Burgundy
glam’ chic
The appetiser
Authentic and gourmet, Burgundy can also be trendy and glamourous… Behind its
provincial airs, it hides charms that show that it moves with the times. No “bling-bling”
here, just what is beautiful and real! You can sip a cocktail in the trendiest – and most
design – hotel in Dijon. Your eyes will widen with delight at the sight of the Hospices de
Beaune as you stroll through this cosy and terribly modern town. And you mustn’t forget
the Made in Bourgogne success stories: the famous “Tolix” chairs, the truly delightful
“Anis de Flavigny” sweets, “Lacanche” vintage range cookers, or the wildly trendy “Berthe
aux Grands Pieds” socks.
Truthfully, Burgundy has it cracked when it comes to the trendiest weekends away,
when you feel like a change of scene and a bit of pampering. It’s great to enjoy some
cool shopping in the historic town centres, before improvising with an afternoon of
contemporary art! You can never dream too much or take enough time for yourself…
Real luxury surely means dropping off your luggage at a redesigned 18th Century château
and heading for the spa or for a terrace, to enjoy a glass of fine wine.
To your very good health!

Don’t be fooled, Susanne and Jean- Louis
Bottigliero are in charge of two essential
hubs of chic and elegance : the Hostellerie
de Levernois, a short hop from Beaune
(Relais & Châteaux), and the Château Sainte

All this is not by chance. Jean-Louis
Bottigliero headed up Le Crillon in Paris and

The hotel is nestled in a majestic park,

And the restaurant? La Cuisine by Philippe

Despite its relooking, the Château Sainte

Its old stones, its surrounding natural

Séréville
An idyllic honeymoon
in the Yonne, with
dinner by candlelight and
everything else…
Burgundy is the ideal destination for lovebirds. Its charms
begin to work their magic as soon as you cross the threshold of
the Château de Séréville. This haven of peace, ensconced near
Sens in northern Burgundy, makes a big impression. History
tells us that this elegant home, dating from 1818, was owned by
Geneviève Guitry, the fourth wife of Sacha Guitry.
The 52 hectares park is truly eye-catching. It is crossed
by a stream and dotted with two ponds that spark your
imagination: an island accessible by boat, a horse ride
in the forest to round off your day in the countryside, a
cosy love nest not far from the stables by the château.

Château de Pierreclos { The fairy-tale continues }
Snuggling within the
Mâconnais vineyards,
in southern Burgundy,
is the Château de
Pierreclos.
Upon entering you fall
under this venue’s spell and that of its unique views of the
vineyards. A certain je-ne-sais-quoi drifts in the air, the wild
charm of an undoubtedly ancient house, the authenticity
and beauty of the setting takes you far away.
And the immense fairy-tale suite, on the first floor of
the Pierreclos dungeon, with its ceiling à-la-française, its
Versailles parquet floor and its 17th Century wood-panelling… Here the presence of the sublime Alice
Taglioni still reigns, who acted alongside Gérard Lanvin in the Jérôme Le Maire feature film, “Premiers
crus”.

the vineyards
This guest house located
in the centre of Beaune perfectly
blends the authentic
with the contemporary.
Beaune has a great reputation. Burgundy’s wine
capital seduces visitors with its charm, the prestige
of its heritage (the Hôtel-Dieu des Hospices de
Beaune, founded in the 15th Century), the wine
houses that still reside in its historic heart… Beaune
is an exceptional city of art, surrounded by famous vineyards and appellations: Pommard, Meursault,
Puligny- Montrachet, Volnay…
It is in a mansion house from the 18th Century that we invite you to drop off your luggage. Mansart
roofs, ceilings à-la-française, majestic staircases, a private inner courtyard… Its charm is immediately
apparent. This guest house, a former residence of a wine merchant, boasts elegant and contemporary
decoration. Two large rooms and two suites can be reserved for the night or it can be entirely
privatised, with or without kitchen, and with a beauty therapist
and masseuse on hand.

Dominique Loiseau is a “happy lady”.
This native of Burgundy has just been
honoured by the members of Great Tables
of the World with the prize for best French
restauranteur 2015. “It is an honour”, she
declares, “to receive this award from my
peers”. Dominique Loiseau doesn’t like to be
thought of as a businesswoman, but rather
as “the mistress of the house”. “In Saulieu,
my clients feel at home and, thanks to all
the special attention they receive, it is clear
that there is a feminine touch. We are not a
“resort” but rather an intimate home, with
little nooks and crannies: a library where
you can find tranquillity, lounges with

THE MISTRESS OF THE
HOUSE
To maintain the excellence of the flagship
venue at Saulieu, numerous improvements
have been made in the past few years.
Now it is the turn of the spa to enjoy a
renaissance: the current relaxation space
will be extended across three floors to
create the LOISEAU des SENS villa, and
open to the public! Pools and steam rooms
at different temperatures, an ice bath, a salt
cellar spa, massage jets, 5 treatment rooms,
a new restaurant and an entirely private spa
on the third floor, with a magnificent view
of the surrounding countryside.
Work on this exceptional spa will take a year
to complete.

It was a crazy challenge: to create
a little refined paradise in the
Morvan… for those who want
to get back to nature.
A director for Europe 1 in a former life, Jérémy Leleu has now created the Domaine des Prés Verts,
a veritable natural refuge to combat stress near Saulieu, on the threshold of the Parc du Morvan. He
has made the transition from radio studio to log cabin quite seamlessly.
There is nothing Spartan about the accommodation, quite the contrary! Thanks to his training at
the hotel school in Paris, Jérémy Leleu has been able to give them all the comfort of a 4 star hotel.
An exceptional cabin on stilts, a luxury Roulotte caravan with Jacuzzi, a chic and natural lodge and
a spa cabin perched 7 metres up…A beautiful break in the heart of a natural environment where
you can find comfort and relaxation. A spa is available in some rooms, as well as treatments and
massages. There is also the incredible surroundings that invite you to explore (in a 2 CV or a Solex),
offering the chance to discover Saulieu or the opportunity to enjoy a tasting in the vineyards. You
can also stay comfortably in your cabin and share a platter made up of charcuterie from the Morvan
and Burgundy cheeses…

Betty is one of the new generation of Bresse
poultry breeders. Birds for the pot that boast
exceptional flavour, beautifully prepared for
the poultry fairs, to the great delight of lovers
of fine poultry. She keeps on winning the top
prizes and has been crowned “Knight of the
Belle Poule” by the Confraternity of Bresse
Poultry Farmers.
Breeders will tell you that Bresse poultry
is quite unlike any other. Its meat is firm,
its skin is fine and pearly white. When you
take a bite, it reveals all the nobility of its
breed: elegant and sophisticated, unique and
different.
This poultry, bred from an ancient race that
grows slowly, the white Gauloise de Bresse,
dates back to the 17th Century.
Since 1957, it is the only poultry variety in the
world that, just like wine, boasts a controlled
appellation of origin. So very French, our
blue-legged bird has white feathers and a
red crest. Very strict guidelines define this
appellation: every young bird is reared out
in the open for at least 5 months and fed
exclusively on Bresse grain.
Fattened hens and capons are festive
products that, for their part, benefit from
special conditions that endows them with a
unique flavour, which is greatly appreciated
by chefs.
Popular throughout France especially during
the end of year festivities, it is also served in
the very best restaurants in Asia. Since1986,
it has been served on Singapore Airlines
flights and is also used in Michelin 3 star
restaurants in Japan.
Lacanche
Discover the “gastronomic pianos”. Music to your ears!
Lacanche is, primarily, a pretty Burgundy village near Beaune and the Canche, the river that traverses it.
It is also a story that stretches back quite a way. The Lacanche workshops, established at the start of
the 19th Century by Jacques Etienne Caumartin around a foundry, over time have become the hub for
manufacturing range cookers that are nowadays known as “Pianos Gastronomes”.
In 1982, André Augagneur and his associates decided to buy this business. He had worked at Lacanche
for years and did not feel like being reassigned somewhere in La Défense. At 45 years of age, it was quite a
gamble, but he decided to take on the challenge and take on this loss-making site. That is when this legacy
was laid down…brought to life by the 12 models of the range with names that recall our home region:
Beaune, Cluny, Saulieu, Fontenay or Cîteaux. The “Pianos Gastronomes” by Lacanche occupy their place in
the high-end and creative market, always at the cutting edge of new and more sophisticated technologies.
Whilst their aesthetic appeal has made them a “must have”, their performance and reliability are highly
regarded by professionals. Made using materials and components that are essentially metallic, they are
more than 90% recyclable.
Each Lacanche oven is a unique piece that is made on demand and personalised thanks to a wide variety
of options, colours of enamel and finishing touches. Rose quartz was the 24th colour option offered by
Lacanche by late 2013. “It is the colour of rosy cheeks or of the pink rose in your buttonhole that Lacanche
presents as the latest colour in its range of ovens. Enamelled so that it never fades, this Lacanche colour is
Quartz pink, as if made of iridescent metal around a reinforced core”.

Côté Serein { Nature tops the bill }
This is a delightful medieval village, a little corner of paradise
that has seduced a number of film producers, such as Gérard

which is 60 years old in 2016. More recently, the series “Une
famille formidable” took up residence in the medieval town,
classified as one of the most beautiful villages in France.
Marie-Noëlle and Lionel Benjamin can host family reunions
or weekends with friends. In these wildly charming guest houses in the heart of nature, between the
countryside and the river (the Serein), you can finally start to relax. At the Domaine de Venoise, the
“Câline”, “Secrète” and “Favorite” rooms blend authenticity with refinement thanks to their unique

The Château de Béru is a historic family wine
estate that is over 400 years old. It is set in
the midst of the vines, overlooking one of
the most charming hillsides of the Chablisien

vines, the real gem is the Clos Béru, whose
plot dates back to the 13th Century. The wines
from this estate produce the Chablis and
Chablis 1er Cru appellations.
Athénaïs de Béru took command in

The “Climats”
On the World
Heritage list
A truly precious treasure
Since 4th July 2015, the “Climats” of Burgundy – which are appreciated by lowering your gaze and not raising
your eyes to heaven, to paraphrase Bernard Pivot - have been on the UNESCO World Heritage list.
In this way UNESCO has recognised the Exceptional Universal Value (EUV) of the 1,247 plots of the Côte
de Nuits and the Côte de Beaune. With prestigious wines, such as Pommard, Puligny-Montrachet, VosneRomanée, Gevrey-Chambertin…
Whilst the “Climats” only take in the Côte-d’Or, it is true that the entire Burgundy wine region benefits from
this distinction. 250 kilometres long, it includes five wine-growing hillsides (plus a vineyard in the Nièvre)
and six labelled wine routes. A unique terroir that the monks began to classify and enhance in the 7th Century.
“Musigny”, “Montrachet”, “Clos des Mouches”, “Rugiens”, “Les Amoureuses”… it is all of this Burgundian
subtlety that UNESCO has decided to safeguard. This classification is the result of the efforts of more than
60,000 people that rallied behind Aubert de Villaine, the President of the “Climats” of the Burgundy Wine
Region association and, also, the manager of the famous Domaine de la Romanée Conti.

The cherry on the cake can be found on the ground floor. “Au Fil du zinc” is quite simply one of the
region’s very best restaurants. Chef Ryo Nagahama, who has worked at L’Atelier de Joël Robuchon in
Paris, excels in this resolutely neo-bistro ambiance.

This is a former wine producing property that nowadays pampers
Beaunois
wine tourists. The Clos de la Challangette has successfully reinvented
charm
itself. Two typically Burgundian guest houses and two gîtes breathe
new life into these agricultural buildings, most notably the farmhouse
and stables. Jackie David has entirely renovated and decorated the site with great taste, without
sacrificing the authenticity of the property. Much more unusual are the two Roulotte gypsy caravans
that wait in the garden for lovers of quirky accommodation.
The Clos de la Challangette has everything it needs to become an essential feature of the Côte de
Beaune.
A heated outdoor pool and a sauna space (massages by appointment) make breaks here even
more agreeable. To meet
the needs of wine and food
lovers, Jackie also organises
cookery courses with a chef
on-site and wine appreciation
workshops.

WHAT A RELIEF
This English sculptor, based in Burgundy,
creates figurative works in relief… to our delight
and to the delight of Queen Elizabeth II.
He creates these works, imposing pieces in
bronze, resin or terracotta, in a workshop
close to Pouilly-en-Auxois, in the Côte-d’Or.
His creations are veritable urban landscapes
in relief, large or small, like his miniature
worlds that he sets up and that spring to
life depending on the angle of vision. More
imposing sculptures provide an original view
of modern life: “the urban comedy”, a 25
metre long terracotta piece on show at the
Galeries Royales Saint- Hubert, in Brussels.
“The meeting place”, nine metres tall,
represents a couple of travellers in a tender
embrace. It adorns St Pancras International
railway station in London. In the Ouche
Valley, it is at Bussière Abbey that you can
admire many of his works, or in Beaune in
the hall of the Lanterne Magique.
A loyal subject of Her Majesty, his talent
has been saluted by the Queen of England,
Elizabeth II, who commissioned him for the
“Battle of Britain Monument”, in tribute to
the Queen Mother.

Tolix
Tolix, or the fabulous destiny of a chair that is out of the ordinary
Created by X (Xavier Pauchard), these galvanised chairs and stools appear in the collections of the Vitra Design
Museum, MoMa and the Centre Pompidou. The extremely famous “Model A”, manufactured by Tolix in Autun,
is nowadays an icon of industrial furniture production. Originally, this was the 1st industrially produced chair
in France. A trendy cult object, it is still manufactured using the moulds created by Xavier Pauchard, out of
molten zinc. Packed aboard the ocean liner Normandie in 1935, in 1937 these chairs also adorned the aisles of
the World Exhibition of Art and Technology. At the end of the 1950’s, Tolix and its 80 workers were turning
out nearly 60,000 units per year.
Chantal Andriot brought a new élan to Tolix. It was out of a passion and loyalty for the business that this
former financial director took over the company with a handful of employees. A woman alone in a man’s
world, she surrounded herself with the designers Jean-François Dingjian and Eloi Chafaï (Normal Studio) to
assist her with artistic direction. “Their designs questioned the industrial process and freed them from the
past in order to showcase the legendary savoir-faire of the workshop”.
Today, half of Tolix’s revenue comes from exports, half of which is to the United States.
It is an extraordinary destiny for a chair that was dreamed up to equip the terraces of cafés!

Le Vertigo { “Design hôtel” be original, be different }
“Vertigo… An irrepressible feeling that is surprising, fantastical
and can pass for a whim”. This new Dijon hotel thrills visitors with
its careful and on-trend decor. Part of the “Design Hotels” chain,
Vertigo has set up home in a 1930’s building that is a listed historic
monument. It has become an art gallery where every piece is worth
a closer look.
And this mix of styles works perfectly, both on the ground floor and
in each of its 42 rooms.
In order to meet this audacious challenge, a
Dijon architect who specialises in renovation
work, Yvon Carminati, was entrusted with this
architectural project. Interior designer Ludivine
De Brito, for her part, blends history, modernity
and functionality to give this establishment its
primary vocation, bringing to the table her own
vision of architecture and design. Aimed at a
trendy clientele, the hotel offers all the services
of the major establishments: check in by tablet,

Catherine Troubat
This is a success story born from a bonbon
made with aniseed and created by monks
in the 8th century. The first written evidence
of aniseed dates from 1591. In 1814, in the
little village of the Côte d’Or of Flavigny-surOzerain, there were 8 aniseed producers…
It was Jacques Edmond Galimard who would
bring the different factories together to
form one sole production site. He took the
crazy gamble of presenting these bonbons
at the Universal Exhibition, at the foot of
the Eiffel Tower: the idea was a great success
and the reputation of aniseed spread beyond
Burgundy!
This success continued with the arrival of the
Troubat family who had the aniseed sweets
sold in automatic vending machines at train
and metro stations. Behind this beautiful
story is one family and one woman: Catherine
Troubat.
Crédit photo®Claire Jachymiak
A SWEET WORLD
After having studied communications
and advertising, she came to work under
her father, Jean Troubat, at the factory.
“Apprentice owner” on the shop floor, she
completed her theory training by taking
evening courses and, in 1999, Catherine
succeeded her father. Heading up a team of
27 employees, she developed sales of the
aniseed sweets: in garden centres, in fine
delicatessens, at airport kiosks the world
over… She revamped the historic oval tins;
herself designing the wicked saga of the
shepherd and the shepherdess.
She launched an organic range and started to
welcome visitors: boutique, visit of the abbey
and the bonbon production site. The factory
has since inaugurated a museum in two of the
abbey’s vaulted rooms.

Perrin Socks
A success story Made in Bourgogne
This manufacturing site, based in southern Burgundy for more than 90 years, cheers up the feet of our nation’s
ministers. These socks are actually sold in the boutique of the National Assembly and, very soon, at the Senate!
The Perrin workshop has created 4 brands: Perrin, the historic label ; Dagobert is a range of reversible socks;
Berthe is for big feet “Berthe, nothing but socks and tights”, an innovative collection that is full of fantasy
(models created by designer Régis Gautreau), and La Chaussette Française, a haute couture label that
showcases the savoir-faire of this company.
Dior, Burberry, Sonia Rykiel, Jacadi, Tartine and Chocolat, Catimini… they also supply the haute couture
fashion houses. The last representative of this tradition of French hosiery has endured thanks to its sense
of adaptation and innovation. They have never fallen out of fashion. Quite the contrary! Today the company
employs close to a hundred people in Montceau-les-Mines and manufactures 6,000 pair of socks and tights
every day. These original and colourful creations are all made by hand. All of their motifs provide a little touch
of folly.
Since 2015, thanks to Franck Couturier (you couldn’t make that up!), the dynamic owner of Perrin, you can
visit the production site and discover their in-house savoir-faire. It is easy to “find your footing” by following
the markings on the floor that are in place for this very purpose.
The visit ends at the boutique where you can find the right socks for your feet!
With the whole world at their feet, the Perrin Company, the last sock company to manufacture 100% in
France, even exports its products to the Middle Kingdom itself. A real achievement in this Made in China era.

Les Lucioles de Montagny { Step into the vineyards }
If houses could only talk… this one would be able to tell a few
stories; that of a former inn used by monks on the road from
Beaune to Cluny, and then that of a wine producer’s home, with
covered gallery, transformed by the firm of architects SC Design
Paris into a Burgundian guest house that is reserved for lovers
of authentic spots.
Never ones to do things by halves, the Viviani fashion house,
couture creators, carved out the “l’Angélique” room. Underneath
a magnificent wooden framework, this vast 40m² room in bright
violet incites visitors to relax and do nothing. “L’Enchantée” is a thoughtful cocoon where the subtlety
and charm of the fine curtains and the gentle, earthy tones
marry perfectly with the ancient terracotta floor tiles. As for
“la Divine”, it invites guests to rediscover the authenticity of
the venue, in an atmosphere tinged with deep reds and stone.
The garden and the terrace afford visitors the tranquillity and
the time to enjoy the unrivalled views of the vineyards and
the village of Montagny.
