 MONTECARDILLO Blackberry paths and cherry trees flank black Pallagrello lines, which give this intense and fruity red wine named after one of the younger members of Sclavia and after Mount Cardillo nearby. Alcoholic fermentation lasts 10 days and maceration on the skins continues for 15-­‐20 days at controlled temperature and exclusively with native yeast. The wine is then racked into French oak barrels, where it matures 12 months. After a light filtration, the wine is bottled and it ages in glass one month before being released to market. Organoleptic properties The colour is ruby red; intense and fruity smell with scents of underwood; dry full-­‐bodied taste, with a pleasent nuance of tannins. Notes Black Pallagrello is spread only in Caserta county, mainly in the areas of Castel Campagnano, Caiazzo, Castel di Sasso, Piedimonte and Alife. It is involved in the regional program of recovery and development of autochthonous grape varieties. *The label in the picture applies to wines produced from 2012 onwards.
