On arrival, private transfer towards the Via Emilia, the historic road created by the Romans in the year 187 B.C. now considered the “Italian Food Route” for the unbelievable quantity of worldwide typical products that “born” in this part of Italy with final destination to Parma, the “little Capital of the Italian Food Valley”. It’s simply “the King of the Cheeses” and it’s still made like centuries ago. You’ll have the unforgettable experience to see the full production of it with, of course, a final tasting. To follow: the other great protagonist of the local and worldwide gastronomy: Prosciutto di Parma, considered unanimously one of the greatest ham of the world. The morning will end with a great tasting at a local producer of PDO “Lambrusco” and “Malvasia” wines. In the afternoon, once back to Parma and after a refresh at the hotel, city centre walking tour to discover the main attractions of this little and elegant city of art. Because only here its unique flavours can be obtained thanks to the noble moulds coming from the humidity of the Po. Visit to a unique XII century aging cellars where more than 5.000 pieces of Culatello rest. After that, be ready for an amazing hands-on cooking class about typical pasta helped by a Michelin starred kitchen staff!.. During the class, you’ll be able to taste the product of your work as appetizer before the final lunch including the whole cold cuts production of the farm. You’ll be able to visit the recently opened museum dedicated to Enzo Ferrari, built around and inside the house where he was born, with unique car exhibitions that changes every 6 months; Next, we’ll an ancient Acetaia where the flavorful “Aceto Balsamico Tradizionale di Modena” is produced. Tasting/lunch at the end of the visit. In the afternoon, once in Maranello: visit of the Ferrari Museum with time at disposal at the end. Continue on to Bologna, arrival late in the afternoon, check in at your selected accommodation. Welcome “Bolognese style” dinner tonight and overnight. Remainder of the day at leisure. Enjoy dinner on own and overnight (B, L) November 11th – Ravenna & Dozza: Full day excursion to Ravenna and Dozza: visit to the old town centre with focus on byzantine mosaics (Unesco world heritage: Basilica of Sant’Apollinare Nuovo, Basilica of San Vitale, Mausoleum of Galla Placidia) and visit to a mosaic studio/workshop. Typical lunch in a restaurant of the city centre. Transfer back to Bologna. Along the way stop on the hillside of Imola for the visit to the unique painted village of Dozza and its amazing castle that keeps, in its interiors, the Regional Enoteca, a sort of “bank” for the best regional wines. Tasting session/aperitif assisted by a professional sommelier. Back to the hotel late in the afternoon. Dinner on own and overnight. Ferrara is surrounded by ancient walls, that conserve the atmosphere of its rich past. It is home to cultural sites such as Este Castle, built in 1385 later a courtly residence; the Schifanoia Palace, the cathedral, the characteristic historical centre with its winding medieval streets… all the city centre is a UNESCO heritage… a guide will bring you into this beauty for the whole morning. For lunch you’ll taste the typical products of this part of the Region such as The "coppia", Ferrara's famous elaborately shaped and tasty bread (it boasts IGP certification of origin); “cappellacci”, pasta filled with pumpkin and parmesan cheese are very popular, as is the “pasticcio di maccheroni”, a true culmination of the court traditions; the “salama da sugo” is an unusual mixture of pork products. Finally, there's “pampepato”, a spicy cake covered in a layer of chocolate. Return to Bologna after lunch and free time for some shopping. “Arrivederci” dinner all together in a gastronomy “temple” of the city and overnight.
