appreciate the efforts Master Caelin, Her Ladyship Elspeth, and Her Pyro for putting together
the tavern. Thank you to Lady Diana, Lady Aliz, and Lady Janie for running the travelers fare
on Friday night.
While there are many others who helped, and I do not remember them all, please know I am
happy with the work done to make Defender a success. However, I recall that there was a problem in getting people to volunteer for gate. It is a small time commitment (a couple of hours),
and you get a chance to see your friends who have travelled far, before anyone else on site.
Please volunteer to sit gate, and share the work with your friends.

The weekend following Crown Tournament, Elfsea is hosting the King’s Round Table. Round
Table nearly runs itself, but a small number of volunteers is needed for a little bit of setup and
tear down. Please contact Don Sebastian to help with Round Table.
I thank Her Ladyship Elspeth for all of her hardwork during her tenure as Seneschal. It is never
easy stepping up to such a large task with new Landed Nobility. And, I look forward to working
with Don Sebastian over the coming years as the new Seneschal of Elfsea.

Greetings to the Grand Barony of Elfsea;
As your new Seneschal I would like to start off by saying thank you to their
Excellencies for giving me this opportunity to serve our Barony. Next is a
truly well deserved thank you to HL Elspeth de Stervlen for her service to
this Barony as the outgoing Baronial Seneschal. Our thanks go out to Lord
Franklin for his outstanding work as the Event Steward for Elfsea Defender 2013. Thanks also go out to everyone who stepped-up and made
this event possible. Without volunteers we cannot do the awesome things
that we do. The event was a great success and a good time was had by all.
Coronation is 27 April 2013 and HL Elspeth assures me all is well in hand.
Come on out and support the Crown and your Barony and have a fun
time. We also have Kings Roundtable coming up in July and Elfsea Baronial College in August. If you can be of help please let us know, the more
the merrier.
We still have several Officers positions available; Hospitaler, Archery Marshal, Rapier Marshal and Herald. If you have questions about these offices
please get in touch with the current officers, they will be glad to explain
what the office entails. In the case of the Archery Marshal's position, come
see me.
On a final note for this month, I am here to serve this Barony and the fine
members of same. I will try to always be available to everyone if there is a
need. Please come talk to me about whatever issues or challenges you may
see in our Barony. If you have an answer or a solution for same said issue
or challenge please share that with me as well. I welcome your input.

Our equipment is showing some wear. Currently both of the large pavillions need ridge poles and wind lines, two more poles are needed for the
gate pavillion and we have a burst shower hose.
We have more directional signage now thank you to Sir Tomas, HL Elspeth, and Lord Edwin for helping out with that. Our lovely A & S minister
has agreed to see about using some of the hospitaler's fabric for some
XL tunics to loan.
Coronation is this weekend and Master Cailin will be maning the gate,
please help him out with that.

Greetings unto the Fair Barony of Elfsea!
As I announced last month, I will be stepping down on May 1st. I
expect that by the time this Tidings reaches the populace, I will no
longer be your Herald.
I would like to thank the Barony for their kindness and support, for
welcoming me with open arms when I arrived from the Middle as a
brand-new Herald that knew nothing about Ansteorra, and especially
for their patience and understanding when I was hit with periodic
attacks of Real Life. It was truly a pleasure to serve you.
I hope that you will welcome my successor in the same manner as
you did me, and be understanding as he gets up-to-speed. I will do
my best to make the process as smooth as possible. If you have concerns about an ongoing consult during the transition period, please
contact me to discuss it.

Well defender is behind us and my bruises say I had a good time. Hopefully
you are ready for some practice to help increase those skills. I know I need
more help in that area. Hopefully it wont be raining every Wednesday this
month so we can have a good practice. Just as a reminder I only cancel practice
if its raining or the park is a swamp.

Scribal Guild Report
"Greetings Elfsea.
The members of the Elfsea Scribal Guild did a fantastic job on the Defender Champion Scrolls. I want to
thank Karen Brown, Inga, Lady Elizabeth du Salisbury, Don Sabastian, and Lady Thora Olafsdottier for
their hard work. I want to especially thank Mistress
Druinne for taking the time to create and callig the
scrolls and Lady Thora for such amazing white work
(she did all of it!!!!!).
Now that the event is over and there are no other
pending jobs for the guild, I am stepping away from
heading the group due to modern world issues. If you
are interested in being the contact person for The Elfsea Scribal guild, please contact Baron Alejandro.

Aaliz’s Kitchen – a modern cook’s journey into Medieval Cookery
Spynoches Yfryed (Fried Spinach)
Original Recipe

Take spynoches & perboyle hem
In seeþyng water. take hem up &
presse out þe water & hem in two,
frye hem in oyle clene, & do þer to
poudre douce, & serue thyt forth.

Take spinach & parboil them in
seething (boiling) water, take
them up and press out the water
and cut in to, fry them in clean
oil & do there to powder douce, &
serve this forth.
Fried Spinach – by Aaliz du Lac
Ingredients:
Fresh spinach (I used 1 package of fresh spinach)
1Tbs. Olive oil
1 tsp. of Powder douce (or to taste)
Wash fresh spinach then parboil in water. Drain the water from the spinach then pat dry. Cut up the spinach to a preferred size. Heat some olive oil in a
frying pan then add the cut spinach. Cook till the spinach is tender. Then
transfer spinach to a serving dish & sprinkle on the Powder douce to taste and
serve.
NOTES:
The amount of spinach depends on how many servings you want. Remember what looks like a lot of fresh spinach will reduce quite a lot when cooked.
Powder Douce – or sweet powder
This is a spice mixture that is a combination of sweet spices. Most of the recipes
I read had varying combinations and amounts of these spices: cinnamon, ginger, nutmeg, cloves, galingale cardamom, mace, grains of paradise, and saffron.
Most of the recipes seemed to favor 1 – 3 parts of cinnamon, ginger, and rock
sugar. Then ½ or 1 part for the other spices selected. It appears that the combination of spices varied according to the cooks taste or spices on hand. Powder
Douce would be mixed up ahead of time and stored until needed.

My recipe for Powder Douce
3 parts cinnamon
2 parts each of ginger and sugar
1part each of nutmeg and ground cloves
½ part of grains of paradise (I substituted black pepper)
Mix the spices together and store in an air tight container.
Grains of Paradise were a period substitute for black pepper, which was expensive in medieval times.
A combination of black pepper, cardamom and ginger can be used if you do not
have Grains of Paradise.
