Whilst remaining vigilant on the excellence of its wines produced from low yielding vines, we
propose a wide range of dry and natural sweet wine, from Cazes estate, which extends over
200 hectares, entirely converted to organic and bio-dynamic culture, but also from fabulous

NATURAL SWEET WINES
90% of French production of Natural Sweet Wines comes from the Roussillon region.
These wines are made by stopping the fermentation halfway through. This is done by adding wine based
alcohol which kills the yeast. The result is that a large proportion of the grape sugars remain, giving the
wines their sweetness. Cazes’ skill in maturing Natural Sweet Wines is unmatched and renowned all
around the world.
Probably best known as aperitifs, these wines truly come into their own with desserts. The secret is to
match the color of the wine with the color of your dessert!

The creme of the lineup, the 1932 VDN Rivesaltes Old Collection
Ambre (100% Grenache Blanc aged 30 years in cask) is a
monumental effort that makes your eyes roll back in your head and
has you wondering why you don’t drink more of these. A borderline
perfect dessert wine, it thrills on all accounts with fabulous aromas
and flavors (toffee, cigar, cedar, sweet spice), full-bodied depth and
richness, and yet no weight or heaviness whatsoever. It has serious
acidity (and sugar) if you hunt for it, but everything is perfectly
balanced, and it hangs on the palate until you either take another sip
or do something to physically remove it. Find it if you can.

LE CANON DU Maréchal
In 1927 the Cazes family bought Mas Joffre in Rivesaltes, the former estate of Field Marshal Joffre, war hero and
native of northern Catalonia. In his honour, « Le Canon du Maréchal » was created, a wine made from grapes
from the vineyard that belonged to the famous Field Marshal.
Fruity, smooth and crisp wines that can be easily enjoyed throughout almost any meal. Flagship of Cazes, the major
“Canon du Maréchal” are available in red, rosé, white, 75cl, 50cl, BIB and Magnum … for the pleasure of all!

Since 1997, Cazes has been using bio-dynamic viticulture methods. Beyond the organic culture, natural
work without pesticides or insecticides, the bio-dynamic culture is a total approach which acts on the
true expression of the soil and the plant in their natural environment. With no artificial intervention,
the vines are more resistant, the grapes express truly the character of their terroir, and the wines show
more freshness, finesse and elegance.

"Le Credo" collects all the good faiths of CAZES: the work of the vineyard in accordance with nature, the
respect for the soil and the control of a know-how to create wines which truly express the character of
Roussillon's "terroirs".
Created in association with René Barbier, a famous Catalan wine maker, this wonderful wine comes from a
carefull parcel selection of our Syrah, Grenache and Mourvèdre grapes converted into Bio-dynamic culture,
and a skilled vinification. Aged 18 months in new French oak tuns, “Le Credo” offers a rich and generous
wine, underlined by mature tannins and a touch of oak. Production: 4 000 bottles.
Located in the Cove of Paulilles " Grand Site de France ", Les Clos de Paulilles, symbolic estate
between Collioure and Banyuls, whose quality of wines is recognized all over the world, extends over
90 hectares of valleys and schistus terraces among which 65 hectares planted in vines.
Its totally renewed cellar, its site of reception and its restaurant on the beach constitute a
magic place dedicated to Wine Tourism. With this recent acquisition, CAZES widens its
pallet of High-class Wines of Roussillon and thus pursues its historic quest to reveal and
glorify, thanks to an environment-friendly vine growing, all the authenticity and the
richness of the Roussillon “terroirs”.

In this complex wine, each grape variety brings its characteristics: Mourvèdre shows
elegance, Syrah brings some soft spicy notes and Grenache some roundness. Spices
and well-ripen fruit aromas are melted with iodine notes coming from the sea clouds
of Paulilles’ terroir.

Natural Sweet Wines are known to be excellent basis for vinegars. At Clos de
Paulilles, a small amount of Banyuls Rimage is thus “sacrificed” to be transformed
into vinegar, thanks to a specific transformation made by lactic bacterias. It gives
