So what can you do with all these juicy fruits? Join Cooking Coach Connie Spiros as she creates some flavorful tomato-inspired dishes. Bring 1cup water, 2 cups sugar, honey, and lemon juice to a boil. Add cherries and return to a boil. Remove from heat and cool to room temperature. Puree until very smooth. Set aside. Combine 1cup sugar and 2/3 cup water in a small saucepan. Bring to a simmer over medium-high heat, stirring frequently until the sugar has dissolved completely. Remove from the heat. Add the mint and stir to combine. Let rest for 15 minutes. Strain the syrup into a small bowl and let cool. Pour cherry puree, a bit of mint syrup and club soda over ice, and serve! Makes approximately two quarts. Goat Cheese, Charred Corn and Summer Squash Pizza from Jess Pithie, Wine Assistant and “Just Picked” blog writer Ingredients 1 Top This! Pizza shell, or homemade pizza crust of your choice 1 small log goat cheese Juice from half a lemon 1 summer squash, thinly sliced (preferably on a mandoline) 1 cob charred corn 1/4 cup parmesan cheese Salt, pepper Fresh basil (optional) In a small bowl mash the goat cheese with the lemon juice to make it a bit more spreadable (add more juice or a small drizzle olive oil if it's particularly crumbly). Spread the cheese in a thin layer over your pizza shell or dough. Arrange summer squash slices in overlapping layers, top with scattered kernels of corn and the parmesan cheese. Salt and pepper the whole thing, adding crushed red peppers if you like to heat things up. Bake according to package directions; or, if you choose, cook on the grill.
