How to stay cool and hydrated
in the heat
I figure my distant ancestors
spent most of their time in cold climates with little exposure to the
sun. They probably slogged through
snowdrifts to reach their recreational
icebergs, where they could dip their
toes in freezing water. When the sun
came out, they probably retreated to
cold, dark caves.
Therefore, I think I have the
genetics to tolerate cold better than
heat. I know how to layer clothes to
tolerate the cold. You can remove
only so many articles of clothing in
public.
Lately, the hot weather has made
me want to retreat to a cold cave or
dip my toes in ice water.
I spent a week in Washington,
D.C., in mid-July, when the temperature climbed above 100 degrees and
the humidity was equal to a sauna. I
was guzzling water constantly, and I
still couldn’t stay fully hydrated.
“I can’t handle heat!” I exclaimed
to my patient trip companions as we
walked on the white-hot marble and
concrete around the national monuments. My face was red as a tomato
and my hair was wet from perspiration. I was not photo-ready.
Irritability is the first sign of
dehydration. They probably realized
it, too, by my example. We stayed
inside highly air-conditioned buildings most of the time. At least they
didn’t have to carry me inside or call
an ambulance.
When I returned home, a heat
wave hit the Midwest. Where’s my
cold cave?
Extreme heat can have dire
health consequences on every organ
of your body. Water makes up about
three-fourths of the body weight of
infants, making them very susceptible to dehydration. On average, an
adult’s weight is about two-thirds
water.
Even mild dehydration has
immediate effects. Besides feeling
thirst, you might get a headache and
swollen feet, and feel sluggish.
Staying well hydrated is espe-
cially important for heart health.
When you become dehydrated, your
heart has to work harder to push the
thicker blood throughout your body.
Maintaining hydration in your
body helps with management of your
body temperature. Water is essential
to protect your tissues and keep your
joints lubricated. Staying adequately
“watered” at all times helps your
body rid itself of wastes.
Thirst is one gauge for hydration level but not necessarily the
best one. As we get older, our “thirst
meter” usually doesn’t work as well.
Some medications and medical conditions also can affect how we perceive thirst.
A better gauge for hydration
level can be assessed in the privacy
of your bathroom. Yes, the color of
the urine we produce is a good indicator of hydration level, unless you
are taking medications that color the
urine.
Pale yellow (straw colored or
weak lemonade-colored) urine indicates you are well hydrated. As your
urine gets darker yellow, you should
rehydrate soon. If your urine reaches
the point of dark amber (orangeyellow), you are probably severely
dehydrated and should contact your
health-care provider immediately.
Staying hydrated is necessary
for survival. We can survive without food longer than without water.
In fact, we would survive only a few
days without water.
In hot weather, stay inside as
much as possible, especially during
the heat of the day. Heat exhaustion
or heat stroke can be life-threatening.
If you are working outside, drink
water often and wear lightweight
clothing. When you get inside, take a
cool bath or shower and rest.
Drink plenty of fluids and eat
water-rich foods such as fruits and
vegetables. Many fruits and vegetables are 85 to 95 percent water by
weight.
Keep in mind that alcohol-containing beverages, such as beer, are
not as hydrating as water. You probably do not need a “sports drink” to
recover, either. Consume a healthful meal to replace lost electrolytes
(minerals lost in perspiration). Chocolate milk often is used as a workout
recovery or sports drink because it
provides fluid, electrolytes and carbohydrate.
Here are some additional tips
about staying hydrated that are
adapted from the Centers for Disease
Control and Prevention:
• Carry a water bottle for easy
access when you are at work or running errands.
• Freeze some water in freezersafe water bottles. Take one with you
for ice-cold water all day long.
• Choose water instead of sweetened beverages. This also can help
with weight management. Substituting water for one 20-ounce sugarsweetened soda will save you about
240 calories.
• Choose water when eating out.
Generally, you will save money and
reduce calories.
• Add some flavor to your water
by adding a wedge of lime or lemon
to it. Or try adding some cucumber slices or strawberries. This can
improve the taste and help you drink
more water than you usually do.
Stay cool and hydrated during
the warm days of summer. Because
we don’t have any icebergs handy to
lounge upon, here’s a frozen treat to
enjoy. Milk and juice provide nutrients as well as fluids, and this treat
has just 45 calories. It might remind
you of a childhood summer treat.
Orange Dream Creamsicles
1/2 c. vanilla soy milk (or regular
milk)
1/4 c. frozen orange juice concentrate
In a blender, blend soy milk and
orange juice concentrate. Place in
Popsicle molds and freeze.
Makes four servings. Each serving has 45 calories, 0.5 gram (g) fat,
1 g protein, 9 g carbohydrate, 0 g
fiber and 15 milligrams sodium.
Nutrient Management Day set for Aug. 23
Manure spreader calibration
and fertilizer timing are two topics that will be covered at the
Nutrient Management Day program Aug. 23 at North Dakota
State University’s Carrington
Research Extension Center.
Andy Scholting of Nutrient
Advisers LLC, West Point, Neb.,
is the featured speaker. He will
discuss manure brokering.
The program, which runs
from 9:30 a.m. to 3:30 p.m., also
will include updates on nutrient
management regulations, a composting demonstration and field
tours.
“Both crop producers and
livestock owners are encouraged
to attend this event,” says Mary
Berg, area Extension livestock
environmental
management
specialist at the Carrington center. “Learning to make manure
a high-quality fertilizer makes
money sense as it is a readily available resource for North
Dakota producers.”
The cost to attend the program is $15 per person, which
includes lunch.

A field day will be held at the
North Dakota State University
Oakes Irrigation Research Site Robert Titus Research Farm on
Thursday, Aug. 18.
“This field day will provide
us the opportunity to present our
newly expanded research farm
with state-of-the-art irrigation
technology, the newly installed
horizontal well and cutting-edge
UAV (unmanned aerial vehicle)
sensing systems,” says Kelly
Cooper, research agronomist at
the Robert Titus Research Farm.
The approximately 40-acre
site, which is 4.5 miles south of
Oakes on North Dakota Highway
1, is a substation of the NDSU
Carrington Research Extension
Center.

With the Summer Olympic
Games fast approaching, the North
Dakota Department of Health
(NDDoH) reminds attendees that
Brazil is an active Zika transmission area and caution is required to
prevent acquiring Zika virus disease. The NDDoH and the Centers
for Disease Control and Prevention (CDC) recommend that pregnant women do not travel to Brazil
because of the risk Zika poses to
the fetus. Both men and women,
particularly those of child-bearing
age, who do travel must be diligent
about avoiding mosquito bites.
“We encourage anyone plan-
ning travel to a Zika transmission
area to consult with their healthcare
provider before traveling, and to
seek care if they have any symptoms of illness within two weeks of
returning from travel,” according
to Laura Cronquist, an epidemiologist with the NDDoH. “It is always
important for your health provider
to know whether you will or have
had any out-of-country travel.”
The best ways to avoid mosquito bites are to stay in lodging
that has air conditioning or screens
on the windows, wear appropriate
clothing, and use an EPA-registered
insect repellent, being careful to
follow the label instructions.

The North Sargent School will again
participate in the National School Lunch
Program. The goal of the program
is twofold. First, lunches offered to
children must be nutritionally adequate
and designed to develop and encourage
the child’s taste for a variety of foods;
secondly, the school lunch is closely
linked to the school’s educational
program for better health and nutrition.

K-6 $40 per 20 Meals
7-12 $45 per 20 Meals
Adults $60 per 20 Meals
Guest Lunch $3.50
Lunch fees are payable every 20 meals.
NS will not extend credit.

If your garden is producing a
bountiful crop of vegetables, you may
be thinking about canning some to eat
later, such as this winter.
You’ve probably found lots of recipes on the internet and in old cookbooks, and friends and family have
offered you tons of advice on how to
preserve those vegetables.
“Most of those recipes haven’t
been tested for safety,” says Julie
Garden-Robinson, food and nutrition
specialist for the North Dakota State
University Extension Service. Extension provides free information on
food preservation.

Improper canning can lead to the
development of deadly bacteria and
toxins. This is why using up-to-date
equipment and research-tested methods when preserving food is vital,
according to Garden-Robinson. That
means canning in an oven or microwave is not safe.
What if you invent your own salsa
recipe? Freezing it is the best way to
preserve salsa made from a recipe that
hasn’t been research-tested. If you are
using a research-based recipe, follow
it carefully. Substituting ingredients
and changing proportions can be a

canning, you are a scientist,” GardenRobinson cautions. “Food preservation isn’t the time to put on your
‘creative’ hat.”
Selecting the right container for
preserving your garden’s bounty is
just as important.
“Mason-type jars are the best
choice for canning,” Garden-Robinson says. “Some people like to re-use
glass mayonnaise or salad dressing
jars. The National Center for Home
Food Preservation says that is OK if
new two-piece lids are used. However, they have a narrower sealing
surface and are tempered less than
Mason jars, so expect more seal failures and breakage when reusing jars
that once held commercial products.
Don’t process mayo jars in a pressure
canner, though.”
To seal jars, use self-sealing lids
that consist of a flat lid and a screw
band. Tighten the screw band with
your fingers, not your muscles,
because overtightening can lead to
seal failures. You can reuse screw
bands, but don’t reuse lids.
When freezing vegetables, use
plastic freezer containers, glass canning or freezing jars, or plastic bags
designed for freezer storage. Using
plastic containers that previously
held products such as margarine or
whipped topping can result in the food
developing freezer burn or dehydrating.
“Freezer burn is a quality issue, not
a safety issue, but you may not want to
eat freezer-burned food because of the
changes in the color, texture and flavor,” Garden-Robinson says.
Most vegetables should be
blanched for a specific amount of
time before being frozen. Blanching is
scalding vegetables in steam or boiling water for a short time. That keeps
the vegetables from discoloring,
toughening or developing off-colors
or off-flavors during frozen storage.
In addition to using researchtested recipes, be sure you have all
the equipment and supplies you need,

Opioid symposium for professionals offered in Bismarck and Fargo

The North Dakota Department of
Human Services’ Behavioral Health
Division, in collaboration with the
Reducing Pharmaceutical Narcotics
Task Force, invites professionals to
learn about effective responses in
addressing opioid issues.
The Opioid Symposium: Preparing Professionals to Confront
the Opioid Crisis, part of the “Stop
Overdose” effort, will be offered at
no cost to professionals on August
15, in Fargo, at the Holiday Inn, Harvest Room, and on August 16, at the

Registration begins at 8:30 a.m.
Sessions will be held from 9 a.m. to
