BANANA BREAD BANANA BREAD Ingredients (Makes 13) (1) Ripe bananas (1) Caster sugar (1) Eggs (1) Canola oil (2) Weston Milling Victory or Maximus Flour (2) Baking powder (2) Salt Disperse Milk (Litres) Bicarbonate soda Method Weight(kg) % 2.100 2.100 1.000 100 100 48 2.100 0.030 0.010 100 1.4 0.5 1.100 0.060 52 2.9 1 Mix group (1) together until bananas are well mashed. 2 Sieve Group (2) then add to Group (1). Mix for 2 minutes. 3 Disperse bicarbonate soda into milk and add to mix. 4 Mix for 1 minute on speed 1, then mix for 2 minutes on speed 2. 5 Scale at 450g (Bar Cake Foils) 6 B ake at 185˚C for approximately 1 hour. 7 Walnuts can be added to the above recipe at 350-450g in Group (1).
