SHUCK WITH EASE OYSTER ROCKEFELLER A LA SWISS RACLETTE SERVES 16 INGREDIENTS: • 48 fresh oysters, washed and shucked • ½ cup butter • 1 onion, chopped • 1 clove garlic, crushed • 1 (10 oz) package frozen chopped spinach, thawed and drained • 8 oz/227g monterey jack cheese, shredded • 8 oz/227g fontina cheese, shredded • 8 oz/227g mozarella cheese, shredded • ½ cup milk salt & pepper to taste • ½ cup fine bread crumbs or panko DIRECTIONS: 1. Place clean shucked oysters on ice until ready to serve. 2. Melt butter in a saucepan over medium heat. Cook onion and garlic in butter until soft. Reduce heat to low, and stir in spinach and all the cheeses. 3. Cook until cheese melts, stirring frequently. Stir in milk and season with salt and pepper. 4. Preheat Swissmar® Raclette Party Grill to med-high heat. 5. Spoon spinach mixture over each oyster, just filling the shell. Sprinkle with bread crumbs or Panko. 6. Place oyster in raclette dish and put under grill and cook until golden and bubbly, approx. 8 – 10 minutes. 7. For a more interactive experience, you can have guests add their own toppings of chopped cooked spinach, assorted shredded cheese and breadcrumb or panko. WHAT IS RACLETTE?
