Finally spring is here; we have bud break in the vineyards and can turn our attention to the winegrowing season. All the rain we received this winter has recharged the soil profile and given the vines a great start to what we hope will be another vintage year. This fall’s Crush will mark my 15th harvest in Monterey County. We have seen a lot of changes over that time — lots of new vineyards, a proliferation of new labels, and national and international acclaim for the wines from our home. But there is one constant — the partnership between the winegrowers’ unwavering belief in the amazing quality of grapes from our region and the support of our neighbors. And while Monterey wines may no longer be a local, “best kept” secret, it is still to our local patrons that we look for appreciation and direction. Your support is crucial as we work to demonstrate this amazing Monterey Wine Country for visitors and get the word out: the wines of Monterey County are the equal of any in the world! Happily, the vineyards and wines just keep getting better and better. A few months ago, I realized my personal dream when finally opening the Hammond Vineyards’ Tasting Room on River Road. Every winemaker has a healthy ego — I feel great pride when folks stop by on the weekends and enjoy my wines. My vision is to make Pinot Noir and Chardonnay that speaks to its vineyard source, is very accessible, framing the fruit with just the right amount of oak. Reggie Hammond We hear a lot these days about buying and eating “local.” When you bring your out-of-town guests into our tasting rooms, often it will be the actual vineyard owner or winemaker across the counter, pouring that very personal sample for you. To celebrate, the festival will take a historical turn and bring guests along for a ride through the sips and scenery. On Friday evening, the festival kicks off at The Monterey Hyatt Regency, where gourmet bites and sips from the wineries will be enjoyed. During this gala evening, guests also can take a quick hop on the Champagne Shuttle sponsored by Sam Linder Auto Group and continue the party at The Monterey Museum of Art at La Mirada. This museum is known for its historic architecture and the celebrities who resided there. Guests can enjoy the views from the hilltop and of the art inside the gallery, but perhaps the most ardent competition for attention will be found in the sips of Champagne and bites of chocolate dipped strawberries. What fun to hob-nob in the same location as old Hollywood! On Saturday afternoon the Wine Festival celebration continues at another historic destination, the Custom House Plaza and Maritime Museum, with its snazzy newly appointed foyer. A sweet addition to this year’s festival is the 2nd Annual West Coast Chowder Competition. Professional chefs from the all over the Pacific Coast will come to compete as chowder lovers pay homage to their special creations. This year chefs from Seattle, San Francisco and other chowder-known destinations will be landing in Monterey to compete against the local titans of chowder. All competitors will be trying to slay the judges’ tongues with their creations, take home the prize money and boast of their achievement in what is expected to be one of the most impressive competitions around. Clam, Seafood and Creative Chowders are the categories that make up the contest and the big Copper Pot Award goes to the People’s Choice along with a cash prize. Guests can sample or buy a cup of chowder of their entries and pick their own personal favorites and compare their palates to the judges. Spring/Summer 2011 Château Julien Presents “Dine in DiVine” on August 17-20 Château Julien Wine Estate offers guests a rare opportunity to dine alfresco amongst the graceful Sangiovese vines that embellish the beautiful five-acre estate in Carmel Valley. What will it look like? Will the staff be friendly? And — most importantly — how good is the wine? The room, designed to look like a wine cellar, has warm modernist elements such as the enormous wooden slab used as the tasting bar and rococo touches like the armchairs in the front window. It felt like a nightclub that was almost, but not quite, too cool for me to hang out in. On a recent Saturday, I stopped in at Caraccioli Cellars in Carmel-by-the-Sea, which opened just three months ago. The winery has nailed it right out of the gate with their first vintage, serving up distinctive Burgundian-Chablis-style wines in an atmosphere that’s unique among Carmel tasting rooms. Scott is young, excited and just as cool as his tasting room. As he poured, he shared Caraccioli’s story. The Caraccioli family successfully grew produce near Gonzales for many years. In 2006, they expanded into viticulture. Their delectable wines prove that this was a brilliant move. Scott Caraccioli, who was pouring on the day I tasted, said that he went to great lengths to create the distinctive ambience of the Si Tyler-designed tasting room. Caraccioli worked with the town government to ensure that it would be exactly as he envisioned it. Every detail is perfect, right down to the catchy logo on every wine glass. The tasting led off with two sparkling wines, a Brut Cuvee and a Brut Rosé. Caraccioli Cellars may be the only local winery that offers up two bubblies on its menu. The sparklers made the tasting experience feel like a glamorous special occasion. The wines themselves are worthy of black tie. Most local wineries have a repertoire that’s heavy on the reds. Caraccioli bucks the trend, offering almost all white wines. The three still wines on the tasting menu include two high-minerality Chardonnays and an exquisite Pinot Noir. Every wine pairs well with Caraccioli’s carefully edited menu of small plates. Any of these wines would make a great gift to take home to friends — especially friends who like to share. The temptation to keep it for yourself will be nigh-irresistible. Better buy an extra bottle! Caraccioli Cellars is located on Dolores between Ocean and 7th in Carmel-by-the-Sea. Monterey’s Sea Harvest Fish Market & Restaurant Near Cannery Row The Sea Harvest Fish Market & Restaurant in Monterey is one of three award-winning fish market and restaurant combinations owned by the Deyerle Brothers. As a child he was influenced by multi-cultural cuisine and developed a passion for learning as much as possible about food and wine. Twenty years ago, while traveling in France, Chef Overhauser’s dream began to take shape. He fell in love with Pinot Noir and Chardonnay. Then he earned his culinary degree at the Ritz Escoffier Ecole de Gastronomie in Paris. To further his education he trained at London’s Institute of Masters of Wine. Today his career spans over two decades as a restaurateur, chef and wine professional. His time in kitchens, at the front of the house, in tasting rooms and wineries has given him an insightful approach to the pairing of food and wine, as well as pleasing palates. Since being appointed as the Director of Culinary Wine Sales at Hahn SLH Estate, Overhauser has been spearheading the development of the “Chef’s Kitchen,” the first integrated wine tasting and culinary facility in the Santa Lucia Highlands. In April, Chef Brian was featured at Pebble Beach Food and Wine and served his “Peking duck taco” alongside culinary luminaries of international renown. In May he’ll host Charles Phan of the Slanted Door at the winery for a culinary expedition and cooking demo as part of the Monterey Bay Aquarium’s “Cooking for Solutions” event. In addition to rubbing elbows with famous chefs, Brian is hard at work on the winery’s culinary program. He’s working with a local horticulturalist to develop a sustainable garden adjacent to the vineyards in the Santa Lucia Highlands, spending time with winemaker Paul Clifton to develop a series of Chef’s Kitchen wine blends, and partnering with local produce farmers to promote fresh local products. This month she turned 87. Even at this age, Elsie can sometimes be found cutting apricots, as shown in the adjacent photo. Now, however, she spends more time with her great-grandchildren, the fifth generation of B&R Farms, imparting her knowledge and love of farming. Born Elsie Bozzo in San Jose on May 24, 1924, she moved with her parents to a farm in Hollister on July 4, 1929. Here she grew up, gaining appreciation for the dedication and passion it takes to run a farm. “I started cutting Blenheim apricots at the age of 5 at my grandfather’s ranch, which was next to the Winchester Mystery House. I’ve been involved with family farms ever since,” Elsie said. In 1945, Elsie married Emil Rossi in Hollister. The following years were spent working the family’s farm and raising their children. After Emil passed away in 1981, Elsie wanted to help increase the sales of B&R Farms’ apricot products. She started selling at Farmers Markets from Santa Barbara to Los Altos, educating the public on the superb taste of the dried Blenheim apricot while her son Jim and his wife Mari managed the farm. Over the years, B&R Farms has expanded into national, international and web sales, and developed savory and sweet product lines made from time-tested family recipes. Spring/Summer 2011 Sarah’s Vineyard Produces Local Heritage Old Vine Wines always memorable in some way; spectacularly fruity Grenache, elegant Zinfandel with velvety tannin, or rich Carignane with complex evolving spices. Many were planted before prohibition, and the ancient vines are still producing. Sarah’s Vineyard has access to these remarkable vineyards and the wonderful fruit they produce. In 2010, for example, Proprietor Tim Slater made Old Vine Grenache, Carignane and Zinfandel, all from vineyards within 5 miles of the winery. “These old plants look like little oak trees, bent and twisted, and they carry an immense sense of history,” says Slater. “Walking through these vineyards on a quiet summer evening, you can feel a stoic pride and majesty radiating from these hardy old survivors. It’s easy, as you walk down the rows, to forget the present age and imagine horses pulling plows past these same vines a century ago. They annually produce about a third of the average yield for a typical vineyard, so there isn’t a lot of wine to be had from these vineyards. Now in its 32nd year of turning Memorial Day weekend into a festival of family fun, this year’s event includes gourmet food offerings, entertainment on two stages, arts and crafts, mushroom education, strolling musicians, street performers, and several blocks of booths with “finds” that include everything from carved mushrooms to collectibles. Spring/Summer 2011 Scheid Vineyards Releases its 2009 Pinot Blanc This past April, Scheid Vineyards released a wonderful seasonal wine, its 2009 Pinot Blanc. It’s great to see this varietal “returning” to favor, for some years ago many Monterey County vintners decided to cut it from their acreage and plant Chardonnay. But, Scheid has continued to produce it. Here are some comments from company Senior Vice President Heidi Scheid regarding this excellent varietal: “When I was a child, PB stood for one thing: Peanut Butter. But now that I’m grown-up, PB stands for something much greater. It’s synonymous with Pinot Blanc, possibly the most undiscovered, underplanted, elegant white wine in existence. It’s luscious, round and creamy, yet finishes with a bright acidity. Pinot Blanc is notoriously persnickety in the vineyard, and the vines are low-yielding. It’s the genetic cousin of Pinot Gris, which is a genetic mutation of Pinot Noir, also a capricious grape variety. Greenfield, with its windy, maritime climate, is ideally situated for the cool-climate loving Pinot Blanc. The cool afternoon breezes are an absolute necessity for top quality Pinot Blanc, and the long growing season allows the fruit to reach optimum flavor development on the vine. “A graceful and expressive wine, our 2009 Pinot Blanc overflows with pear and melon flavors, alongside notes of stone fruit and crème brûlée. Lohr’s Winery Within A Winery The motion picture Sideways tells a story of two guys traveling through California’s wine country on a quest for great Pinot Noir. Spring/Summer 2011 Guglielmo Winery in Morgan Hill Poised for Growth “Brand New 86-Year-Old Family Winery” is on a Roll Emilio Guglielmo Winery, family-owned and operated in Santa Clara Valley, is celebrating its 86th year in business. During 2010 they recorded a 15% increase in revenues, and they expect further growth in 2011, both domestically and internationally. While working with distributors and tasting many wines, Russell became aware of a growing trend among Chardonnay drinkers. The word “Stélé,” the phonetic spelling of “steel,” refers to the cooperage used to create this Chardonnay. It was vinted in stainless steel for only nine months. The Chock Rock Vineyard is located about 25 miles to the east, high in the Santa Lucia Mountains, on 40 acres at the upper end of Carmel Valley close to the Arroyo Seco. “Our vineyard is perched on a knoll in mountain wilderness at 1400 feet elevation, with hot summer days and cool nights,” Kathleen explained. “The name ‘Chock Rock’ comes from a local term for the soil and type of stone found here. Pastiche is a French noun that means “A musical, literary or artistic composition made up of selections from different works.” The new label, designed by Ventana’s creative staff, is meant to be eye-popping and user friendly. Phil Woodward and Victor Kong Let me introduce you to a selection of wines that play an important part in Monterey County’s winemaking history. These are the wines of Graff Family Vineyards from the Chalone Appellation in the remote hill country above Soledad. The name on the label honors Richard Graff, one of this area’s wine making pioneers. In 1964, Graff came across a bottle of Chalone Vineyard Pinot Blanc and became entranced by the unique quality of the wine. He eventually journeyed to Chalone Vineyard, the oldest commercial vineyard in Monterey County, whose first 10 acres were planted in 1919. Graff found a property that was insolvent and teetering on disaster. In 1965, he bought Chalone Vineyards, restored the grapevines, and reached full production in 1969 with a vintage that brought industry-wide attention to the secluded vineyards. Growth was underway and, in 1972, Graff persuaded Phil Woodward to join the company and take charge of marketing and financial matters. This was the beginning of what would become the Chalone Wine Group, one of this country’s most successful winemaking enterprises, that grew to include such famous labels as Edna Valley Vineyard, Acacia and others. It was a period of enormous success infused with fame from making sensational premium-priced wines. All went well until January 1998, when Richard Graff died in the crash of his small plane near Salinas. Wrath Named Wine of the Year In other news, Wrath’s 2008 San Saba Pinot Noir was voted “Best Red” and “Wine of the Year” at the 2011 Monterey Wine Competition. According to event director Robert Whitley, “At the end of the day, it was a Pinot Noir from a vineyard less than an hour from the competition headquarters that stole the show.” Over the past 18 years, the Monterey Wine Competition has been one of the country’s premier events. Past winners have included Dom Perignon, Lanson and Joseph Phelps Insignia. In addition to America’s wine producing regions, par- ticipants have included producers from Australia, Spain, New Zealand and Italy. This year’s event featured 804 entries from eight countries and a number of states. Wrath was launched in 2007 by archaeologist Michael Thomas. Famiglia DeRose Wines Have Arrived from Italy! “Italy has always been of interest to me,” says winemaker Al DeRose “since my grandparents were born there in the small town of Cosenza. I vacationed there in 2008 and tried several Tuscan wines that I immediately fell in love with. I told my father (Pat) what I had discovered and we went back the following year. We spent about a week touring Venice, Padova, Florence, Montepulciano and Bologna. After tasting many wines we decided to focus on the Montepulciano region of Tuscany, where we made arrangements with one of the top wineries to bottle special small lots of the region’s typical wines under our own private label, “Famiglia DeRose.” Al and Pat have now introduced these new nine varietals. Along with the excellent DeRose Wines from their Cienega Road property, they also offer many other international wines, from Chile, Argentina, France and Spain, all part of their Cienega Import Wine Club portfolio. Toss in olive oil, season with salt and fresh cracked pepper and thyme. Place on sheet pan and roast in 300°F oven until translucent, approximately 30 minutes. Cool. Separate rings and cut into 1-inch-wide petals. Preparation Char grill salmon filets, brush with 1 tablespoon ponzu sauce. Place a mound of sesame seaweed in the center of the plate. With the ginger wasabi sauce in a squeeze bottle, make an outline of flower petals. Fill the petals with ponzu sauce. Place the grilled salmon on top of the seaweed salad. Toss the julienne vegetables in the miso vinaigrette and lightly sauce to heat through. (Do not overcook.) Place the vegetables in a pile on top of the salmon. Garnish with a sprinkle of black sesame seeds. Wasabi Sauce Ponzu Sauce 1/2 cup 1/2 cup 1/4 cup 1 cup 1 oz 1/2 tbsp 1/4 tsp Ingredients 6 oz wasabi powder 2 cup mayonnaise 1 cup ginger gari (Japanese pickled ginger) water Preparation Mix the wasabi powder with just enough water to make a smooth paste. Mix into the mayonnaise. Puree the ginger in a blender with a little of the juice. Mix into the sauce. Chill. Ingredients for Peppered Beef Tenderloin 2 tbsp 32 olive oil 3/4-inch cubes of beef tenderloin sea salt fresh cracked pepper Preparation Ingredients Saki sugar soy sauce orange juice sesame seaweed salad lime juice red chili flakes Season beef with salt and pepper, sauté in hot olive oil until medium rare. Ingredients for Blue Cheese Fondue 1 cup manufacturing cream 8 oz blue cheese fresh cracked black pepper Preparation Combine all ingredients in pot and bring to a boil. Reduce slightly and thicken with a little cornstarch. (The sauce should be syrupy but not too thick.) Preparation Bring cream to a simmer, whisk in blue cheese to melt, season with fresh cracked black pepper. Miso Vinaigrette Ingredients 1/2 cup barley miso (light miso) 1-1/4 cup water 3 fl oz honey 1 tbsp lemon juice olive oil artisan peeled red onions fresh thyme sea salt fresh cracked pepper Place onion petals on tray, place a slice of medium rare beef tenderloin on the onion petals, spoon a small amount of the blue cheese fondue over the tenderloins. Makes 32 portions. 1/4 tbsp sesame oil 1/4 tbsp soy sauce 2 tsp fresh, grated ginger 1 fl oz water Suggested pairing: Marilyn Remark Petite Sirah Preparation Dissolve the miso in 1-1/4 cup water. Add the honey, lemon juice, sesame oil, and soy sauce. Puree the fresh ginger with 1 oz of water and press through cheesecloth into the mixture in a running blender, adding the canola oil while the motor is running. Chill. Now they’re opening a second tasting venue. Graff was a pioneer of California Pinot Noir. In 1965 he bought the distressed Chalone vineyard in Monterey County and restored the neglected grapevines. He took pains to preserve the character inherent in the microclimate of Chalone’s unusual site. He produced finely crafted Pinot Noir of a quality now taken for granted in California. During the early development period, Graff brought in Philip Woodward as a partner in charge of marketing and finances. Together they built the Chalone Wine Group into one of the world’s major producers of premium wines. Graff died in the crash of his small plane in 1998. As an inductee into the Hall of Fame he joins such prestigious winemakers as Robert Mondavi, Charles Krug, Louis P. Martini, August Sebastiani and several others. (See related photo on page 69.)
