White Baked Ziti

Ingredients
16 oz ziti + water
2 cups milk
1 tsp dried basil
2 cups shredded meunster cheese
2 cups shredded mozzarella cheese
4 eggs yolks, beaten
salt and pepper to taste

Method
1. Put the raw ziti in a 9” x 13” pan. Add water to the pan, until the top of the ziti.
(This is instead of pre-cooking the ziti.)
2. Bring milk and basil to a simmer in a saucepan over medium high heat.
3. Add cheeses a handful at a time, stirring constantly, until cheese is melted and
smooth.
4. Remove from heat. Stir in beaten egg yolks. Add salt and pepper to taste.
5. Pour mixture over pasta and water. Do not be concerned if it mixes. If cheese
seems to clump, spread it out with a spoon or spatula.
6. Cover and bake at 350 for about an hour.
