James had made £250,000,
more than Mr Weston paid for the entire business, and he still had over 100 shops remaining!
James returned to Scotland in 1963 to assist with the troubled Scottish arm of the Allied group but sadly
passed away in May of that same year.
His son Hamish, who himself has been a baker all his life and is now enjoying his retirement, has donated
this award to both honour the memory of his late father whilst, at the same time, providing support and
encouragement for people within the bakery sector through the recognition of the specialist skills that they
have developed.

location for the launch of the 2015
Bakery Modern Apprentice of the Year
competition organised by Scottish
Bakers, the trade association for
bakers in Scotland.

attended the launch event, competing
to see who could produce 250 empire
biscuits first with the help of last year’s
winner Robert Garner and runner up
Sarah Dick.
Iain Campbell from Campbell’s
Bakery was delighted to be hosting
the launch event, saying: “Last year
I was very proud to see one of my
staff, Robert Garner win the James
Allan Memorial Trophy which is
presented to the winning apprentice.
It is essential to protect the craft skills
in our industry and this is a great
competition to recognise the skills
that apprentice bakers possess.”
The competition is being launched
during Scottish Apprenticeship week.

pop idol when she was 23, said: “I’m

search for the Scotland’s next Bakery
Modern Apprentice of the Year. There
are so many fabulously talented
young people in our country and
with Scotland’s vast and wonderful
larder at their disposal it’s set to be
a competition with a recipe for 5 star
success.”
The launch is supporting the Make a
Wish Foundation charity and Carolyn
Thornton their Scottish Manager was
enthusiastic, saying: “We are delighted
that this competition is being launched
with the making of special Make a
Wish empire biscuits and we would
like to thank Campbell’s Bakery of
Crieff for their kind generosity.”
The competition is open to anyone
completing a Scottish Bakery Modern
Apprenticeship and winners will be
announced in September 2015.
Interested candidates should contact
their National Food and Drink (Scottish
Bakers)Training Advisor to note their
interest. Training Advisors will visit
candidates in person or review video
evidence of candidates demonstrating
their skills in making the relevant
products before shortlisting a
maximum of five candidates to
progress to the final in September.

Entrants had to complete a golden ticket that was entered into
a raffle, Mich Turner MBE then announced the winner who was
David Little of the family business R Little Bakers in Moffat.
It was with much sadness that
President John Gall, members
of the Scottish Bakers Board
and Chief Executive Alan Clarke
attended two funerals in recent
weeks.
The first, at the beginning of
April, was for Mairi Hogg, wife of
Macphie’s Fraser Hogg. Mairi had
been courageously battling with
Myeloma (a cancer of the bone
marrow) over the last five years,
but always remained positive and
determined to live as full a life as
possible, with Fraser constantly by
her side, supporting and caring for
her. Mairi passed away at home
with all her family around her,
which was exactly how she had
wanted it to be.
More recently was the funeral of
Martin McDonald of McDonald’s
Bakery in Glasgow. Martin was
responsible for the administration
and retail side of the business.
His efforts and enthusiasm
were second to none. He was
very proud of the progress and
achievements of the business,
especially the flagship shop in
Trongate. He will be sorely missed
by his family, friends, staff and
customers.

Today (13/5/15) David and his son Cameron took delivery of the
machine and they could hardly contain their excitement “We are
delighted” comments David. “We’ve been thinking of investing in
a depositor and to win one like this is just amazing” he says.

The Scottish Baker of the
Year Product Judging event in
March provided a catalyst for
two of Scottish Bakers’ longest
surviving Past Presidents to
take a trip down memory lane
together.
Long time friends Jimmy Asher
and Ian Terris, along with wives
Marilyn and Jean, took the
opportunity to meet up at Ian’s
home near Dunfermline whilst
Ashers were in town delivering
their products for judging.

British Pie Awards 2015 for their

The Killie Pie fought off stiff
competition from many entries from
all over Britain to be presented the

Allergen incident Recipe based claims
on baked products
Food Standards Scotland were in touch recently to
let us know about a recent food allergy incident linked
to oat based baked biscuits. The product packaging
carried the claim ‘Wheat free recipe’ and based
on this information, a parent decided the biscuits
would be suitable for their wheat allergic child. After
consuming some of the product, the child suffered
a severe allergic reaction and subsequently required
hospital treatment. Thankfully the child has now
recovered although the incident caused great distress
for the family and they have now raised concerns
about labelling information.
Whilst the company concerned, in this case, is in
discussion with the Local Authority about ways
to improve the labelling of their products, Food
Standards Scotland is aware that other businesses
make similar claims about their products, e.g. ‘free
from milk’ or ‘nut free recipe’. For those businesses
with dedicated production lines it may be possible that
products made to ‘wheat free recipes’, for example,
do not contain any wheat. However, it is likely that
many businesses will find it difficult to eliminate the
accidental presence of wheat during production,
therefore making an allergen claim based on a recipe
potentially misleading.
Please review the use of ‘wheat free recipe’ claims
and also any other claims suggesting the absence of
a particular food allergen on your product labelling.
Although this particular incident relates to wheat,
there may be similar claims being made about other
allergens used in recipes.

HSE inspection programme
in food manufacture
focus on occupational health
HSE is targeting occupational health topics –
carcinogens, asthmagens and Musculoskeletal
Disorders (MSDs) - through an inspection programme,
in industries including food manufacture, from this April.
In food manufacture the inspection focus is on:
•
control of flour dust – an asthmagen – in bakeries
and biscuit and cake manufacturers
•
control of MSD risks - in the same industries
as flour dust and also the poultry and meat
processing and dairy sectors. Other food
manufacture sectors will be brought within scope
of the MSD inspection programme from October.
One of our members was inspected by HSE and
received an Improvement Notice and fine because their
employees were routinely exposed to concentrations of
airborne flour dust through their work activities. Inhaling
flour dust is well known to cause respiratory disease
that can impact severely on the health of affected
individuals and must be controlled.
To comply the member must now provide occupational
health surveillance to employees exposed or liable to
be exposed to risks to their health from work activities
in the form of an occupational health specialist familiar
with the signs and symptoms of pneumoconiotic
disease caused by exposure to airborne flour dust.
The Occupational Health Provider should monitor the
condition of the member’s employees regularly (eg.
every 18-24 months) measuring each individual’s Lung
Function efficiency. They must maintain a record of the
results of the health surveillance for each employee,
which should be kept for a minimum of forty years as
medical records should be kept for this length of time.
