Selections were made in three major cities, in three large supermarkets. The criteria for products selected were that they be popular or store brands readily available in a variety of stores. Products were chosen to represent the food groups in the Canada Food Guide, and to demonstrate presentation of information that is both easy to find and easy to read as well as hard to find and hard to read. None of the products selected is a speciality product. Products were purchased in Toronto, Winnipeg and Montreal between August and November 2006. Scoring of the Design and Typography of Food Labels The design and typography of the ingredient list on 100 labels of popular brands of food products were scored using the Typographic Variable Score© (TVScore©,Metz, 1996). The scoring matrix and the procedure are included below. This TVScore Matrix, which examines the relationships between overall typography, is highly correlated with ease of reading (Metz, 1996). The TVScore© uses a fault system with a score of 0 if print factors are within the Zone of Optimal Typography (ZOT). Deviations from the ZOT are given weightings related to the degree of deviation from ZOT. See the notes following the TVScore© matrix for the procedures and coding of the variables. The variables were assessed visually using an overlay typometer and a screening overlay. The overlay typometer was used to measure the distance between the capital or cap line and the baseline. A screening overlay was used to measure contrast. Readability of Food Product Labels TVScore © Criteria and Scoring Procedure A Typographic Variable Scoring (TVScore©) system developed to provide an objective measure for the typography of each consumer product ingredient label. The TVScore© procedure was designed to examine the relationships between overall typography and participants' rating of ease of reading, and attractiveness of selected consumer product instruction labels. The TVScore©, is based on the optimal or safe zone for typography (Paterson & Tinker 1940; Tinker, 1963), which Sutherland called the Zone of Optimal Typography or the ZOT (1989). Fault system In devising the Typography Variable Score, a score of 0 was given if a print characteristic was within the ZOT. Deviations from the ZOT were weighted according to their degree of deviation from ZOT. For example, the optimal case presentation is a mixed use of Capital and lower case letters. The use of mixed case therefore, was scored 0. The use of some all-capital print in the text, a minor deviation, was given a fault weight of 1, while text in all-capital print was given a fault weight of 2. The accumulated deviations from ZOT are reflected in the TVScore©. The higher the TVScore©, the greater the number of deviations from the ZOT. Categories of ingredient labels A TVScore© was calculated for each product ingredient label selected for the study. Ease of reading was not deemed to depend upon product classification or size; therefore, the same typographic variables and values were used for all categories of labels whether on small size containers, large containers or food in pressurized containers considered hazardous products. Line length, while an important variable in readability, is disregarded as a criteria in this scoring Alton Mackey and Metz Consumer Interest Alliance Inc. Readability of Food Product Labels procedure, since the line lengths on ingredient labels were nearly all non-optimal. Sans serif print was disregarded as a criteria for the same reason. However serif print when used was noted on the scoring matrix, but not in determining the TVScore©. Assessment of variables The variables listed below were assessed visually and measured using an overlay typometer and a screening overlay. The typometer was used to measure the distance between the capital or cap line and the baseline to determine point size. A screening overlay was used to measure contrast. Descriptive data were compiled on the typographic variables of each product in the study. The matrix developed for TVScoring©, based on the ZOT, is presented in the following table. Products were rated for typographic variables and assigned a Typographic Variable Score based on the following criteria: 1. Style of print. Serif print is considered desirable and optimal. In order to have clear print reproduction, sans serif print is also considered acceptable. No faults were assigned based on the use of serif or sans serif print. The use of condensed print on consumer product instruction labels is a major deviation from ZOT. Condensed print is designed to use less than the normal width between letters and between words. Condensed or compressed print is used when more letters must be squeezed into a limited space resulting in alteration to the usual visual cues for the reader, making letters and words more difficult to discriminate. 2. Print size. Print size is determined by measuring the distance between the capline of the capital letters and its baseline by means of a typometer. Print that is 8 to 14 point size is considered optimal. Print that is larger than 14 point, or between 7 and 7.5 point is considered a minor deviation from optimal and assigned one fault point. Print that is smaller than 7 point is given fault points as the print size decreases. Six to 6.5 point size is given 2 faults, 5 to 5.5 point size is given 3 faults and smaller than 5 point size is given 4 faults. Ease of reading decreases with print size for all readers (Craig, 1980; Spencer, 1968; Paterson, Tinker, 1940). Alton Mackey and Metz Consumer Interest Alliance Inc. Readability of Food Product Labels 3. Leading. Leading or space between lines of print is expressed as a percentage of print size. Leading of 120% is considered optimal. (Spencer, 1968; Paterson & Tinker, 1940; Tinker, 1963; Tinker 1965). Less than 120% leading is considered a minor deviation from optimal and assigned one fault point. Leading 100% or less (expressed as leaded solid) is considered a major deviation from optimal design and assigned 2 fault points. If reverse print or all-capital print is used, 120% is the minimum acceptable leading, since both reverse print and all-capital require more leading accommodation. Less than 120% leading with reverse print is a major deviation from optimal. All-capital print leaded less than 120% is considered a major fault regardless of the size of print. (Tinker, 1963 and 1965). 4. Use of boldface or italic print. The use of boldface headings or key words is considered optimal print design. The use of all boldface or italic text for more than 2 lines in the body of instruction texts is considered a major fault and assigned 2 fault points. 5. Case. Case is the use of all capital print, small capital print or the normal mixture of upper and lower case letters. The use of all capital or small capital print for an ingredient text is assigned 2 fault points as a major deviation from optimal print design. The use of some capital print is assigned 1 fault point. No fault points are assigned for mixed case which is optimal print design. 6. Line length Line length measured in picas (72 pica = 1 inch) was assigned fault points determined using the data presented by Paterson and Tinker in How to make Type Readable (1940) It is desirable to have lines that are not too long or too short. Line length of 14 to 28 picas is optimal . Line lengths of less than 14 picas are considered a major deviation from optimal and assigned 2 fault points. No faults were assigned for line length on ingredient labels since most were outside the optimal range for continuous text. 7. Justification Left justification of text is considered optimal. The use of fully justified text creates spaces between words and letters making them less easy for the reader to discriminate and is given a minor deviation fault point of 1. Centred text and text that is contoured or shaped is considered a major deviation from optimal and assigned 2 fault points. Text lines that go around the surface of a container so that the beginning and end of the line are not both in sight when the container is held for normal reading are considered a major deviation from optimal print design and given 2 fault points. 8. Organization. Organizing text for the reader can be done in several ways. Bold face headings and / or boldface key words in the text, the use of numbered steps, paragraphs, text boxes, and frames are all ways of helping the reader find and read ingredient information. The absence of such aids is considered a major fault and evidence of no design for the reader. In text set out in paragraph style, surrounding clear space, framing or a text box, and the use of bold face key words or headings is considered optimal. The absence of one or more of these aids is considered a minor fault. The presence of none of these organizing aids is considered a major fault. 9. Contrast Contrast is defined in terms of black print on a white background and expressed as a percentage. A screening overlay, a readily available tool for use in Alton Mackey and Metz Consumer Interest Alliance Inc. Readability of Food Product Labels determining contrast is used. The screening overlay allows comparisons by means of graduated density of grey dots on a transparent overlay. Percentage of contrast is determined by moving to the % at which the print and background are not distinguishable from each other. For contrast, colours in the same colour family should be avoided. Colours in the violet and blue range should be avoided since the discrimination of these colours is reduced as the lens of the eye yellows with age. Optimum colour contrast is considered to be 80% and below 80%. Contrast levels below 80% are given 1 fault point for each 5% below 80%. 10. Reverse print. The normal presentation of print is dark letters on a light background, ideally black print on white or ivory background. Reversal of this presentation, referred to as reverse print, requires additional accommodation in print size and leading to compensate for the increased difficulty of reading of such print. Reverse print on a product information label is considered a major fault. Black print on white background is best because it usually provides the highest contrast. Reverse print should be used for small sections of text and then only when the contrast is 80% or more. When reverse print is used, the level of contrast needs to be optimal, and print size and leading both need to be increased to compensate for the increased difficulty of reading reverse print. When there is no such accommodation in the typography, reverse print is considered a major deviation from optimal and given 2 fault points. Alternating contrast levels is also a major deviation from optimal. Print and background in the same colour family will produce a reduced contrast and should be avoided. Normal vision in consumers over age 50 benefits from greater contrast. 11. Shiny / light reflecting. Alton Mackey and Metz Consumer Interest Alliance Inc. Readability of Food Product Labels Product instruction label surfaces that are light reflecting make the text more difficult to read. When the print colour is also bright such as gold on a dark background presented on a shiny surface it is difficult to read the text. There are no objective measures for this print factor. A text that requires the reader to continually turn the container to alter the light reflection is considered to have a major deviation from optimal and is assigned 2 fault points. Label ingredients on a matt finish is considered optimal. 12. Reproduction. Reproduction of print that produces fuzzy edged letters creates a text that is difficult for the reader. There are no objective measures for this factor; however, high technology print reproduction techniques should provide good quality printed text. When letters are hard to discriminate, reading speed and comprehension are slowed and the risk of reading miscues increases. Very thin or light letters, overly ornamented, compressed or condensed print is most likely to reproduce poorly and result in fuzzy print. The surface on which an instruction label is printed also contributes to quality of reproduction. High quality reproduction is optimal. Letters that are not crisp, or have bleeding at the edges are assigned 2 fault points. 13. Read through. Product ingredients printed designed to be read through a clear label and the contents of the container is considered a major deviation from optimal regardless of the colour of the container and contents. Print placed over a photograph, graphic image or watermark (a background of variable colour and contrast) is considered a major deviation from optimal and assigned 2 fault points. 14. Hyphenation and Abbreviation The use of any hyphenated or abbreviated word(s) in the text of the product ingredients is considered a major deviation from optimal. Two minor faults were considered equal to a major fault and therefore four minor faults would constitute an undesirable print design. Any combination of major or minor faults equalling two major faults was considered an undesirable print design. ©Marilyn Metz, 1996 The illustrations accompanying the the TVScores© may or may not be the exact size of the label.
