It is produced from sugarcane juice and molasses, and normally has a short distillation period. Bacardi Superior (Puerto Rico) 40% 85 Unlike other various rums which are aged in charred oak casks, white rum is simply aged in plain oak casks or stainless steel tanks, so it remains clear. White rum is often the favoured choice of rum for cocktails and other mixed drinks. Development of fermented drinks produced from sugarcane juice is believed to have first occurred either in ancient India or China, and spread from there. An example of such an early drink is “brum”. Produced by the Malay people, brum dates back thousands of years. Marco Polo also recorded a 14th-century account of a “very good wine of sugar” DARK AND AGED RUM Aged rums are usually medium-bodied which gain both a dark colour and richer flavour from the process of ageing done in wooden oak barrels. Since they are slightly more distinct, aromatic and flavourful than clear rums, they often add unique tastes to cocktails compared to that of their clear counterpart or just to enjoy neat. 6 7 Rum fact can e p The f lant i atio rst dis pro tilla n Pl s d alco uct o antatio of the tion o fr Ca n hol. f the sug slave ribbe um to an ar r s fi cen in ok pl La efin rst t disc the 1 ace o ing firs rated ter, d n 7 pro is t o ces vered th cen the s Tra true r the alc tillatio uga ditio s tur u n o , m m h can o ol a Bar y o rs nd f thes be lasses . bad n sugg . e ferm rem os est , a s ru ove lcoh ent a byd im olic mf ed into irst by-p pur orig ities rod inat , pr ucts ed odu on cing conthe the isla nd of DARK AND AGED RUM Appleton Appleton Appleton Appleton Estate Estate Estate Estate Special 40% H 95 V.X 40% H 110 12Yo 40% 120 21Yo 43% 400 Angostura3Yo (Trinidad & Tobago) 37.5% Angostura5Yo 40% Angostura 7Yo 40% Angostura 1919 8Yo 40% Angostura 1824 12Yo 40% Angostura Single Barrel 40% 95 100 110 120 150 170 Bacardi 8Yo (Puerto Rico) 40% Bacardi Black 40% 100 100 Black Well (Jamaica) 40% 120 Brugal Añejo (Dominican Republic) 38% H 120 Brugal Extra Viejo 38% H 130 Cavalier (Antigua) 40% H 120 Chairman Reserve Regular (St Lucia) 40% Chairman Reserve “The Forgotten Cask” 40% 95 140 Cruzan 5Yo (St Croix, Virgin Island) 40% H 95 Diplomático Añejo (Venezuela) 40% Diplomático Reserva 40% Diplomático Reserva Exclusiva 40% 8 H Available only at Honi Honi Prices are in Hong Kong Dollars and subject to 10% service charge Our pouring standard is 50ml 120 140 160 9 Rum fact c, each island or produ Within the Caribbean st mo the e style. As some of the privateers became pirates and buccaneers. The association of rum with the Royal Navy began in 1655, when the British fleet captured the island of Jamaica. With the availability of domestically produced rum, the British changed the daily ration of liquor given to seamen from French brandy to rum. While the ration was originally given neat, or mixed with lime juice, the practice of watering down the rum began around 1740. To help minimize the effect of the alcohol on his sailors, Admiral Edward Vernon had the rum ration watered producing a mixture that became known as grog. The Royal Navy continued to give its sailors a daily rum ration, known as a “tot,” until the practice was abolished after July 31, 1970” Ron Zacapa 23 (Guatemala) 40% Ron Zacapa XO 40% Santa Teresa 1976 (Venezuela) 40% St Nicholas Abbey 10Yo (Barbados) 40% St Nicholas Abbey 15Yo Rare Single Cask 40% H 140 200 150 200 280 Wood’s 100 Dark Overproof (Guyana) 57% 120 d without be enjoye to d e n ig s iasts use are de m enthus m rums Rum Fact ru ted rums a e c ti m o is s h p miu so ough Many pre h or The more in a cocktail, alth libations. d otc in e c ix s ts m lt n a ie g d m in be single m ingre e iu n fi m bels often a re la p ve ht ser ks. It also possesses a far greater flavour than white rum or even gold rum, likely with a sweeter taste. It is regularly flavoured with caramel, spices, molasses, vanilla and other subtle flavourings and most dark rums are distinguishable. Overproof Rums are molasses rum but with a higher alcohol content, usally used in the kitchen or to flame cocktails, not to drink as a shot. 16 Rum fact Following his victory at the Battle of Trafalgar, Horatio Nelson's body was preserved in a cask of rum to allow transport back to England. Upon arrival, however, the cask was opened and found to be empty of rum. The pickled body was removed and, upon inspection, it was discovered that the sailors had drilled a hole in the bottom” 17 SPICED RUM Spiced rums emphasize the infusion of spices and other natural flavours such as vanilla, nutmeg, ginger and lime. The name of the spirit derives from its historical association with an area known as Old Bourbon, around what is now Bourbon County, Kentucky (which, in turn, was named after the French House of Bourbon royal family). It has been produced since the 18th century. While it may be made anywhere in the United States, it is strongly associated with the American South in general, and Kentucky in particular. 32 Basil Hayden’s 8Yo 40% Booker’s 6Yo 64.6% H Buffalo Trace 45% H 160 220 120 Elijah Craig 18Yo 47% H 180 Eagle Rare 10Yo 45% H 140 Knob Creek 9Yo 50% 130 Makers Mark 40% 120 Michter’s Michter’s Michter’s Michter’s Michter’s Michter’s Bourbon 45.7% 110 American Whiskey 41.7% 110 Straight Rye 42.4% 110 Sour Mash 43% 110 H 10Yo Bourbon 45.7% 700 25Yo Straight Rye 58.6% H 1000 H Available only at Honi Honi Prices are in Hong Kong Dollars and subject to 10% service charge Our pouring standard is 50ml 33 SCOTCH WHISKY Scotch whisky is malt whisky or grain whisky made in Scotland.
