Pesach 5776 - Spring 2016 Vaad Viewpoint The Official Newsletter of the Vaad Hakashrus of Tidewater 420 Spotswood Ave. Norfolk, VA 23517 rabbi@vakosher.com - www.vakosher.com Ph. 757-572-6344 The Pesach Kitchen in Review The following is a checklist reviewing items commonly found in the kitchen and how to prepare them for Pesach. Also included is a list of items that cannot be kashered. Definition of terms: 1. LIBBUN GAMUR: Heating metal to a glow. 2. LIBBUN KAL: Heating metal so that paper will burn on the other side of the heated utensil. 3. HAGOLA: Immersing an item in boiling water. 4. ERUY ROSCHIM: Pouring boiling water over an item. NOTE: Where libbun kal helps, certainly libbun gamur is good; where hagola helps, libbun kal is good; where eruy is good, hagola and libbun is good. If the item cannot fit in the pot at one time it can be Kashered in sections. Baby Bottle - Since they have come in contact with chometz (e.g. washed with dishes, boiled in chometz pot), new ones should be purchased. Baby High Chair - Thoroughly clean. Preferable to cover the tray with contact paper. Blech - Libbun gamur. Preferably should be replaced Blender/Food Processor/Smoothie Machine - New or Pesachdik receptacle required. (plus any part of unit that makes direct contact with food) Thoroughly clean appliance. The blade should be treated like any knife kashered through hagola. Can Opener Manual or Electric Difficult to clean properly. Should be put away with chometz dishes. Candlesticks/Tray - Clean thoroughly. Should not be put under hot water in a kosher for Pesach sink. Coffeemakers Metal coffeemakers that have brewed only unflavored pure coffee. Clean thoroughly. Replace with new or Pesachdik glass carafe and new filters. Metal coffeemakers that have brewed flavored coffee should be cleaned thoroughly. Do not use for 24 hours. Pour one cup of water into chamber. Water should be heated in unit and allowed to drip over exposed metal base. Replace with new plastic filter holder, new filters, and new or Pesachdik glass carafe. Plastic coffeemakers should not be kashered. Colanders Metal - Libbun kal. Plastic - Do not use. Dentures, Bite Plates, Braces Clean thoroughly after you finish eating chometz. Dishwashers - Cannot be kashered. Electric Burner, Drip Pans Clean thoroughly. Grater Metal - Libbun kal. Plastic - Do not use. Ice Cream Scooper - (metal) Hagola Instant Hot Devices - See Water Filters. Keurig Coffee machines - cannot be Kashered easily. Light Box - Clean thoroughly Metal Wine Goblets - Hagola. Metal Wine Trays - Hagola. Mixer - Do not use, even with new blades and bowls. Pump Pot - If in contact with chometz (e.g., sponge) do not use. Otherwise, does not need kashering. Refrigerator, Freezer - Thoroughly clean. Lining shelves is not necessary. Ice cube trays (that are filled with water in the sink) should be put away with chometz dishes. Ice cube bins which catch the ice made in the freezer should 1 be thoroughly cleaned and used as usual. Rings, (finger) - Eruy roschim. Rings, Napkin - Hagola. Tables - A table upon which chometz is eaten during the year may be used on Pesach if it is covered with a waterproof covering (e.g. sheet of plastic). It is preferable to put either cardboard or a few layers of paper on the table under the plastic covering. Table pads may be overturned and used. Towels, Tablecloths, etc. -Those used during the year with chometz may be used on Pesach if they have been laundered with soap and hot water, even if the stains do not come out. The same applies to potholders, bibs, and aprons. Synthetic material, such as rayon and Terylene, that can only withstand a warm water cycle may be used on Pesach after they have gone through a washing with detergent and only if there are no visible stains after they have been cleaned. Transparent tablecloths that may be coated with a powder and should be rinsed off before use. Vases - Those used on the table during the year may be used on Pesach if they are washed inside and out. Washing cup (used in kitchen) Metal – Hagola. Plastic - Put away with chometz dishes Water Pitchers - Should be put away with chometz dishes. Water Filters Plastic water filters that are connected to the faucet should be thoroughly cleaned, including the outside and the coupling, and may be used on Pesach without changing the filters. Metal Filters that have been consistently used since the previous Pesach, should be left on during kashering of the spigot. If they were Listing of Products Usable for Passover Without Special Certification except where noted first attached some time after Pesach, they should be removed before kashering the spigot and kashered separately. Instant hot devices and individual hot/cold water filters that are connected to the sink with a separate spigot should be kashered along with the sink. Instant hot devices should be turned on during kashering of instant hot spigot. Water Coolers - Cold water coolers should be cleaned thoroughly. The hot spigot on a water cooler should not be used if it came into contact with chometz during the year. Water Urn Metal (uncoated) - Hagola; both inside and outside should be kashered. Porcelain Enameled or Plastic Do not use. Passover certification not required unless otherwise noted. Use new unopened containers if it comes in contact with food. A & D - Ointment Acne Treatment - All Cr eams, lotions and ointments may be used. Alcohol - Any isopr opyl alcohol may be used for external use. Lactaid Milk may be used on Pesach if purchased BEFORE Pesach. Makeup - All varieties of blush, body soap, conditioners, creams, eye shadow, eyeliner, face powder, foot powder, foundations, lotions, mascara, nail polish, ointments, paint, shampoo, are permitted for use on Passover regardless of the ingredients contained within them. Makeup Remover - All creams, lotions, etc. may be used. Matza, All Matza r equir es KFP certification Matza, Egg - Matza made with fr uit juice or eggs, which include "Kosher for Passover" Egg Matzos, Chocolate covered Matza, Egg Matza Crackers, & Passover Tam Tams, may not be eaten on Pesach, accor ding to Ashkenazic practice, except by the sick or elderly who cannot eat regular Matza, and have consulted with their Rabbi. Please note: Even the sick and elderly cannot fulfill the obligation to eat Matza at the Seder with these types of Matzos. Meat (beef, lamb, veal), Packaged All packaged raw meat products should be used with reliable certifying agency Passover approval. If Passover approved raw meat is not available, or the meat was already purchased without Passover approval, then it should be washed, ideally before Pesach. This should not be done over a Pesach sink. (However, all ground meat products require KFP certification and may not be used on Pesach without KFP certification, even if washed). Milk - The Vaad Hakashr us will not be supervising kosher for Pesach milk this year. Milk without KFP supervision must be purchased before Pesach on Friday April 22nd by 11:45am. Milk purchased DURING Pesach must bear KFP certification. (don't forget to purchase enough for the entire Pesach) Mineral Oil - All may be used Mouthwash - (Par tial List) Listerine- Advanced Citrus, Antiseptic (Gold), Cool Mint, Fresh Burst, Soft Mint, Total Care Zero, Zero Scope [All] Nail Polish - All may be used Nutritional Supplements - Call the Vaad office for more information Nuts - Raw, Whole or Chopped Nuts (e.g. Almonds, Pine Nuts, Walnuts, etc.) without preservatives or other additives such as BHT or BHA in corn oil, are approved for Passover. If label states that it is processed in a plant that processes kitniyos or chometz, then it requires a reliable KFP certification. Note: Many consider peanuts as Kitniyos which are not permissible on Pesach. Also, dry roasted nuts and ground nuts require a reliable KFP certification. Whole pecans and half pecans do not require KFP certification, however, pecan pieces and midget pecans must bear a KFP symbol. Olive Oil - Any Extr a Vir gin (Unflavored) with a reliable kosher symbol. Oil, Cooking Spray Pompeian With (Star-K, no P required) Avocado Oil Grapeseed Oil Orange Juice - Requires KFP symbol Orthodontic Rubber Bands - Rinse well with cold water before Pesach. Vitamins and food supplements do NOT fall into this category, and each person should consult with their Rabbi or the Vaad. Kitniyot Information: Chometz includes leavened foods, drinks and ingredients that are made from or contain wheat, rye, barley, oats or spelt. Therefore, all grain products such as breads, cereals and other breakfast foods, grain alcohol, grain vinegar and grain malts, are forbidden during Passover. Certain other foods known as kitniyot, such as beans, corn, peas, peanuts, rice, alfalfa sprouts, bean sprouts, green beans, mustard, canola oil, chickpeas, and the derivatives of these foods, are not eaten by Ashkenazic Jews due to their similarity to the five chometz grains. There are many differences in the halachot (Jewish Law) followed by the Ashkenazic (Jews of European descent) and Sephardic (Jews of Mediterranean, West Asian or Spanish descent) communities, and the laws of chametz are no exception. Some Sephardim have adopted the Ashkenazic custom of refraining from rice and kitniyot during Passover. Others do eat rice; however it must be checked three times prior to Passover to make absolutely certain there are no kernels of chametz. In order to determine your family’s customs, as well as to determine what Rabbinic certification is required on products containing kitniyot, it is important to contact your local Rabbi, especially one who is well-versed in the laws followed by Jews of Sephardic descent during Passover. One should not rely on listed ingredients on the label alone to determine whether a product merely contains kitniyot and may be used on Passover as many times these products may contain actual undeclared chametz. Q. Is it necessary to buy a new food bowl for your pet for Pesach? A. No. However, the bowl used year-round should be thoroughly cleaned before Pesach. Q. If I am going away over Pesach, what should I do with my fish? A. Vacation blocks often have chometz. One can purchase a block without chometz or use an automatic fish feeder and fill it with non-chometz food. Q. During a Pesach visit to the zoo, may one purchase the feed for the animals? A. No. This feed is often chometz and should not be purchased or fed to the animals on Pesach. Q. Must pet food with chometz be put away and sold before Pesach? A. Yes. Q. Is there any problem with kitty litter? A. Clay or wood-based types are fine. Some brands are wheat-based and must be avoided. Q. Can Kitniyos, such as rice and beans, be fed to animals on Pesach? A. Yes Q. What are some common Chometz ingredients in pet food? A. Wheat (cr acked, flour , ger m, gluten, ground grouts, middlings, starch), barley (cracked, flour), oats (flour, grouts, hulled), pasta, rye, and brewer’s dried yeast. Any questions should be reviewed by a competent 6 Pet food The following is a list of pet foods approved for Passover 2016 when produced in the U.S. Products with identical names from foreign countries may have different formulations, thus compromising their Passover status. Make sure to check all labels. There should be no chometz listed. A product listing both meat and dairy ingredients may not be used any time during the year. Goldfish and Tropical fish can be given tubular worms, frozen brine shrimp, and freeze dried worms (if they do not contain fillers). Birds (Parrots, Parakeets, Cockatiels, Macaws) • Millet and sorghum as main diet. • Peanuts, sunflower seeds, and safflower seeds can be given. • Larger birds such as parrots can eat pure alfalfa pellets (make sure it is pure alfalfa since it is common to add grains) or dry dog food (see above for list). • Smaller birds can also have pure alfalfa pellets, crush before feeding. • Can supplement with cottage cheese, rice cakes (birds like these), small pieces of lean meat, matza, berries, eggs, canned baby fruits. All large food should be shredded before serving. These items should be given sparingly. • For minerals, can have oyster shells (calcium) or mineral block. • The greater the variety the better. Hamsters, Guinea pigs, Gerbils & Rabbits • Best to feed pure alfalfa pellets. Make sure it is pure alfalfa since it is common to add grains. Dried alfalfa may also be given. Can supplement with mixture of cut-up fruits and vegetables – carrots, broccoli, apples, melon, kale, parsley, oranges, celery, dry corn, sunflower seeds, cabbage. Can also give some matza. If not accustomed to these items, give sparingly. • Guinea pigs especially will benefit from kale, parsley and oranges. • Hamsters especially will benefit from apples. • Guinea pigs need vitamin C added to diet. Lizards Be aware that mealworms, which as living creatures are not chometz, are commonly sold in a bed of wheat flakes or oatmeal, which is chometz and, therefore, may not be owned or used on Passover. Live crickets are 7 permissible. Whole insects (live or dead) with no additives or other ingredients are permissible. Mixes sold in stores often contain chometz. It is advisable to mix together regular and Passover food between one to two weeks prior to Passover before switching completely to Passover food. The ratio of regular and Passover food should be changed slowly to get the animal used to the new diet. Check with your veterinarian before changing diet. This is learned from the order of the verse found in Krias Shema - "And I will give grass in your fields for your animals and you will eat and be satisfied." The verse first mentions food for animals and subsequently food for people. Some authorities interpret this as a true D'oraisa, Biblical command, while most understand this to be D'rabonon, Rabbinical in nature. This halacha applies to one's animals, birds, and even fish if they depend on a human to feed them. To kasher the burner area, one should clean it well and turn on the elements until they glow. The burner area is now considered kosher for Pesach. However, the remaining area that does not get hot is not kashered. Kashering or covering this area will damage the glass. As the area between the burners cannot practically be kashered, in order to use a large pot that extends beyond the designated cooking area, one should place a metal disc approximately 1/8 of an inch thick onto the burner area in order to raise the Pesach pots above the rest of the glass surface. This will also help in case a small pot boils over, sending a trickle of hot liquid that would serve as a connector from the Pesach pot to the non-Pesach stovetop. For your enjoyment, we have included some delectable Pesach recipes from some of the finest chefs in town, Enjoy Mandel Bread Ingredients (24 Cookies) 2 Cups sugar 2 Sticks unsalted butter, at room temperature 6 Eggs 2 3/4 Cups matzo cake meal 1 Teaspoon salt (original recipe calls for 1/2 teaspoon) 3/4 Cup potato starch 1 Cup semi-sweet chocolate chips 1 Cup sliced almonds, or your favorite nuts 1 Teaspoon cinnamon, for topping 2 Teaspoons sugar, for topping Pre-heat the oven to 350 degrees. Using either a stand or hand mixer, cream the sugar and butter together in a large bowl. Beat in the eggs, one at a time. Divide the dough in half and form two loaves, approximately 2-3" high on a baking sheet lined with parchment paper. The loaves will neither rise nor spread in the oven but I did find them very sticky to work with so I used a bit of extra cake meal on my hands to pat them into shape. 3/4 cup fresh lemon juice 3/4 teaspoon lemon zest 1/4-1/2 cup powdered sugar for dusting PREPARATION For the crust: Preheat oven to 350 degrees. Line a 9 x 13 inch baking pan with foil, letting the ends hang over and spray lightly with grease. In a small pot, melt margarine over medium high heat. Add walnuts, almonds, sugar and a generous pinch of salt. Remove from heat and spoon evenly into prepared pan. With Combine the cinnamon and a fork or the palm of your sugar in a small bowl and hand, press crust all over the sprinkle evenly over the two bottom of pan, creating an loaves. Bake for 45 minutes. Allow to cool slightly but slice, even crust across the bottom with a serrated knife, while still of the pan. Bake for 15 minutes or until golden. Cool. warm. Lower the oven temperature to 325 degrees. Lemon Bars INGREDIENTS Crust: 5 tablespoons margarine 1 cup ground walnuts 1 cup ground almonds 3 tablespoons sugar Pinch salt Filling: 1 1/2 cup sugar ¼ cup matzo cake meal or potato starch 3 eggs 9 For the filling: Combine sugar and matzo cake meal/potato starch in a medium bowl. Add eggs and whisk to form a paste. Add lemon juice and zest and stir to combine. Pour onto cooled crust. Bake until filling is just set, 15-20 minutes. Cool in pan before cutting. Dust bars lightly with confectioners’ sugar before serving.
