“View From My Window” by Pastor Everhart I was starring at the same old pound of ground turkey last week going through all my usual possibilities: burgers, meat balls, shepherd’s pie, meat loaf… All those thoughts seemed overdone so I asked the Lord for a new idea while I was out on my run. He reminded me how good that green bean casserole is, pointed me back to the ground turkey and a new kind of meat loaf was born. When I got home (after showering of course) I added a can of cream of mushroom soup, an egg, bread crumbs, garlic salt, French’s fried onions and a half a can of cut green beans (drained and sliced smaller) to my ground meat. Packing all that into a bread pan I topped it with more fried onions and some turkey gravy I always keep on hand for my shepherd’s pie. I baked it for an hour on Saturday at 350 degrees then wrapped it in foil, added a few tablespoons of water and put it in the slow cooker on low Sunday morning before I left for church. It turned out so good I just had to share it with you. If you need to know how much garlic salt or bread crumbs I’ll tell you what my mom always told us when teaching us how to cook, “You know, enough.” We rounded the meal off with mashed potatoes, mixed vegetables and pumpkin pie for dessert!
