The event, intended to be biennial, had its first edition in Sweden. Masi’s Costasera Amarone was the inspiration for artist Ernst Billgren, who reinterpreted the wine’s iconic label in a work of art specially created for us. We were in Stockholm for the unveiling of this work to the public for the first time. The picture was highly acclaimed and has been reproduced on a limited edition of Costasera wines from the 1998 vintage, which are now available on the Swedish market. “The idea behind this project is to continue to follow the theme of the marriage of wine with the world of culture. For more than thirty years now, Masi has expressed its own enthusiasm for art through its Foundation, promoting cultural events and creations which enrich the territory masinews november 2013 of the Venetian regions and help express its values to the world. Campolongo di Torbe 2007, a cru Amarone in the unique Cantina Privata Boscaini wine collection range, has been given the maximum Tre Bicchieri award in Gambero Rosso’s masinews november 2013 Riserva di Costasera 2008 Vini d’Italia and the Super Tre Stelle award by I Vini di Veronelli in the Guida Oro. The prestigious Duemila Vini - Ais Bibenda, the publication for sommeliers, on the other hand, has given Cinque Grappoli to Riserva di Costasera 2008, a special cuvée of Masi’s flagship Amarone which is given a long period of Appassimento Campolongo di Torbe 2007 in the cold winter months, aged for three years in selected wooden casks, and made with a percentage of the unusual Oseleta grape. The best bunches of the various native grape varieties of the Valpolicella (Corvina, Rondinella, Molinara, Oseleta) and Venetian (Verduzzo and Refosco) regions have now all been arranged on bamboo racks to dry during the winter months, thereby concentrating sugars, aromas and tannins. Currently, the Appassimento process is very stable, given the recent relative humidity and the temperature variations of between 10 and 18°C. To date, average weight loss has been 5-10% for all varieties excluding Refosco, which is notoriously quicker with a current weight loss of 10-15%. masinews november 2013 Sugar concentration in the must of the various varietals is medium-to-high. Total acidity values, colour and pH readings are good. Appassimento is a traditional winemaking technique, used in the Venetian regions since the time of the Ancient Romans. Masi and its technicians have applied the technique in an innovative fashion for the last fifty years. The term Appaxximento, found on bottles of Masi wine made using semi-dried grapes, certifies Masi’s expertise in Appassimento in the XXI century Masi Technical Group, 05/11/2013 page 3/4 11/2013 news – november 2013 Fillet of Beef with Cloves paired with Campolongo di Torbe Amarone Masi Ingredients for 6 people: Preparation: • • • • • • • • • • • • • Trim any fat or sinew from the fillet, season with salt and pepper, and dust very lightly with flour. Brown the meat in a pan with olive oil. When sealed all over add the brandy, let it evaporate and add seasonings and vegetables chopped very finely. Cook for about 20 minutes and pour in the red wine. Leave to simmer for two hours before taking meat out. Add remaining flour to the sauce and pass through a ricer before adding balsamic vinegar, cloves and a teaspoon of sugar. Cut beef into 2cm thick slices and heat through with the sauce.
