Preparing Hospitality Executives for the Future…
Les Roches launches new graduate programs.
Since becoming part of Sylvan International Universities (SIU) just
over one year ago, Les Roches has experienced growth not only in
student numbers and physical resources but also in the range and
level of program offerings. Faculty exchanges and sharing of academic resources among SIU schools have allowed Les Roches to
bring one of the most innovative and highest quality graduate programs ever offered in a school for hospitality management.
Leadership, strategy, revenue & yield management, six sigma, economics, statistics, real estate, branding and e-marketing are only a

NEW BUILDINGS
Students were eager to move into the new housing facilities
this September. Each individual room is equipped with a TV,
Refrigerator, Bathroom/Shower and a Safe.
The students were extremely pleased with the rooms and
communal facilities which include a lounge area, fully
equipped kitchen, study area and laundry room.

India
Allow me to introduce myself;
my name is Jyoti Gurung (graduate of December 1987). I was
one of the 'famous forty' who
jumped out of the main school
building at 3 AM that fateful
April 1985 night, when a fire
completely destroyed the old
building.
My career has been through a
whirlwind since I left Les
Roches. I started as Restaurant
& Bar Supervisor in Brunei,
then returned to India and
joined the TAJ GROUP OF
HOTELS - Mumbai, as Assistant
Restaurant
Manager.
During my tenure with the TAJ,
I was part of the opening
team/faculty of their Hotel
School at Aurangabad, India.
I then moved on to the
OBEROI GROUP, as Restaurant Manager. I managed
Room Services/Butler Service
A Message
from one of our Pioneers…
(during this period I met Mr.
Marcel Clivaz, who was a
guest at The Oberoi Bombay).
After that, I was coffee shop
Manager at the Oberoi Towers
Bombay. I then joined Radisson Hotel St. Thomas Mount,
Chennai - India, as Food &
Beverage Manager; and again,
was part of the opening team. I
switched jobs three years later
and am presently with Le
Meridien Bangalore - India, as
Executive Assistant Manager Food & Beverage.
It has been an exciting career
so far, and I have to thank and
dedicate my career path to
'Les Roches'. After all the
education and training I
received, hotelier has never
been easier. 'Les Roches' has a
reputation for producing quality hoteliers, who have a
strong foundation in Food &
Beverage.
In retrospect, I remember Mr.
Ortiz (F & B Service) who
taught me to carry plates; the
late Mr. Schneider, who taught
me to appreciate my wines;
Mr. Bider (F&B Production),
whose Risotto I burnt; the late
Mr. Maes (Accounts) who
taught us our numbers; beautiful Ms. Poggio, who taught us
French, and many, many more.
I will always cherish memories of walking through
Bluche, past Petit Paradis,
Tacot and Pre-fleuris; the
funiculaire to Crans-Montana,
and the Saturday evenings at
'La Pasha' disco, in a mild stupor.
I am still in touch with some
of my colleagues, in particular, old man Ching in
Australia; Marcel Engel in
Geneva, Jacob and Rose, who
are in "God's-own-country"
Kerala - India.
I hope with my family to visit
Bluche one day, and show my
son the career path his father
walked. In parting, some
famous last words for all
Rochians - "Hang in there
whatever you do, something
nice will be happening to
you..."

The Swedes do it again!
Sweden
Thanks to the cooperation
between Jonas Kjellqvist, Susanna Dahlqvist, Sofia Ellhammar
and Mikael Schwahm we were
able to have another alumni get
together in Stockholm.
The rendez-vous was Mikael’s
restaurant, Flamingo in the centre
of Stockholm. Mikael set the
pace for the evening by welcoming us with a tasty Margarita
followed by a wonderful Cuban
inspired dinner.
A few of us are still in the hotel
business whilst others have chosen different directions within the
service industry; McDonald’s
Inc., American Express travel, as
well as becoming entepreneurs
and starting own businesses.
The main topic of the evening
was reminiscing about good
times at Les Roches and catching
up with old friends.
We finished off with a large strawberry Daquiri instead of dessert.
Before we continued into the night
it was decided that this kind of
event has to become more frequent.

London Alumni Gathering
In traditional fashion the London
Les Roches reunion was held in a
dark den of inequity. The only
bright beacon of hope was the
stylish Les Roches T shirt pinned
to the outside door of the pub.
time for the organising committee to begin the prize giving
ceremony. School had been
extremely generous and given us
a selection of ties, neck scarves,
pens and key rings.
Being "very busy" hoteliers
everybody arrived late but soon
the atmosphere and banter raved.
We had secured a luxurious
downstairs area of the pub which
was neatly demonstrated by a
barricade of drink infested,
smoke damaged wooden chairs.
The locals were very envious as
we quaffed our warm wine and
flat lemonades under the fake oil
paintings of fox hunting scenes!
We handed over ties to all the
men (and I think that Ukrainian
bird was a man too!) and scarves
to all the girls. Tears began to
appear in peoples eyes as gifts
were handed out. I am sure the
tears were genuine for gratitude
but I have subsequently been
informed that they were in fact
tears of laughter. Fortunately the
committee had saved the best gift
for last. The piece de resistance
was a remarkable tablet that
when exposed to water miraculously turned into a small towel
with the Les Roches logo. It truly
was a remarkable trick and by
this stage the entire audience was
speechless.....or was that because

By 9.00pm 25 colleagues had
arrived and soon the generous
allocation of wine had been consumed and we were forced to
fight our way to the bar for further refreshments! It was now
December 2001
they had all gone home by then?
Seriously though, it was a great
reunion enjoyed by all. Thanks
very much to Darcy at School for
all the support and donationsmuch appreciated! Finally, we all
raised a glass to good old Mr.
Sherry, he would have liked that!

Aust ralia
What a turbulent past 6 months
it's been around the world!!
(Glad I'm living in Australia!!)
As some of you may know, I
have moved back home to Perth,
on the West Coast of Australia,
and am in the process of opening a franchise concept around
Australia & Asia. We set up the
first location in Fremantle, but
have now severed our ties with
the establishment, so that we
could refine the concept and
package it up for prospective
investors. Our first fully packaged operation is to be in
Subiaco (Perth), and then in 2
years we will have an establishment in Malaysia, Singapore,
China, Brisbane, Melbourne &
Sydney. So busy times are ahead
for us here.
Darcy Pasco contacted me a few
weeks ago, to advise me that a
good friend to all of us, Jim
Sherry, passed away after a long
battle with cancer. And I know
that I speak on behalf of all the
Australians who went through
Les Roches and knew Jim, that
we have lost a great mate, and a
true friend who actually cared
about each and everyone of the
students at Les Roches. We'll all
have a beer and a cigarette
together soon mate.

Asia, and is in Australia (East
Coast) catching up with some
old Les Roches mates.
Luca Virgillio is doing incredibly well back in Rome, ecco
l'uomo!
Also, Pete & Catherine Smith
are in the States and both having
a great time opening restaurants
throughout the country.
The Captain-David Goldstone
and his beautiful wife Carolyn
have just had a baby boy, Benjamin Ian Goldstone, June 19th.
I caught up with Liz McMurray
in Pert a few months ago, and as
the guy's in Sydney would
know, she is looking great and
doing exceptionally well in the
Art field now, she is currently
studying Arts and is looking to
start as a broker.
Kathy Celliar (nee Martin) just a
had a baby girl, Harper Sophie
Celliar.
Craig Powell is back in Fiji
(after working in the UK). He is
with Sonaisali Resort as Human
Resources Manager.
Casper & Luisa Schonfeldt have
just had a baby girl!! Isabella
Sofia Schonfeldt on July 16th.
Also, my Daughter, Victoria has
a new boyfriend, Claudia Yeldham (nee Chegwyn's) little boy
Benjamin, apparently he is
missing her after we moved
from Sydney! Haha
Ajuad & Jillian Nazer are both
well in Fort Lauderdale, and
despite my requests, there are no
baby camels in their household
just yet (I give them 1 year!!
Hahaha).
Poor old Melinda "Connie"
Wood is turning 30 this December, despite hitting the magic
30's, I am sure that she is comforted by the fact that she looks
better than any of us!!
George Nicholas has also turned
30 this year, unfortunately he
looks like the rest of us!! Hahahaha JUST KIDDING!!!! After
narrowly escaping the Twin
Towers nightmare in New York,
it's good to have him home,
George will be over here in
Perth early December, and we
have golf and beverages organised.
Everyone's mate big Robert
Stanford journeyed to the land
down-under in October, I am
sure that it is his annual sabbatical, unfortunately I didn't have a
chance to catch up with my mate
Stan, but I believe that all the
other guy's caught up with him
and had a beer or 7.
Ajit Joshi has moved into
Archer Consulting as the Senior
Consultant in Sydney, and is
doing very well, if any of you
are looking for a new job, give
Ajit a call.
Ah, last but certainly not least,
Sylvia Mossi finally contacted
me, and she is well, Married and
has a baby Boy!!! Francisco
Jose, and they are all living in
Lima, Peru.
Make sure that you all stay well,
and if you are in the area, the
beers and mussels are on me!!

Brazil
‘When I was studying at Les Roches, I
had no idea which path my life would
take in the future. The dream of almost
every student is to reach GM position in
a five star hotel, which I achieved when
I was 28 years old at the Sofitel Hotel in
Recife – Brazil. I stayed there for 5
years, it was then that I started discovering other possibilities in this wonderful
world of ‘enhancing customer experiences’, which is a step ahead of the
service industry for which we have been
so well trained for at Les Roches.
In the past years, I have been the GM
of an Amusement Park (Playcenter), I
also implemented the concept of Mini
International
Hard Rock Café – Rio de Janeiro
Casinos, opened a Bowling Center
(Brunswick) and owned a restaurant,
and in the last two years I have been
the GM of the Hard Rock Café, Brazil.
We opened in Rio de Janeiro, the second largest Hard Rock Café in the
world and we are currently preparing
for the opening of Hard Rock Café’s
in other major cities in Brazil.
The Hard Rock Café is the maximum
expression of enhancing customer
experiences, and offering the same
ambience - a gastronomic, entertainment and retail experience. We are
constantly developing ideas, creating
events, entertaining people, providing
and living in is beautiful and has alot of
potential since only opening last June.
Unfortunately the economy as well as
the political situation in Argentina is
not at its best, this effects all businesses and individuals. The region
around Mendoza is very interesting
because of their vineyards, mountains
and their closeness to the ski resorts does it sound familiar?

Mr. Dorival Pinotti (Regional Coordinator for South America) during a trip
to Chile had the pleasure of meeting
up with alumni - Ms. Andrea Ilabaca,
she had a couple of words to
say,“After graduating from Les
Roches in _____, I backpacked for
half a year through France, Holland,
England, the USA, Brazil, Columbia,
Ecuador, Peru, Bolivia and Chile.
I arrived in Chile in December 1993
an ambience of music and an informal
environment, our employees are also
part of the “show”. I love my work at
Hard Rock Café because I consider it
the synthesis of all my previous experiences. When people ask me how did
Les Roches HMS influence my career,
I always answer that success lies
inside each individual but with the
help of Les Roches I was able to
achieve this success much sooner.
I have to admit that the life experience in
Switzerland, the languages I have
learned, the international friends I have
made and the charm of the little ‘Swiss
Flag’ stamped in the center of my diplo-

Hello there. Just after graduating from
BBA in Winter 2001, I was selected
for the Hyatt Corporate Training Programme in Mendoza, Argentina.
When arriving in Mendoza, I was very
surprised to see the mixture between
European and South American style
of life, being very 'special' but pretty
fast I adapted to the lifestyle.
The Hyatt property that I am working

and managed a restaurant for a few
months. In June 1994 I was hired by
LAN Chile (Chilean National Airline)
as the Presidential Flight Coordinator
where I spent 4 years traveling the
world with the Chilean President, Secretary’s of State and the top business
people of the country.
On one of the Presidential trips I met the
owner of the winery I now work at, Vina
MontGras. I have been with them since
December ’97 and LOVE IT!!! Wine is
SO much fun…Good food…Good
Wine…Great People… Great Travel…
What more can you want??”

The Singapore Alumni had gathered
on the 19th of November, at the Jus
de Vie that is owned by Govin D.R.
who is the new official LR Representative for Singapore.

gathering. Conversation was ranging from school life back then and
returning to Les Roches for the
MBA course.
Wine and Sushi was flowing and
every body had wide grins on their
faces.
VISIT TO SHATEC (The Singapore International Hotel and Tourism College)
We had the pleasure of meeting up with
Ms Teo P. K. in their new campus located in Bukit Batok, Singapore. An
impressive building that most certainly
reflects the high standards and reputation Shatec has.
As we were being given a personal
tour around the new campus, we were
pleasantly surprised to be introduced
to Mr Steven Wang and Ms Sophie,
who were graduates of Les Roches
from the Hotel Management Diploma
2000 summer course.
Ms. Teo tells us that they were hired on
the merits of the strong discipline,
understanding of the demands of the
hospitality industry and for being self
motivated. Areas which Ms Teo says
are definite derivatives of the learning
and training received in Les Roches.
And now with their work schedule in
Shatec, they will most certainly be good
ambassadors for both Shatec and Les
Roches.
South Korea
November 9th, Mr. Chung (Official
Representative for Les Roches in Korea)
and Mr. Kamal Charafeddine organized
an Alumni gathering at the Ritz Carlton
in Korea, at which 35 Alumni were present. The topics of discussion were
about the developments of the school,
school life, how much they all miss Les
Roches, and personal developments.
Many Alumni are currently working in
Philippines
“deluxe hotels” in top positions and are
proud of their accomplishments. Alumni
expressed that without the top training and
education they received from Les Roches
they would not be where they are today.
After finishing dinner the group went to
an Irish pub down the road where they
continued the evening. The night was
unforgettable full of joy, stories, fun and
humor.
Roger Bathalomew, the official representative in the Philippines hosted a dinner for
the alumni at the Intercontinental Hotel. The dinner entailed reminiscing of the old
days, developments of Les Roches, good music, food and drinks.

China Tourism University visits Les Roches
With major movements in China taking place, Les Roches will speed up its
in pace in terms of helping the hospitality education and training in China,
as it has done for the past 15 years.
Mr. Marcel Clivaz, a well-known gentleman and an old friend to the Chinese
people – the founder of Les Roches
HMS, has traveled to China over the last
two decades building many contacts and
friendships. Currently Mrs. Marie-Christine Clivaz – Director of International
Affairs of Les Roches has carried on the
mission of developing the Chinese
market for hospitality education.
In June 2001, Mrs. Marie-Christine
Clivaz and Phillip Zhan traveled
through Hong Kong, Shenzhen,
Shanghai, Changsha, Beijing, Dalian,
and Urumqi. The trip included meetings with Les Roches Alumni,
discussions with Chinese hoteliers,
visiting the leading Chinese institutes
and seminars with Chinese Scholars.
With ambition, spirit, education standards, Les Roches will contribute even
more to the Chinese hospitality education and its developments.

Mr. Govin D.R. is the new Official
Representative in Singapore. Govin
graduated Les Roches in 1986. After
leaving Les Roches he stayed in
Switzerland for one year working in
Montana and Montreux. Govin then
decided to go back to Singapore
where he worked in many exception-
al establishments as Restaurant Manager in a five star property, F&B
director at the Omni Marco Polo
Hotel, Asst. F&B in Le Meridien,
then became GM for the second oldest property in Singapore, and
Corporate director for F&B for the
HPL group.
After learning the trade Govin opened
his own business. On top of his impressive work history Govin has also
managed to fit in teaching f&B at the
Temaasek Polytechinic, and also be
with the first establishment to win the
“STPB Tourism Award” for best Service in Restaurant Category.

I have been working for Grand
Hyatt Bali since September
15th,1997 in Sales and Marketing
as Business Development Manager. During a sales trip this year, I
attended the EIBTM (The Euro-
pean Incentive & Business Travel
and Meetings Exhibition) which
was held in May in Geneva. I was
so happy as well to have the opportunity to visit Bluche. For me, it's
like a dream come true to come
back to Bluche. I never realized
how I miss the school, and its surroundings. Since I left in December
96’, I noticed there have been
changes, such as the Funiculaire,
new school buildings, but the feeling eas still the same. I saw Mr.
Vouardoux and Mr. Crettol during
my visit and had the pleasure to
exchange a few words with them.
It was too bad I didn’t have the
chance to have dinner at the A La
Carte restaurant at school, as it was
exam period. Darcy, was very kind
to show me around and explain all
the changes and updates of the
school. I wish all the best to my Les
Roches friends, and for those who

Greetings from the bright lights of LAS VEGAS!!!

October 2001, Sandy Olper became
the official agent for Les Roches in
Chicago. Sandy went to college at
Brandeis University in Boston, Massachusetts, and then pursued a
masters degree at UNAM in Mexico
City where she majored in Clinical
Psychology. After graduation she
practiced and taught Psychology in a
high school for seven years in Mexico, and then moved to Chicago and
worked in Social Services. We had
the pleasure of hosting Sandy in
Bluche this December for 4 days
where she met teachers, students,
and experienced Bluche life.
Having graduated from Les
Roches Summer Batch 2000, I
returned home to Sydney (Australia) to work for The
Fourseasons - (Regent Sydney)
until August 2001. I am now finishing my studies at the
University of Nevada Las Vegas.
Much to my delight, I discovered
several other Les Rochians working
for The Four Seasons along side me
- my fellow Aussie buddy Martin
Litke (BBA W'00) and the eversmiling Tracy Janda (BBA W'00)
and soon-to-be husband (Matt BBA
W'00). Matt is currently working at
the trendiest hotel in Sydney - 'The
Establishment').
Hey, ex-management committee
of Summer 2000! So, who's planning our 5 year reunion? Why,
Rustom Vickers of course! With a
bit of help from his partner in
crime, Pranav Patel. (Both are
now working for The Fourseasons
New York). I had the pleasure of
their company in Vegas and we
cleaned up at the Black Jack
tables in Les Roches style.

South Korea
Hello it’s Daehee Lee graduate of
1995 (summer batch), after graduation I moved back too Seoul,
Korea. I took a long holiday with
my family for one month and then
started looking for a job in the 5
star hotels in Seoul. The economy
then in Korea was not as good as
the years ahead, so it was very dif-
ficult for me to find a place to
work. Some of my friends were
disappointed by not finding work.
In January 1996, I got a job at the RitzCarlton, Seoul as the Front Desk
Clerk. I have been working hard as I
did at Les Roches. After 2 years working I was promoted as a supervisor and
at the same time I was appointed as the
departmental trainer. February 2001 I
was officially promoted as Assistant
Manager of Front Desk.
I am married and have one daughter
named Jane. My wife and I are expecting another baby in March 2002.

This December 14th my wife Emma
Arqué (Winter '95) will turn 30 and I
have decided that instead of buying
lots of expensive presents I will start a
foundation with the name of Emma's
beloved (and deceased) grandfather:
The Francisco Javier Foundation.
This Foundation has - as its only goal
- the helping and supporting of poor
people in South America. As a first
project basic dental care will be provided free of charge to a group of
children from the poorest families in
the Cochabamba region of Bolivia. In
that area of our planet, 70% of the
people exist below the poverty Line

In loving Memory of
James R. Sherry
In 1967 James Sherry
came as a teacher to Les
Roches for a summer. But
then he fell in love – with
Les Roches – and stayed
over 35 years. And until
his death on the 9th October was the longest
serving member of the
faculty.
steady hand and relaxed
demeanour, the show
always went on. Generations of Les Roches
graduates hold in their
hearts wonderful memories of their Cultural
Nights, that would have
never happened without
one special and caring
person.
He completed his studies
at the University of Glasgow, earning a Master of
Arts degree. Starting
teaching first in Spain, he
then came to Bluche. He
began as a lecturer of
English, Spanish, French
and history in the former
Les Roches International
School. From 1979 until
1983 he was the Headmaster.
In the 1970s he was also
the trainer and coach of
the Les Roches football
team, travelling extensively in Switzerland and as
far distant as Belgium. He
trained students in cricket,
and rugby, and served as
sports co-ordinator. He
was the editor of the first
yearbook Les Roches published in 1969.
In the 1980s he began to
devote his energy and talent
to
the
Alumni
Association. And, over the

and
personal devotion to Les
Roches worthy of emulation. His selection as an
honorary member of Eta
Sigma Delta honour society in May 2001 was
one small gesture of
thanks to one that has
given his all to Les
Roches.
years, it has grown significantly in membership and
in services. He was the
founder and first editor of
the Link, the School’s alumni magazine.
The penultimate example
of Mr. Sherry’s life-long
devotion to Les Roches
came each fall and
spring for over 20 years.
He was the guide and
mentor for the dozens of
groups each semester that
prepared for the Cultural
Night Show. The students
came from sixty countries
with diverse traditions
and cultures. He gave
them
encouragement,
helped them organise
and costume, and stayed
with them throughout the
ups and downs of
rehearsals. On Cultural
Night he calmed their
stage fright, and with his

we knew about him is that
he cared so much –
about the students, about
Les Roches and its people. And most of all, we
know that he dedicated
his life to the School and
to the service of its
founders, the Clivaz Family, and we appreciate
