sacred Mount Rinjani, lesspopulated Lombok is an island
of contrasts. The Gilis off the
northwest coast offer sybaritic
luxury, while surfers flock to the
beaches in the south. Yet on the
slopes of Rinjani and in central
Lombok, life continues like it has
for centuries: horse carts still
ferry shoppers to the market,
while farmers tend their fields.

The northern Gilis – Trawangan,
Air and Meno – get all the press.
Yet the southern Gilis have a lessdeveloped charm that’s all their
own, and Gili Gede Indah makes
a splendid place to appreciate
traditional island life. Get a boat
from the hamlet of Tembowong,
then explore the island’s tiny
villages, linked by a network
of winding paths. Boatmen can
arrange snorkelling trips to
stunning Gili Layar nearby.
WATERFALL WALKS
The refreshingly cold waters
that pour down from the
summit of Rinjani make for
spectacular falls. Two of
the best, an easy walk from
Senaru, are Sindang Gila
and Tiu Kelep. Sindang Gila
takes just 15 minutes to
reach on foot via a wellmade path; towering, jungleclad Tiu Kelep is a longer and
much more beautiful walk.

In Thailand, pumpkin flowers
are not just decorative
elements on a plate

umpkin figures prominently
in a variety of dishes in Thai
cuisine. Nuggets of this
Vitamin A-rich vegetable are
typically found in yellow or red
curry, or simmered in coconut
milk and eaten as dessert. Beyond

its flesh, the plant’s appealing
bright yellow flowers also make
for a delicious, savoury dish.
Called dok fak thong, pumpkin
flowers are seasonally available
in wet markets across Thailand.
Farmers typically harvest the
plant before dawn when they fully
unfurl. Only male blooms, which
do not have pistils and grow on
long stalks, are harvested as the
female blooms are left to grow
into vegetables.
Thai home cooks usually
make dok fak thong tod, or fried
pumpkin flowers with minced
prawns. To prepare this dish, the
flowers are carefully washed
and dried, and their stems and
stamen are removed. The flowers
are then filled with a mixture of
finely minced prawn and chopped
garlic, seasoned with some fish
sauce and palm sugar. The petals
are then folded at the tip and
coated in batter, similar to making
tempura. They are deep-fried
until golden brown and served
with a dip of soy sauce, vinegar
and sliced scallion.

VIETNAM’S VERSION
Bong di don thit, Vietnam’s
answer to dok fak thong tod, is
also made with prawn and garlic;
the only difference is the addition
of dill – a testament to the
French culinary influence in the
country. In Danang, Waterfront
Bar & Restaurant (150 Bach Dang
Street) serves this as one of
its appetisers.
In other parts of the country,
the edible golden flowers are
found in hot pot as an ingredient
cooked along with fish balls,
shrimp, beef and greens, or
quickly dipped into the broth
and eaten immediately.

needs and ask what they can do
to assist. Hotels that are
responsive and eager to please
are a good bet – if they are
reluctant to help you over the
phone, they aren’t going to be
very helpful when you actually
arrive. Think about having space
around the bed, in the bathroom
and also accessibility via the
elevator or from the ground floor.
Hotels close to where you want to
sightsee are always worthwhile,
as this will prevent additional
transport issues.
l Hire a taxi or a private driver
with an appropriate vehicle
specially allocated to you for your
l Be realistic about what kind
of experiences you are going
to have. For instance, while
you might be able to explore
some of the larger and more
famous temples in Siem Reap
or Yogyakarta, lack of disability
access might mean you will not
see the smaller and more remote
ones. If you want to go off the
beaten track, be prepared to

wheelchair somewhere safe.
l Consider hiring a travel
stay. It’s the easiest way to get
around in a foreign country. That
way your driver will get to know
your needs and can keep relevant
items in the car for you (such as
car seats for kids or even food
and change of clothes). Call the
hotel to ask for their assistance in
organising this before you leave
home so you can start using
their services immediately at
the airport.
l Have someone push or walk
behind your child when you’re
out in the streets. Even if your
child can mobilise himself in
his wheelchair, having someone
next to him helps make him more
visible to vehicular traffic. You
could also consider bringing along
a flag on a long thin pole that
you can attach to the back of the
wheelchair to also draw attention
and help create a safe zone
around you and your child.
l Do your research on travel
insurance. Know if your insurance
provider covers people with
disabilities. Also invest in
travel insurance for your child’s
wheelchair in case of damage.
l Be prepared to be the centre
of attention. Disabilities are not
always openly acknowledged in
some Asian societies, so your
child’s wheelchair will attract a
lot of interest wherever you go. If
you have older kids, talk to them
about this and practise some
ways they can respond when
strangers express curiosity
and interest.

people built homes that were an oddity in China’s Fujian
province. Yet over centuries, their unusual settlement not
only sustained a culture, but protected generations

There are five in the cluster
– square and circular with blacktiled overhanging roofs, and
blank ochre-yellow walls several
storeys high. Perhaps (if I squint
really hard) they do resemble my
guide’s metaphor of a giant table
setting.
But these buildings don’t
look like homes either. Little
wonder they almost sparked
an international incident.
MISTAKEN IDENTITY
Towards the end of the Cold War,
over 30 years ago, our guide
explains, China remained much
of a mystery to the West. When
pictures transmitted by a US
surveillance satellite during the
Reagan administration showed
dozens of weird doughnut-shaped
buildings sprinkled throughout
these remote valleys of southeast

China, the worst was feared.
Their sinister appearance caused
already jumpy US intelligence
officers to switch to high alert.
A group nuclear missile base
was their first thought; however,
fortunately, before any preemptive action was taken, spies
were enlisted to take donkeys and
trek in to check out the situation.
This was extremely lucky. The
peaceful villagers who met
their unexpected visitors with
surprised smiles and offers of
tea and dried persimmons were
totally oblivious to what a close
call they’d had.
Our group gets a similar
reception, although we have taken
just four hours on a comfortable
air-conditioned coach along the
smooth new highway to reach it,
travelling west to Yongding from
Xiamen, an island-city at the
mouth of the Nine Dragon River.
These days the Hakka people of
Fujian province expect visitors,
especially since 2008 when the
area, with its 3,000 Fujian tulou,
was listed as a UNESCO World
Heritage Site.
FORM AND FUNCTION
The tulou were constructed
between the 13th and 20th
centuries. Due to wars and
drought, and to flee the Jin
attackers, people from central
China trekked further south,
looking for the ideal spot to
re-establish their communities.
After many decades, some
settled in these fertile valleys
at an altitude of 800m. The cool
climate here is ideal for growing
the foods they had known and
loved: cabbages and persimmons,
tea and turnips.
The original houses were built
using the only available materials
– the local red mud reinforced
with strips of bamboo, sand
and stone, and bound together,
improbably, with egg white,
glutinous rice and brown sugar.
This unorthodox mix is said to
coagulate better than concrete,
and they built the rammed earth
walls “as thick as a banquet table”
our guide adds, proudly.

In the hot late-morning sunshine,
miles from anywhere, I rub my eyes as
we look down from the ridge where
the coach has parked. Deep in the
valley below, surely, these are the
strangest houses I have ever seen.

COMMUNAL HEART
To enter a tulou is to step back
many centuries. Built four or five
storeys high, they resemble squat
mushrooms with thick stems.
Inside, timber balconies were
added to overlook the courtyard
and activities below, and the ringshape allows light and air to enter
from above.
These clan houses are villages
in themselves, accommodating
up to 700 people. Centuries on,
safety is still paramount, and
we enter one through its heavy
single door, the community’s
first defence which is securely
locked at night. For the same
reason the ground floor has no
external windows.
Inside, we are instantly
absorbed by the life of the tulou.

At the centre of the courtyard
stands a shrine or temple where
ancestors are still worshipped

community hall and school.
There is a well for water, and the
first floor houses a granary and
staples to withstand a long siege
if necessary.

have ever seen. “Drink it,“ our guide
coaxes, “good for the knees!”
TEXTURED FEAST
Hakka food is distinctive in its
emphasis on texture – braised,
roast and stewed meats take
centrestage, along with
preserved meats.
We taste the same flavours
in a small room near the tulou.
Plates of eggplant and red hot
chillies, rich pork belly bathed
in turnip broth, sweet potato
chips dusted with sugar, and cold
poached duck have been prepared
for us, and the generous menu
continues until we can eat no
more. Outside, the ingredients,
the season’s harvest – chillies,
corn, mushrooms and persimmons
– are drying on concrete slabs,
with whole heads of cabbage
hanging on a fence.
Someone speaks swiftly to our
guide. He translates for us. “See
that old lady there?” He means
the very old woman crouched on
a stool watching us, smiling, her
lined face telling the story of a
long life and much work. “She is
90!” Smiling, we shake her hand,
and she wordlessly holds mine
fast for a moment.
I’ll admit it, we came out of
curiosity to see strange houses.
What we discovered instead is
that rather than being weapons
of mass destruction, these homes
proffer, more accurately, lessons
in peaceful commune.

WHAT YOU NEED TO KNOW
There are dozens of tulou
houses, the more elaborate
dating from the 17th and 18th
centuries. There are some
homestays and a few local
restaurants, but the area is
not highly developed, so be
prepared to live and eat simply
while visiting.
Best time to go: The Lunar New
Year, which falls in January
or February, is important in
Chinese culture, and especially
in the tulou. Also, the warmer
season from April to October.
Daily life in a tulou has not
changed for centuries. Everyone
has a task: cooks, tea-pickers
and sorters, and those who dry
produce from the communal lands
on the concrete slabs outside in
the hot sunshine. Mothers tend
to little ones dressed in sensible
Chinese baby-wear: no nappies,
just pants with an open back.
Some tulou have individual
staircases to each ‘home’ but
in the Tianluokeng complex we
visit, not far from the waterside
village of Taxia, there are only two
staircases – one on each
side of the courtyard – which lead
to the sheltered gallery outside
the families’ front doors. The top
floor is for the older folks, and
I don’t envy them climbing those
flights of steep and shaky
wooden stairs.
Someone beckons us up to
take a look and we pass the
second floor used for storage,
and on to the third for family
accommodation. Back downstairs,
someone else pushes a cup of

SHAN
The Shan people are the largest minority group
in Myanmar, with some of the most fascinating
culture of any of the country’s indigenous
tribes, including a unique artisanal culture
passed down for generations

H
aving lived in the foothills
of the Shan plateau in
Myanmar for over 1,000
years after migrating
from southwest China, most Shan
have retained their traditional
ways through the centuries. Here
are some Shan crafts and skills to
see or even try your hand at.
LOTUS SILK
Myanmar is the only place
in the world where silk is
woven from an unusual source:
lotus flowers. The tradition of
weaving lotus silk began as a way
to create monk’s robes, using the
most sacred flower regarded in
the Buddhist world. As such, the
lotus silk reflects the noblest
offering that can be made to
Buddha, and the weavers believe
that wearing something made

from the plant helps absorb
negative aura and bring good luck.
The sticky fibres inside the
stem of the padonma kyar lotus
are first pulled out by hand.
Once the fibers are twisted
into threads and spun around a
spindle, they are washed and then
left in their natural cream hue, or
dyed with natural colours from
fruits, tree leaves or bark, and
flower petals to create vibrant
yarns. Once ready for weaving,
the yarn is loaded onto large
traditional handlooms and turned
into shawls, clothing and bags.
A small scarf can take one to two
days to make; for a full set of
monk’s robes, it can take up to
60 weavers 10 days to complete
– and requires as many as
220,000 lotus stems to
produce enough thread.

STONE CARVING
Another craft that draws
heavily on Buddhist
tradition, stone carving is a
source of great pride and honour
for the Shan people. Workshops
can be found throughout
the country, but the highest
concentration is in Mandalay,
where Sagyin Hill lies. This small
mountain range of seven hills
contains marble that varies in hue
from pure white to bluish-grey,
and from which most Shan stone
carving is created.
Two-thirds of the families
in this area make a living from
creating these marble statues,
with the craft usually passed
from parent to children, and
involving the entire family. The
men hammer and then finely
chisel the details into the stone,
while the women polish the
finished product. The renowned
nine-metre tall marble Buddha
at the Kyauk Taw Gyi pagoda in
Mandalay, one of the largest in
the nation, was carved in Sagyin.

BLACKSMITHING
The art of blacksmithing
is both a craft and a
practical necessity, having
emerged during 11th-century

Bagan as a means to create
weapons and armour as well
as agricultural and household
implements. Many of the smokefilled smithy shops dot the cities
and hills of the Shan areas,
often beneath the home of
the artisan. The necessary fire never goes
out, as the blacksmith moves
between it and the working bench.
Assistants (often their children)
pump dusty antique bellows to
stoke the fire, as the blacksmiths
pound glowing, white-hot metal
into the desired shapes of knives,
hammers, bells, buckles and
bangles. Today, these blacksmith
products are used mainly for
household and agricultural
needs; as well as for ornamental
purposes, such as ceremonial
swords used in weddings.

MARIONETTES
Burmese puppetry, called
yoke thé, might have
died out completely were it not
for the Mandalay Marionettes
Theatre, which prompted a surge
in the popularity of this unique
Myanmar tradition. The stories
originated from royal patronage,
centering around Buddha’s life
and local legend.
The marionettes are intricate,
shaped from yamane or teak

wood, stand 18 to 24 inches tall,
with each connected to 18 wires
(male characters) or 19 wires
(female characters), and are
controlled by one puppeteer. Each
completed multi-piece puppet is
then expertly joined together with

The Shan people are

migrated from China’s Yunnan
province – and many skills
came with them, such as hand
papermaking. Paper made this
way, by hand rather than machine
and using no electricity, is a rarity
these days.

Three types of materials are
used: rice straw, bamboo and
bark from the mulberry tree. Rice
paper is made in three thicknesses
and quality grades. After resting
in water and lime for five days
– which breaks down the fibres –
the rice straw is steamed under
a wood fire for three more. The
fiber is then rinsed with water and
beaten with a wood stamper for
at least 12 hours. The higher the
grade of paper, the longer it must
be beaten to create a thinner, finer
product. Mulberry bark is soaked
in water for a day, then cooked
with wood ash for five hours.
Bamboo paper goes through a
similar process, but rests in lime
water for a minimum of three
years, and must be beaten far
longer.
The pounded wet fibre pulp is
then poured onto a screen and air
bubbles removed with a smooth
stick; then the sheet is dried in
the sun, and cut into the desired
sizes. Decorative elements like
flower petals and leaves are
placed on the wet paper while it is
on the screen, before drying.
The end result is used for
writing paper and to make items
such as umbrellas and fans. The

LACQUERWARE
This painstaking craft is
deeply ingrained in Shan
culture and across Myanmar –
you can find lacquerware bowls,
tableware and chests in palaces,
temples and homes of regular
Burmese. Each piece starts with
a bamboo or horsehair base,
which is then coated with seven
to 16 layers of lacquer. After
each coat the piece is set aside in
an underground drying room for
seven days, then smoothed with a
knife. After buffalo bone powder
and cotton are applied with more
lacquer, the piece is ready for its
intricate design.
Using teakwood charcoal,
cinnabar, indigo and other natural
powdered colours, the craftsman
creates his masterpiece using
a small etching knife or needle.
The finished product is dried
underground again for one month,
and then polished with petrified
root powder before it can be sold.
A small cup can take six months
to produce, while larger pieces
emerge over years. Sein Naing,
a third-generation craftsman at
Mya Thaw Tar in Bagan, says his
favourite piece – a large chest
designed on the inside as well as
out – took him three years
to complete.

SHAN NOODLE MAKING
Famed Shan noodles are
one of the best loved foods
in Myanmar. This traditional flat
noodle is made with rice flour and
water that are cooked together and
fermented for several days, before
being cut into strips and hung out in
the sun to dry.
The Shan also make a bean
noodle, usually with mung. The
beans are ground into a thick
paste, then grated into strips.
What sets Shan noodle dishes
apart from other Burmese food is
the emphasis on the noodles and
seasonings, rather than the meats
and herbs added to it. Served
as the main component of both
salads and soups, the noodles
are mixed with vegetables
and toppings such as sesame,
chickpea flour or fried garnishes,
and served with a side of pickled
condiments. The combination of
the noodles’ velvety texture and
the sweet, sour and salty flavours
of the dish is addictive.

偷闲 / 河內
根据文献记载，越南汤河粉源于
19世纪末法国占领河内期间，由于
他们酷爱牛肉，因此当地人在法国
人喜爱的红肉汤内加入牛肉片，并
因应法式的烹调风格影响，再伴以
炭烧的洋葱，为浓烈的汤底加添焦
香，奠下越南清汤牛河的雏形。其
后河粉在国内遍地开花，演变出不
同的风味和个性，渐渐成为越南的
代表美馔。

南越人喜好偏甜，因此另辟蹊
径，在汤内加入冰糖，与北部如河内
的又截然不同。最后举箸前再洒上
大量香草，如新鲜薄荷叶、罗勒，佐
以鱼露和青柠汁，一口爽口牛肉，一
口幼滑河粉，夹杂东南亚特有的香
草气味，就是一碗令人难以忘怀的
正宗河内河粉。

In March this year, Time listed
Vietnamese pho as one of
the world’s top 10 healthiest
breakfasts, as it’s chockful of
vegetables and herbs while the
bone broth contains gelatin,
which helps repair the gut lining.
Pho is said to have originated
in Hanoi in the late 19th century
– French influences prompted
the locals to add beef slices and
grilled onion to their soup. The
result is a dish that has taken on
regional variations as it spread
across Vietnam.
A bowl of authentic Hanoi
pho consists of clear beef bone
broth, tender beef slices, silky
rice noodles, and plenty of herbs
and spices. The secret lies in
the soup. Simmer premium beef
bones and brisket, add in star
anise, cinnamon and other spices,
then boil for 10 hours, taking
care to remove any floating
residue. This creates a clear
broth that packs a rich savoury
flavour without being oily. The
south Vietnamese add rock
sugar in their broth, so their
pho is sweeter.
