Spring is Here! March 20th marked the first day of Spring: the vernal equinox, when the length of the day and the night are equal: in balance. The symbols of Spring (eggs, baby chicks, bunnies, lambs, buds and flowers) all center around life, re-birth, renewal, growth and potential. Everything is new again. The long Wednesday, Apr. 24th Outing 1 PM –3PM winter has passed, and life continues it’s cycle. Spring is a fresh start, a new beginning. Photo by Jessica Cooking Demonstration Michelle Girard, Executive Chef at the Eugene Hilton, generously gave a cooking demonstration for Brethren Housing and Afiya residents on Friday, March 15th. She cut up a whole chicken and made sautéed kale with lentils and roasted root vegetables. She was very informative, talking us through the preparation and cooking process, and giving hints on saving money. Her dishes were simple and very tasty. And yes, we got to sample everything! Thank you Chef Girard! I know of a life much more precious than mine. This was created with life, love and time. This life is my start, my middle and end. This life is my reason for wanting to bend. This life I will grow with gentle and slow. This life has a love that I want to know. This life is my faith, wisdom, and love.
