THE ART AND ENJOYMENT www.nbbqa.org OF BARBECUE PLANNING AND PRACTICE EQUALS SUCCESS Vic Wright Just Smoked Salmon Port Angeles, Washington Peter Rattay Stonehurst Manor Conway, New Hampshire As Summer is officially over and Fall has begun, it’s time to start planning and preparing for all of the holiday reunions that make this season so great! We keep the pit going so much around here that it’s easy to throw something together just about any time, but our holiday plans always start out early so they will be much more than average. For me, it is much easier to start planning ahead rather then play catch up once the time has arrived and this planning process usually makes the difference between an average get together versus those unforgettable reunions. Most grills and pits usually get a good spring cleaning, but a quick touch up might be in order for that special family get together especially after a long summer. Just remember re- season your pit before cooking on it after a cleaning. 25 2. 2 , CA. b e f GO IE e: dat SAN D e h e t v a s 2. Most of us have our own special sauces and rubs and now is the time to start playing around with them or ordering them to ensure they will be ready when the time arrives. 3. If you want to try something new and different then now is also the time to begin practicing as most disasters happen on first attempts with new things. 4. I have learned over the years is to use only a few in the planning and practicing process, as everyone loves a great surprise. Until next month... keep it smokin’ Kell Phelps WE WANT YOUR RECIPIES AND BEST BBQ ADVICE! Tell the world that you know great BBQ!
