I was delighted to have been honored with the opportunity to photograph
Rabbi Kenter’s family for the B’nai Today. When they arrived to my studio we
discussed the look and feel that they wished for in the portrait. Staci expressed
how she would like the photos to look both fun and relaxed.
A background was chosen to compliment the colors of their clothing and
create the informal look they desired.
While directing Eytan and Staci through a variety of poses, I kept Boaz
entertained. There was plenty of laughter during the session. When I posed
them on the floor Boaz, quickly jumped on Eytan’s back without any coaxing,
just as he often does at home. I captured the moment and knew I had the
portrait that they had hoped for! Upon viewing the photos immediately after
the session, numerous poses were selected and the cover photo was chosen.
It was my pleasure to preserve this exciting time in their lives with a lasting
memory created by a treasured family portrait.
Having parents tell me how I have taken their favorite portraits of their
children and grandchildren gives me a great sense of accomplishment. I
appreciate how important the responsibility of this task is for a professional
portrait photographer.
I welcome you to stop by my new studio at 400 Mt. Vernon Hwy, only two
blocks from B’nai Torah. Caryn and I wish the Kenter family a picture perfect
future!

On March 23, 2008, I received the following email: “Hello. My name is Eytan Kenter.
I am a fourth year student in the rabbinical school and I wanted to touch base
regarding the internship this summer at your synagogue. I am very interested in the
opportunity to work at your congregation this summer. I am attaching my resume
and if you could please let me know what else you would like from me in order to
continue this process, I would greatly appreciate it. Thank you very much, Eytan”
It was a different time for all of us. It was before he was a rabbi, a husband, a father,
or even a licensed driver. The synagogue was much smaller, and women had yet to
touch the Torah. Our preschool was struggling, and our religious school was less than
1/3 its current size. As for me- I was about the same age that Rabbi Kenter is now.
As it turned out, that summer didn’t work out for us, but a year later, opportunity
knocked again, and were able to welcome him as our first associate rabbi. He served
as an inspiring teacher and guide to hundreds of congregants, old and young, and brought a deliberate calm and keen
organizational eye to complex and emotionally fraught situations. He spearheaded programs from inclusion of those with
special needs to leadership development to adult bat mitzvah and kosher meat purchasing. He took a special interest in
mentoring new staff and empowering laypeople. He worked hard, without complaint, under the most trying of circumstances.
Each time I respond to a call from a congregation around the country that is eager to consider him to be its spiritual leader, I reflect
on the all the ways that he has learned and grown with us, but that we have gained so much more.

Times of change are both exciting and difficult and that is definitely true for us at
Congregation B’nai Torah. Rabbi Kenter has been an integral part of our community for
seven years and his leaving will be felt by all of us. Over the years, Rabbi Kenter has
brought us alternative services both at the high holidays and during the year including
family services and learners services. His dedication to social action has guided us to many
opportunities to help better the community we live in and his dedication to inclusion has
helped everyone feel welcome at Congregation B’nai Torah regardless of abilities. Our
staff and lay leadership will continue to nourish these vital seeds that he has sewn. Rabbi
Kenter introduced us to new educational offerings on a wide variety of topics. I hope each
of you took the opportunity to learn with him, work with him or listen to his fantastic
sermons, that he gives from memory without notes. His dedication to our congregation
has helped us grow both in numbers and spirituality and we have been honored to watch
him grow right along with us. I know I speak for the entire congregation when I say he
will be missed and that we wish him, Staci and Boaz the best in their future endeavors.
Change is hard, but we have much to gain. Our new associate rabbi will bring original sources of spirituality and ruach to our
community with unique thoughts and ideas. Your feedback throughout the search process continues to be invaluable. Our
new associate rabbi will have big shoes to fill and we are working hard to ensure our new rabbi is worthy of being part of our
congregational family.

EYTAN KENTER | RABBI
Seven years ago, I was a recently engaged, about to be rabbinical school graduate
interviewing with congregations, trying to figure out where my life would take me
from there. Over the next 8 months, I would be offered a job, move to Atlanta (into a
house, instead of an apartment, with air conditioning, a dishwasher and everything),
start at B’nai Torah, and get married. Who knew what the next seven years of my life
would have in store?
It has been my absolute privilege to serve this community for all of these years. We
have celebrated together as Staci and I were married and welcomed our son Boaz and
cried together through Staci’s cancer treatments and the loss of my grandparents.
We have built an exquisite new building and expanded our congregational family in
numerous ways. We developed Special Friends’ Shabbat and the Mitzvah Festival and
began to offer family and enrichment services. Our Religious School doubled in size
and we now have close to 40-50 B’nai Mitzvah per year. It was a privilege to travel
together with Confirmation and Adult Bat Mitzvah classes on their Jewish journeys
and with dozens of our members as we toured the land of Israel together. The past seven years seem so full yet also so short.
No matter where the wind blows us, we know that we will always have a home here in Atlanta and at Congregation B’nai
Torah. I can’t imagine a better place to have landed those seven years ago and I will always be grateful and thankful for the
opportunity to have served you all these years. May we all continue to grow from strength to strength.

BINNIE EDELSON | EARLY CHILDHOOD EDUCATION DIRECTOR
Binnie Edelson is moving on to the next phase of her life at the end of May. It seems as
if everyone knows her in the community, and with good reason.
Binnie has been the Early Childhood Education Director at Congregation B’nai Torah
for 6 years. Ms. Edelson has acquired the best Preschool teachers in Atlanta, and her
experience, creativity, and passion has resulted in one of the best Jewish Preschool
programs in Atlanta. It will remain a legacy to her impact on the Jewish Community. We
wanted to show our appreciation to Binnie in our Staff Feature in this issue.
Binnie Edelson has a Bachelor of Arts degree in Elementary Education, and has
completed extensive graduate coursework in Special Education, from The American
University.
Ms. Edelson has spent over twenty-five years involved in the education of young children:
working as a teacher, Director in both secular and Judaic programs, teacher trainer,
parent educator and educational advocate. She was the Director of Early Childhood
Education at the Jewish Community Center of Greater Washington, where she was
responsible for supervising the Parenting Center, the Preschool and Kindergarten and running a Transitional Kindergarten
program. During her tenure at the JCC she started the preschool inclusion program for children with special needs.
Ms. Edelson has also worked as Director of Early Childhood and Family Education at two conservative congregations in MD and
she has worked as an Educational Consultant assisting parents of children with special needs, helping them to find appropriate
placement for their children and supporting them during IEP and Evaluation Meetings.
Ms. Edelson moved to Atlanta from the DC area over six years ago and has two grown children and four perfect grandchildren.
Binnie has been a kind and calming presence at B’nai Torah, and she’s been so devoted to our
congregation, even as she has faced her own health concerns. She’s a little bit like Moses,
guiding the people through the desert, but then not entering the Promised Land. As we all enjoy
the benefits next year and beyond, of a full day program in a beautiful facility, we should not
forget that it would not have been possible without her efforts.

It has been such an honor and a pleasure to have worked with Binnie over the last 6 years.
She has brought her personal dedication to our early childhood programs bringing a level of
professionalism and Yiddishkeit to all that we are doing for our youngest members. She will

It has been a heartwarming experience to work with and learn from Binnie during my time at
Congregation B’nai Torah. The passion Binnie has for education and our young children emanates
throughout the Preschool. Her exceptional background has ensured that the core of our Preschool
program and all young family programming is child-centered academics, and includes the love of
learning, nurturing, and exploration for our youngest members and their families. This coming year,
Binnie has created a full day Preschool program that will carry on the academic skills and ruach that
she created for our Shul. I wish Binnie good health and happiness in her next chapter.

NATALIE SARNAT | EXECUTIVE DIRECTOR
It is hard to summarize a person’s contributions and effect on a community in a short
paragraph. As I reflect on what Rabbi Eytan Kenter has meant to both myself, and the
Congregation B’nai Torah community I am overcome with many emotions. Institutionally
Rabbi Kenter’s contributions will long outlive his tenure here. He has encouraged a focus on
social action, inclusion and meaningful programs from the creation of the Mitzvah Festival
to the CBT Includes Me initiative. He has raised the bar for the adult education we provide
to our community. But most of all he has encouraged us all to have compassion in all
aspects of our synagogue life. He has exuded that compassion to all of the congregants he
has interacted with over the last 7 years. On a personal level, he has been a true confidant
and partner in crime for me, as we have worked with Rabbi Heller to strive to be a best in
class synagogue. Our friendship will last a lifetime, and though there may be many miles
between us, I know his support will be never-ending. With deepest love and gratitude, I wish Eytan and his entire family the
best on this exciting new journey.

Eric The Great performed over 300 magic shows in the Milwaukee area from the age of 12. At only 17, Eric Bern began his
second professional career creating magic from behind the camera. During his extensive career he has captured precious
expressions of children, the warmth of loving families, and the excitement of special celebrations all over the country.
Eric recently built his newest studio in the Sandy Springs area, two blocks from B’nai Torah. There he continues to bring out
the best in his subjects with the most flattering angles, lighting and relaxed expressions. His Photoshop techniques are skillfully
applied to preserve a natural un-retouched look.
Passover, Thanksgiving and other holidays, Eric is often booked with
multi-generational portraits while families are together. Eric consults
with his clients prior to their sessions regarding clothing and color
choices. He also explains what to do in order to make their studio or
on location portrait experience stress-free and fun. Families all over
Atlanta treasure his artfully created wall portraits.
Eric’s Headshot Studio Atlanta business helps brand many working
professionals for their websites, LinkedIn, and other promotional
needs. The many reviews and five star ratings on Google+ and Yelp
attest to his talent as an accomplished headshot photographer. Newell
Rubbermaid, Manheim, Cox, Colliers International are just a few of the
local companies that send their executives and new employees to Eric’s studio.
High school seniors find their way to the Eric Bern Studio for unique and modern portraits, which capture their personality and
interests.
Eric is past president of HOD Lodge Carmel and current President of Atlanta Scholars Kollel Advisory. For over 20 years, the
members of B’nai Torah and the Epstein School have looked forward to having their school and family photos taken by Eric. He
and his wife, Caryn, have two grown sons and a daughter-in-law in Sandy Springs.

About Dr. Bradley Artson
Rabbi Dr. Bradley Shavit Artson (www.bradartson.com) holds the Abner and
Roslyn Goldstine Dean’s Chair of the Ziegler School of Rabbinic Studies and is
Vice President of American Jewish University in Los Angeles. Rabbi Artson has
long been a passionate advocate for social justice, human dignity, diversity
and inclusion. He wrote a book on Jewish teachings on war, peace and nuclear
annihilation in the late 80s, became a leading voice advocating for LGBT
marriage and ordination in the 90s, and has published and spoken widely on
environmental ethics, special needs inclusion, racial and economic justice,

secure peace for Israel and the Middle East. He is a frequent contributor for

BRING ON THE RICE AND BEANS!
A friend once confided in me: “I mean, I have the Eel, but I can’t make sushi on Passover because of the rice…” I was
flummoxed by her culinary approach, but on a deeper level, I understood exactly where she was coming from. As Passover
approaches, even many Jews who normally take a cavalier attitude towards our Jewish dietary traditions the rest of the
year start scrubbing kitchens, or “get the bread out” of their diets in a myriad of ways. This makes sense because the
Passover prohibition on chametz, grain products that been leavened or allowed to rise in contact with water, is repeated
several times in the Torah, and is more serious than the ban even on non-kosher meat. Many Jews understand instinctively
that observing those 8 unleavened days is a fundamental statement about our history, a remembrance of the Exodus itself.
Along the way, many fences and wrinkles have emerged. One of the most puzzling is that of “Kitniyot” – the practice of
many Jews of European heritage of avoiding rice, beans, corn, soy, and other foods of the “legume” family. About 800
years ago, our ancestors stopped eating rice and beans. Some say it was because their swelling in water was confused
with true rising, others because they were not sufficiently festive, still others because they might be stored with or become
mixed with grains. As time went on, food products that Moses never considered, like corn, peanuts and green beans got
added to the mix. One enterprising tea supplier even tried to drum up business by suggesting that coffee beans fell into
this forbidden category. In response, Maxwell House published their famous Haggadah and reassured all that a “fifth cup
of Joe” had its place at the seder table.
Whatever the cause, the practice was on shaky ground. The Talmud, over 1500 years ago, made it crystal clear that only
grains, in contact with water, may become prohibited chametz. Other types of vegetables were permitted - even if they
swelled when soaked in water, they did not contain the gluten that would allow for the leavening and rising banned by the
Torah. Sephardic Jews ate these foods on Passover without hesitation, taking the precaution to make sure that no chametz
was mixed in.
For a long time, rabbis, myself included, hesitated to undo the ban, even though many understood that its causes were
either mistaken or no longer relevant. There are legal loopholes that one must jump through to undo a ruling that was
previously accepted. Furthermore, when one challenges one’s tradition, people may lose faith in many other, more
essential parts. And yet, when the Conservative movement’s Committee on Jewish Law and Standards took up the issue
of Kitniyot, I voted enthusiastically to permit their consumption on Passover, for several reasons:
1. The concerns that may once have applied can easily be remedied by purchasing fresh vegetables without risk of
grain contamination.
2. Allowing all fresh vegetables provides a cheaper, and potentially healthier alternative, to heavily processed Passover foods.
3. For vegetarians and infants who depend on formula, protein found in legumes is essential to proper nutrition
4. Many Jews (like my friend with the eel) got so wrapped up in avoiding rice or corn that they ended up eating food
that truly was non-kosher, which is counterproductive.
In practice, any fresh vegetables are ok, but there are limitations for other forms: products that are frozen, dried or found
in bulk bins need to be checked for chametz that might have been mixed in during the packaging process, rice should
be un-enriched, canned foods (like canned corn) and processed foods (like tofu or peanut butter) still require Passover
certification because chametz may be introduced, even if not listed in the ingredients. The good news is that since most
Israelis eat Kitniyot on Passover, an increasing number of imported kosher-certified products are now showing up on our
shores. Also, since kitniyot are not chametz, even if you do not choose to follow this ruling, you may eat without hesitation
in the home of someone who does.

PASSOVER RECIPES
Cranberry Walnut Salmon on a Bed of Spinach
INGREDIENTS
Salmon:
Topping:
For Spinach:
Gefen Canola Oil Cooking Spray
1/2 cup walnuts, coarsely chopped
2 tablespoons olive oil
8 (6-ounce) pieces salmon filet
1 tablespoon olive oil
4 cloves garlic
1/2 teaspoon kosher salt
1 small shallot, finely chopped
8 (6-ounce) bags fresh baby
1 tablespoon paprika
1/2 cup freshly squeezed orange juice
spinach,rinsed and not dried
2 teaspoons ground cumin
1/4 cup honey
2 teaspoons lemon zest
1/2 teaspoon ground cinnamon
1/2 cup dried cranberries
1 tablespoon kosher salt
Pinch ground nutmeg
1/8 teaspoon cayenne pepper
3/4 teaspoon freshly ground black
pepper
DIRECTIONS
Preheat oven to 375° F. Lightly spray a jelly-roll pan with cooking spray.
Salmon: 1. In a small bowl, mix together salt, paprika, cumin,cinnamon, and nutmeg. Rub spice mixture on each piece of
salmon. 2. Place filets on prepared pan. Bake 15-20 minutes or until salmon is opaque and flakes easily with a fork.
Topping: 1. Toast nuts in a small saucepan over medium heat for 5 minutes, stirring continually until lightly brown and
fragrant. Remove from pan and set aside. 2. Heat oil in a small saucepan over medium heat. Add shallots and cook for 1
minute. Reduce heat to low. 3. Add orange juice and honey. Cook about 10 minutes. 4. Add cranberries and cayenne pepper.
Stir until combined. Remove from heat, add nuts and pour over salmon.
Spinach: 1. Heat oil in a very large sauté pan over low heat. Add garlic and cook until fragrant, less than 1 minute.
2. Add spinach to the pan. With tongs, toss spinach around as it wilts. Add lemon zest, salt, and pepper. Toss well.
To serve, evenly distribute spinach among 8 dinner plates. Top each with 1 salmon filet. Spoon topping over all.

Stacked Eggplant Rounds
INGREDIENTS

1/4 teaspoon freshly ground pepper
8 large basil leaves
2 eggplants, unpeeled, sliced into 1/2
1 (8 ounce) container feta cheese,
6 on-the-vine tomatoes, seeded and
inch rounds
crumbled
chopped or 1 (16 ounce) can chopped
Kosher salt
1 green pepper, seeds and ribs
tomatoes, drained
1/4 cup olive oil
removed, finely chopped
DIRECTIONS
1. Preheat oven to 425°F. Lightly spray jelly-roll pan with cooking spray. 2. Place eggplant slices on paper towels and sprinkle
lightly with salt. Let sit for about 5 minutes. Pat dry with more paper towels. 3. Lay the eggplant rounds in a single layer on
a prepared pan. Brush with olive oil and season with pepper. Roast for 15 minutes; turn over and brush with oil. Continue
roasting for 10 minutes more. 4. While eggplant is roasting, combine feta, tomatoes, and peppers in a medium bowl. Set
aside. 5. Stack basil leaves, roll them up like a cigar, and slice them into thin strips (a chiffonade). 6. Place one slice eggplany
on a serving platter. Spoon 1 - 2 tabelspoons feta mixture on top. Repeat layers. Finish with a few shreds basil. Repeat with
remaining ingredients.

INGREDIENTS
2 cups + 2 tablespoons confectioners’ sugar
1 1/3 cups almond flour
1/4 cup cocoa powder (Schmerlings 70%)
1/2 cup egg whites, at room temp.
Chocolate Macaroons
DIRECTIONS
1. Preheat oven to 425°F. 2. Line a baking sheet with parchment paper.
Stack another baking sheet under the lined one for more insulation (this
keeps the bottom of the macaroons from over browning).
3. Fit a pastry bag with a ½ inch plain tip. 4. Sift the almond powder with the confectioners’ sugar and cocoa powder and set
aside. 5. In the bowl of a stand mixer fitted with a whisk attachment, whip the egg whites until they are firm but still glossy.
Do not over whip. 6. Fold the dry ingredients gently into the whites in three additions. 7. Transfer the batter to a pastry bag.
“Glue” the parchment paper down on each corner with a small amount of batter. This will prevent the parchment paper
from blowing onto the macaroons and sticking to them. 8. Pipe the batter into 1-inch rounds. Before baking the macaroons,
rap the baking sheets sharply against the counter. This will remove the air from the cookies and keep them from puffing up
too much. 9. Place the macaroons into the preheated oven. Immediately turn down the oven to 350⁰F. Bake for 10 minutes
or until the macaroons are firm to the touch. 10. Remove the bottom baking sheet and place the sheet with the macaroons
on a cooling rack. 11. Turn the oven back up to 425⁰F before inserting an additional sheet of macaroons. 12. When the
macaroons are cool enough to handle, remove them from the baking sheet and transfer them to the cooling rack.

Inspired by podcasts connecting real-life stories to different Jewish values, our sixth graders are
excited to undertake a unique project - creating their very own podcast episode!
The process began with students learning about and then putting to practice the elements
of storytelling, and then continued with an in depth study of the Four Sons, a prominent part
of the Passover haggadah. Their ultimate goal is to retell their own version of the Four Sons,
encompassing all that they learned along the way.
