Rheinlander Bakery Dry Mix Baking Instructions Sweet Deliverance • Celia's Gourmet YELLOW CAKE You will need: Directions: ¾ cup water 4 medium eggs (or 3-xtra large) Using a large bowl, combine entire contents of the mix with the butter or oil. MIX on LOW SPEED or wire whisk until lumps disappear. Continue mixing and add the water. Prep: Mix for 2 minutes, add the eggs and mix for an additional 2 minutes. Preheat oven to 350°-360° Farenheit. Grease sides and bottom of pan(s). Baking Times: ½ cup oil (or melted butter) Pan Size: Time in Minutes [2] – 8" Rounds 30-35 min. [2] – 9" Rounds 25-30 min [1] - 13" x 9" Pan 30-35 min CHOCOLATE CAKE You will need: Directions: 1 cup water 4 medium eggs (or 3-xtra large) Using a large bowl, combine entire contents of the mix with the butter or oil. MIX on LOW SPEED or wire whisk until well mixed. Continue mixing and add the water. ²/³ cup oil, melted butter or non-fat yogurt (your choice!) ½ cup water 2 large eggs Optional: Small amount of raisins and/or walnuts. Soak raisins overnight in water/wine to make them tender. Strain liquid from the raisins and pad them dry before adding to mix. Prep: Preheat oven to 375° Farenheit. Grease sides and bottom of pan(s). Mix for 2 minutes, add the eggs and mix for an additional 2 minutes. Add optional raisins/ walnuts by folding gently into the mix using a spatula. [2] – 9" Rounds 25-30 min [1] - 13" x 9" Pan 30-35 min Rheinlander Bakery Dry Mix Baking Instructions Sweet Deliverance • Celia's Gourmet Make it Your Own Muffin Mix You will need: Directions: 1 cup water Using a large bowl combine 1 pkg. of the dry muffin mix (18.5 oz) with the butter or oil and mix on LOW SPEED or wire whisk until lumps disappear. Continue mixing and add the water (8 oz). Mix for 2 minutes. Add the eggs and mix for an additional 2 minutes. If adding optional ingredients, lightly fold them into the mix at this time. NOTE: when adding fruit, lightly roll them into the tapioca flour first. If fruit is frozen, allow to come to room temperature before baking. ½ cup oil (or melted butter) 4 medium eggs (or 3-xtra large) Optional: Small amounts of fruit and/ or nuts of your choice. Small amount of tapioca flour to roll the fruit in. Prep: Preheat oven to 375° Farenheit. Grease sides and bottom of muffin pan(s) or use muffin baking cups. Baking Times: Bake at 375° F for 5 minutes until the muffins peak. Reduce oven to 350° F and bake an additional 10 minutes. Note: Baking time will vary depending on the size of your muffin pan and amount of nuts/fruits added. Yield: approx. 12 regular sized muffins Brownie Mix You will need: Directions: ²/³ cup oil (or melted butter) Using a large bowl, combine entire contents of the mix with the butter or oil and mix on LOW SPEED or wire whisk until lumps disappear. Mix for 2 minutes, add the eggs and mix for an additional 2 minutes. Pour batter into pan and follow baking time below. 6 medium eggs (or 5-xtra large) Prep: Preheat oven to 350° Farenheit. Grease sides and bottom of a 13" x 9" sheet pan. Baking Times: Bake at 350° F for 20-25 minutes until the muffins peak. Tip: It’s better to err on the side of underbaking these than going over the time. You will get a more moist brownie this way. Moist N'Chewy Cookie Mix You will need: Directions: ²/³ cup oil (or melted butter) Using a large bowl, combine entire contents of the mix with the butter or oil and mix on LOW SPEED or wire whisk until lumps disappear. Mix for 2 minutes. Add your favorite chocolate chips, nuts, etc. or make snickerdoodles by padding cinnamon sugar or sprinkles on top. 4 large eggs Optional: chocolate chips, nuts, cinnamon sugar, etc. Prep: Preheat oven to 350° Farenheit. Use a non-stick cookie sheet or grease the sides and bottom of a baking sheet. Baking Times: Bake at 350° F for 8-12 minutes or until slightly browned. Yield: approx. 24 cookies
