NOPALES AND PRICKLY PEARS
The nopal is one of the essential ingredients of the
cuisine of Zacatecas; its thick leaves are eaten roasted, pickled, in salads, stuffed, cooked as a side dish
or included in stews and soups. From the nopal, the
prickly pears are also eaten. There are varieties as cardona, white or fafayuca, duraznillo and xoconostle,
among others. The fruits are eaten skinned and raw
or prepared into fresh water, wine, colonche, sorbets
and cheese. With the xoconostle, which are fruits with
a tart flavor, moles and sauces are prepared and included in different broths.
PINE NUTS
These are the seeds of certain pines, and Zacatecas
is the prime producer of Mexico. There are white and
pink pine nuts, these last, being the most appreciated
and used widely in Mexican sweets as well as a main
ingredient of salty dishes as moles or stuffing.
GUACHALES
Guachales are cooked and dehydrated corncobs
made through an ancient technique of food conservation in Mexico: sun drying, which allows them to
keep for a very long time. To use them, the kernels
are removed and included in broths or other moist
dishes, like guachales with wild potatoes and tomato
sauce, so that they rehydrate and can be eaten.
TYPICAL DISHES AND BEVERAGES
WEDDING ASADO
Made of fried pork meat and bathed in a thick sauce
of red chili pepper, spices, saffron and orange peels.
This dish, usually served in parties, is eaten with tortillas and mashed beans with garlic and cumin.
SOFT TACOS
These are made of corn tortillas soaked in tomato
sauce, fried and stuffed with fresh cheese and onion.
At last, they are rolled and adorned with lettuce and
served with a Serrano chili pepper salsa and fried carrot and potato slices.
CHAMORRO
It is a tradition to prepare in the oven this peace of
the pork’s leg, seasoned with a mirasol and guajillo
chili pepper salsa, tomatoes garlic, spices and apple
vinegar
MENUDO WITH COLORADO CORN
It is a combination of menudo and pozole, made with
pozole corn cooked with guajillo chili pepper to give
it color, beef chambarete and stomach. It is served in
bowls and seasoned with onion, lemon grounded
tree chili pepper and oregano.

FIGADETE
Prepared with pressed yesca or chicharron, cooked
potatoes, cabbage and güero chili peppers, all marinated in an oregano vinagrette. It is commonly eaten
in tortas of bolillo bread.
CURD GORDITAS
These gorditas are prepared with curded corn masa,
sugar and yeast that is then cooked in a firewood
oven on top of oak leaves to give them a characteristic scent.
PRICKLY PEAR CHEESE
Traditional sweet prepared with cardona prickly pear
juice added with nuts, pine nuts, peanuts or almonds
and left to thicken into tiny balls of brown color that
resemble cheese.
COLONCHE
It is an alcoholic and sparkly bright red beverage of
sweet flavor, prepared with fermented cardona prickly pear juice.
LENT WATER
This is a peculiar beverage of this region, prepared for
the lent celebrations. It is a fresh water of lemon with
sliced lettuce, orange segments and small pieces of
banana, melon, papaya and beetroot. This final ingredient gives de beverage a purple tone, which is why it
is also called “Dolores water”. It is served cold and with
a spoon to eat the fruit.

ACTIVITIES OF THE ROUTE
Welcome to Miner’s Seasoning Gastronomic Route. This
route starts in Zacatecas, visiting the beautiful Historic
Center of pink quarry stone buildings and tasting regional dishes in the city’s restaurants.
You cannot miss the Mina El Edén Museum or the view
of the city from the cable car and you must visit its numerous museums. The tours of the unique Gonzalez Ortega
Market will let you try exquisite wines of the state, as well
as mezcal from the Huitzila region and the priceless traditional sweets.
You must also visit the Arroyo de la Plata Market, the
perfect place to eat an exquisite birria or gorditas stuffed
with delicious stews.
The tour continues in the Platero Center of Zacatecas,
where you will witness the transformation of silver into
object and accessories by the skillful hands of fine craftsmen. Later on, we will stop at Las Quince Letras Cantina,
to enjoy the best and most traditional environment with
exotic beverage to accompany it
The route takes us to Calera, where the Grupo Modelo
Brewery is located. Here, we can get to know the production process as well as the instruments used to make
beer. At night, it is highly recommended to walk the
main streets and the alleys of Zacatecas and then enjoy
good music inside the Mina Club, a unique place adapted inside a mine.

dictatorship, to contain the commercial activities of the city, it is still today, the main
traditional market of the capital of the state,
not just because of its quarry stone building

GUAVA
Mexican native fruit with different varieties like peruleras, white, yellow, pink and even black. Aguascalientes
produces guava in great extensions, which is why it is
widely used in the state traditional cuisine. With the
guava, beverages like juice, liquors, fresh water and
atoles are prepared, as well as sweets and desserts as
jellies, jams, guayabate, white sweet potato, guavas
with syrup and guava roll. It is even an ingredient in
salty preparations as salads, meats and roasts with
fruits, Aguascalientes chili peppers and cold meat.
GRAPES
In the many vineyards of Aguascalientes, different
kinds of grapes grow. This are mainly dedicated to
wine production however, this fruit is also widely
used in the local gastronomy to make beverages, dishes and desserts. Some preparations include juices,
sodas, salads, meat sauce, stews with fruits, raisins
and grapes in liquor.
CHILI PEPPERS
Among the diversity of chili peppers used in the
State, there are two very distinctive ones, the puya
and the yellow ball. The first one, is dry, thin, long, of
red color and spicy flavor and used to make tamales,
pozoles, condoches and salsas; while the second, is
a fresh chili pepper, usually pickled in barley vine-
gar with piloncillo, herbs and lime peels. Whit these
prepared chili peppers, enchiladas, meats, roasts and
other dishes, are accompanied.
BRAVA SALSA
A spicy salsa traditionally used in the region but that
has gained popularity in the whole country and is
now served as a dressing in many snacks and sold
under different name brands. In Aguascalientes is
used in enchiladas, cuerito tostadas, fried tacos, beefs,
roasts, chiquiadas and esmeriles. It is a salsa prepared
with puyas chili peppers, garlic, spices and vinegar.

AGUASCALIENTES CHILI PEPPERS
Its main ingredient is an ancho chili pepper stuffed
with meat picadillo with pine nuts, almonds, olives,
raisins and acitrón. The chili pepper is bathed with a
pecan nut sauce with guava, spices, nutmeg, and garnished with pomegranate.
CUERITOS TOSTADAS
These are corn tostadas, spread with beans and topped with pork cueritos pickled in vinegar. They are
served with lettuce, cheese, cream, avocado, red salsa
and brava salsa.

COLD MEAT
Is a cold dish with different meats, cured meat, vegetables and fruits, like ham, chorizo, tongue, beef steak,
legs, back, pork cueritos, tomato, lettuce, jicama, guava, orange. It is served in thin slices addressed with a
fine herbs vinegar and cured onion.
BIRRIA
It is prepared with mutton meat cooked in a traditional oven and rolled in maguey leaves. It is served with
a tomato, tree chili pepper and spices sauce. This dish
is garnished with pumpkin seeds, onion and oregano
and eaten with corn tortillas.
AGUASCALIENTES MOLE
This is a sweet mole, prepared with mulato, ancho,
guajillo and puya chili peppers, green tomato, chocolate, apple, fresh banana, spices, sour orange peel
and pork meat.
POOR PEOPLE’S MOLE
It is prepared with cheaper ingredients than traditional mole. It uses cecina and nopales, cooked in a
green tomato salsa, with puya chili pepper, cumin,

We leave to Aguascalientes, making a stop in the
Hacienda de Letras Vineyard in Arteaga Pavillion to
enjoy a wine taste and get to know more of the wines
produced in this region.
When we finally arrive to Aguascalientes, we can walk
the famous and crowded Nieto Street where we will
find greatly appreciated textiles. Later, we walk the J.
Pani walkway and we can visit the assorted restaurants around it, that temp us with indescribable aromas and flavors of the regional cuisine.

you to submerge yourself into state gastronomy
and to participate in the preparation of the famous
Aguascalientes chili pepper in its facilities.
Another great place to visit is La Saturnina, famous
restaurant because of its traditional cuisine and where you will be able to prepare pacholas with the original technique using a metate.
Afterwards, we highly suggest visiting the famous
Guava House to taste sweets and other products
made from this delicious regional fruit or you can get
in only a few minutes to Calvillo, the main producer
of guava of the country and visit the facilities of the

PRODUCTS FORM THE DESERT
Great part of the territory in San Luis Potosi is desert,
a reason why its gastronomy includes delicious plants
like cactaceae to prepare several dishes.
Biznaga (a kind of barrel cactus) is a round cactaceae of
big size, whose pulp is used to prepare acitrón sweet,
to cook stews, or in desserts. Its flower buds, called
cabuches, are cooked and served as vegetables or as
ingredients in salsas, pickled in brine, or in other stews.
And of course, there are the guamiches, which are the
fruits of the biznaga, used for fresh flavored waters, ice
cream, desserts, and jams. There is a very small type of
biznaga whose fruits are eaten as snacks, called chilitos
(small chili peppers) for their shape and color.
Nopales are another kind of cactus, whose pencas (stalks) are eaten tender, either grilled, cooked, or in soups,
salads, salsas and other stews. When the pencas are
“recias” (big and mature), their insides are cooked in a
preparation called “nopales’ hearts”. The prickly pears,
or the fruits from nopales, are also eaten as snacks, or
used to prepare fresh flavored water, ice cream, prickly
pear cheese, melcocha and syrups. Xoconostles are
a sort of prickly pears of sour flavor, used to prepare
broths, moles and sauces, to accompany mezcal, or to
produce sweets.
From the bilberry cactus (Image 53), we mainly eat its
pink colored and sweet flavored fruits, preparing jams,
fresh flavored water, ice cream, popsicles and raisins
with them. The flowers are also edible, fried as chips or
included in soups or stews.
Chochas are the flowers from the yucca, which are
cooked with eggs to stuff bocoles, or served in salsas.
KID
It is the baby goat that has been fed solely with milk
and is no older than 6 months of age. It is cooked in
different ways; grilled, roasted, in beer, in red chili pepper, in sour orange, in mustard, in its own juices and in
its own blood.

BOCOLES
These are small corn gorditas with lard, which inflate
when cooked making it easier to cut them open and
stuff them with some kind of stew, like beans, chicharrón, nopales, or chochas with eggs.

These are freshly made corn tortillas, which are soaked
in a sesame seed and piquín chili pepper sauce, decorated with grated fresh cheese.

These are small tortillas made with corn masa mixed
with ancho chili pepper, which gives them a particular
orange color. Still raw, they are stuffed with cheese and
red salsa to then fold them, seal them and put them
to cook on a comal. They are served decorated with
grated cheese, onions, cream and avocado.
FIAMBRE POTOSINO
This cold dish is prepared with pork cheese, beef tongue, pork loin, fresh cheese, lettuce and onions, which
are all served in thin slices, seasoned with a vinaigrette
and cured güero chili peppers.
ZACAHUIL
This is a big tamale that can feed up to a hundred or
more people. It is prepared with mashed corn masa,
chino and piquín chili peppers, one pig’s meat, and
wrapped in banana and papatla leaves, cooking it all
inside a conventional oven for several hours. The dish
is served in individual portions with shredded meat on
top, over a piece of banana leaf.
MEAD
It is the sweet sap of transparent color obtained every
day from the magueys pulqueros, which should be
drunk the same day it was collected as it will quickly
ferment and transform into pulque. This beverage is
very common in Real de Catorce.
MEZCAL
This is a liquor obtained from the agave, accredited
with Designation of Origin, and made from the pines
or hearts of the agavero maguey, which are roasted
in ground ovens to then mash them and leave them
to ferment. The fermented juice is distilled and so, the
mezcal is obtained. This beverage is consumed on its
own in one of its three variants (white, rested or aged),
accompanied with salt and xoconostles.
JOBITO
This beverage is handcrafted from jobos (creole plums)
mashed in sugarcane liquor with sugar, and served
really cold as a digestive after meals.

Starting a new day, we will continue our tour towards
the State of San Luis Potosí. We must definitely visit
the Plaza de Armas (Main Square) of the capital city,
La Virreina Restaurant where you will be the chef of
your own salad with native ingredients, the Costanzo
shops and parlors that offer sweets and chocolates,
Las Sevillanas, and La Casa del Artesano (The House
of the Artisan).
We will continue our visit across the high plateau in
Charcas, with a tour around the Laguna Seca mezcal distillery, which offers a tasting of its re-known
mezcal, and if it is the right season, you can eat escamoles (ant eggs) in one of the establishments of
the area. We will continue to the Pueblo Mágico of
Real de Catorce, a mining town where you can see

LAGUNA SECA MEZCAL DISTILLERY
Mezcal is produced in this ancient hacienda,
using a totally organic process based in the
fermentation and ditillation of wild agave,
according to the technique imported by the
Carmelites 400 years ago. The distillery invi-
tes you to witness in a guided walkthrough
the cooking, mashing, fermentation and distillation that give birth to this variety of mezcal, a product of the good agave harvests
that the extreme semi-desert weather of San
