Originating as a wild plant in India, the Chinese were the first to cultivate eggplant for consumption. The plant later spread to Europe and was originally grown purely for decorative purposes, due to its bitter, sour taste. Later, in the 18th century, new varieties of eggplant were developed, causing this vegetable to gain culinary appeal. Today, eggplant is a popular vegetable grown worldwide. Although available year round, eggplant peaks from July thru October, for flavor and affordability. A member of the nightshade family, which includes tomatoes, bell peppers and potatoes; eggplant grows on vines. While eggplant in the classic oval shape and dark purple color is the most popular variety; eggplant can be found in a variety of found in spherical to long and narrow shapes. Eggplant is a low fat, low calorie food. It is rich in vitamins and minerals and is a powerful source of flavonoids like chlorogenic acid and caffeic acid. Research has shown that these nutrients, along with a healthy well balanced diet, may help fight cancer and protect brain cells. When choosing eggplant, look for those that are smooth, shiny, firm and heavy for their size. The stem should be deep green in color and the skin should spring back when lightly squeezed. Avoid eggplant that contains soft spots, wrinkled skin, or discoloration. To store, fresh eggplant can be kept in a cool dry place for up to two days. For longer storage, place whole unwashed eggplant in the crisper drawer of the refrigerator for five to seven days. To freeze, blanch or steam sliced eggplant. Dry six to nine months. Eggplant is a meaty vegetable that sometimes tends to have a bitter flavor. Its sponge like texture absorbs marinades well and can be grilled, roasted, sautéed and even pickled. To prepare, wash and slice eggplant right before cooking, as the exposed flesh will begin to brown when exposed to the air. While the skin is edible, eggplant skin can sometimes be tough and may need peeling. Eggplant Parmesan is a classic Italian dish that is light and full of flavor. Served up with some steamed veggies, a side salad, or crusty bread, this dish is the perfect meatless meal. Gun stores in Colorado are seeing a huge increase in demand for firearms since last Friday’s massacre at a midnight movie in the city of Aurora, the Denver Post said on Tuesday. The first U.S. Roman Catholic church official ever to be convicted of covering up child abuse claims was sentenced on Tuesday to three to six years behind bars. A Philadelphia judge told Monsignor William Lynn, 61,that he had enabled “monsters in clerical garb to destroy the souls of children, to whom you turned a hard heart.” According to Utica College on Wednesday, one in six convicted sex of- fenders are using sophisticated techniques invented by identity thieves to avoid legally mandated registration requirements. The drought was not expected to affect prices for fruits and vegetables and most of these crops are irrigated. Sweetwater and Niota whether a “confession” last November by Jessica Kennedy Powers of Sweetwater was coerced and orchestrated by state and county law enforcement authorities. The woman, who now is referred to as Jessica Kennedy, has been charged with the first-degree murder of Miller, who was the chairman of the county’s election commission at the time of his death on July 17, 2010. His burned body was found in the trunk of his charred car on Sands Road. Kennedy has additionally been charged with robbery, arson, and abuse of a corpse. On Wednesday, before Special Judge Walter C. Kurtz, defense attorney John Eldridge of Knoxville argued that Kennedy had been intimidated into a confession, though witnesses that included Tennessee Bureau of Investigation agents and officers with the Monroe County Sheriff’s Department testified that Kennedy freely provided statements regarding how Miller died and what persons were present when he was shot on Creek Road. “But the story kept changing,” said Sheriff’s Captain Lieutenant Doug Brannon. “She recanted the story several times and changed who was there at the scene of the murder, but one thing was ever constant: she was always there.” In the seven hours the hearing encompassed, numerous individuals named aloud in court, individuals who may or may not have had a part in the homicide, but persons that Kennedy allegedly identified as participating in the murder of Miller. Two male suspects who were in jail in Monroe County when Kennedy was an inmate allegedly struck fear in the woman, one of which would issue threats when she was being moved about inside the facility. In a viewing of a videotape, one described by TBI Special Agent Barry Brakebill as “re-enactment” of the murder, Kennedy described how she watched Miller die by three shots as he bent over and looked inside his car trunk. “You should have seen the look in his eyes when I pulled the trigger,” one male was quoted as saying by Kennedy. As the hearing neared 5:30 p.m., Kurtz called a recess, saying the court would resume on Thursday. In the Friday issue of the BUZZ, the full story of Kennedy’s accounting of the Miller homicide will be printed. When you lose a friend or a family member it hurts and like a puzzle with a piece or pieces missing the picture will no longer be complete. And just like the picture, we have to go on with just the memories to fill in the blanks of what it was like before they left us. In less than two days Monroe County lost two great men. Donnie Davis, who was one of the best smallmouth fishermen I have ever known, passed away Sunday. He and Jeremy gave us the pleasure of seeing monster bags of smallmouth over the years. He always had a smile to share every time I talked to him. Tournaments won't be the same without him. People who were members of the churches where he pastored lost a good friend and spiritual leader along with us fishermen. My buddy, friend, and what ever else I needed him to be, Leonard Whitehead passed away on Monday. Leonard loved to fish, especially for crappie. He spent a lot of time with me at the Bait Shop. The whole time I knew him he battled with health problems, but he never complained. He always worried about others more than himself. He would always give you a hug and say "Love Ya" every time he had to leave. I'm not real good at expressing my feelings except when writing, but to both families of these two men my most heartfelt "I am sorry at your loss." To my family and friends, I'll borrow from Leonard and say "Love Ya," even though sometimes I don't seem to Gun Store & Training Center 442-7GUN(486) Call for upcoming Permit Classes and Advanced Training Classes Tuesday - Saturday 10 a.m. - 6 p.m. WWW.SOLUTIONSFORSELFDEFENSE.COM 4121 Highway 411, Madisonville know how to spit it out. In a four-and-a-halfhour hearing that pitted state prosecutor Paul Rush of the District Attorney General’s office against Kimberly Sue Ricker, 45, of Shaw Mountain Road and Wayne Clarence Jones, 41, same address, six witnesses on behalf of 79year-old Mary Shaw of Tellico Plains took the stand, including a University of Tennessee pathologist, nurses, an Etowah police detective, and family members. The defense did not call any witnesses. Judge Reed Dixon bound the case to criminal court as second-degree murder, knowing physical abuse, and criminal responsibility for another, dismissing aggravated assault. He set Ricker and Jones an appearance date in the big courtroom of September 17. The elderly lady had lost weight and was emaciated right before her death. She had been thrown from her wheel chair and them hurled back into her bed by her “caretakers.” Both Ricker and Jones remain in custody at the Monroe County jail. Sequoyah High School will be hosting a charity golf tournament at Kahite Golf Course in Vonore on Friday, August 25, to benefit the school’s new “Warrior’s Path,” which was created during the last year to honor past, present, and future veterans of the armed services. The event will get underway with a shotgun start at 9 a.m. And at this point, what’s needed are addi- tional four-man teams in addition to hole sponsors. (But especially four-man teams.)
