In many Eastern European
countries it is tradition
to eat a candle lit meal on
Christmas eve, signifying the
end of the pre-Christmas fast.
The meal consists of twelve
meat-free dishes, representing
the twelve Apostles. Fish
and grains are popular menu
choices but each country has
their own specialities. Poppy
milk, made by repeatedly
soaking and crushing poppy
seeds over several days is a
popular accompaniment.
Fish dishes tend to include
herring or
carp and
are often
