Don’t judge each day by the harvest you reap, but by the seeds that you plant. ~ Robert Louis Stevenson
Nature Cure Tip
What Is Nature Cure?
Dr. Toby Hallowitz, ND, MSOM, LAc
Nature cure, which
developed in 19th
century Europe,
was a prominent
system for treating diseases with
natural
agents
such as water, air,
diet, herbs and
sunshine. Nature
cure practitioners
turned to nature
for their therapies. For inspiration, they went
to field and forest rather than to the murky
atmosphere of the dissection and vivisection
rooms. They studied the whole and not only
the parts, causes as well as effects and symptoms.
The theory of nature cure defines health as
an adherence to the basic laws and energy
patterns of nature. Disease is viewed as a departure from these natural patterns. When we
live out of harmony with the laws of nature,
we get sick. Historically, the role of the doctor
was to first recognize these imbalances, then
restore order and healing to both the individual patient and to the larger community.
As a classically trained acupuncturist and
naturopathic doctor, I will be providing
monthly health tips that recommend ways in
which we can restore balance and allow for
the healing power of nature to unfold.
Dr. Hallowitz is Pilgrim’s
resident naturopath and
acupuncturist,
consulting in our Supplements
Department and taking
appointments in Pilgrim’s
Wellness Center. The Wellness Center is a group of
local wellness professionals
that see clients and patients in private appointment rooms inside Pilgrim’s Market. For more
information, call 208.676.0400. For more on

BUMBLE BAR: MAKING A DIFFERENCE, ONE BAR AT A TIME
In 1995, Liz Ward had a vision to create one great-tasting snack bar
combining two of her greatest passions: healthy food and sustainability. She came up with BumbleBar using simple whole foods, organic ingredients, no dairy, no junk, no chemicals and no pesticides.
She didn’t need to fortify her bars with lab-produced vitamins and
minerals, because her bars were naturally nutrient dense.
Today, Liz and her husband Glenn continue that conscientiousness every day as they produce the
best-tasting whole food bar possible, work for social justice and environmental sustainability, provide
living wage jobs and donate more than 5% of their sales in kind donations. “My mom always taught
me to make a difference,” says Liz. “This is what inspires and excites me every day.”
The Bumble Bar, handcrafted in small batches in the Inland Northwest, is gluten-free, wheat free,
dairy free and certified organic. The ingredients – flax seeds, sesame seeds and other yummies – are
not only good for you, but are also ethically sourced. “Unlike most producers,” states Liz, “ethical
business is part of the DNA of BumbleBar.” BumbleBar does not source anything from China – not
even their packaging – and about 70% of their ingredients come from worker-owned co-ops and
family farms. They develop relationships with their suppliers, resulting in honest and long-lasting
partnerships built on integrity, environmental trust, social values and product quality.
BumbleBars provide positive energy for mind body and planet! As you send your kids back to school,
you can know that you are making a difference for them, our community and the world by including
this local, yummy treat in their lunch bags.

Melvyn and Sue Brown began their Grade A Amaltheia Goat Dairy on Thanksgiving Day, 2000. Nestled
at the base of the Bridger Mountains near Bozeman,
MT, they milked goats and sold their milk to a company that made cheese for a San Francisco company.
After a year, they started making their own cheeses under the Amaltheia label. Today, they milk about 280
goats, producing 150 gallons of goat milk each day.
Amaltheia Organic Dairy offers fresh, organic goat
cheeses made with organic ingredients. In fact, they make their cheese as orders come in – you
can’t get fresher than that! Although they have always used organic practices in making their
products, they became certified organic in 2005. “We believe in organic production and that
you are what you eat,” says Sue. “Supporting regional farmers makes a much smaller impact on
the environment and helps to promote a healthy lifestyle.” Melvyn and Sue are lightening their
footprint by bag-composting their manure and offering it to CSAs, home gardeners and by the
pallet. They also feed their whey by-product to their 200 organic hogs, and they hope to soon
acquire solar power to run the farm and cheese facility. Producing gourmet Chevre, Feta and
Ricotta cheeses, Amaltheia is doing their part to make a difference in our world while offering
a taste of plenty for your table.

Jonel’s earliest baking memory is making a batch of chocolate chip cookies
with her mother when she was a little girl. As an adult, she baked from
seed to shelf at a health food store in Hayden Lake, ran her own bakery for
five years and produced all of Java on Sherman’s baked goods for 15 years.
Since 2008, she has been Pilgrim’s resident baker.
The past three years, Jonel has produced a multitude of delectable bakery items, including gluten-free and sugar-free selections. “Baking is very
peaceful,” Jonel says, with a smile. She appreciates what Pilgrim’s Market represents for conscientious eaters: organic, natural and allergy-friendly ingredients and products. She is grateful to be
able to offer scrumptious foods that are also good for you. “I want people to enjoy food and not
be limited by their diet restrictions. And organic just tastes better – the ingredients actually have
life to them and are not altered by chemicals or preservatives.”
While she knows she can’t please everyone, Jonel makes it possible for Pilgrim’s Gourmet Deli
and Bakery to offer a delectable selection of baked goods for every palate. During the month of
September, Jonel is baking a special Caramel Apple Crisp Bar. Enjoy the gooey richness of this
bakery delight with a mug of coffee or a tall glass of milk.

Celebrating the Harvest
Bulk Department Expansion Grand Re-Opening!
Pilgrim’s Produce Department is overflowing with the bountiful fruits of harvest season. Our selection of local and regional produce is well worth the visit to our bins and
coolers. We have an abundance of creamy garlic, hot peppers, meaty eggplant, juicy
melons, crisp apples and earthy potatoes from such quality producers as Killarney Organic Farms, Ray Gilbert, Middleton Organic Orchards, and Rest-A-While Orchards.
Browse our space, ask our staff about recipes and menu ideas and take home a colorful
array of fresh produce to complete not only your dinner tonight, but also snack and
lunch ideas for the whole week.
We have expanded our Bulk Department!
With 12 feet to accommodate 85 new
bins, a wider selection of snack foods and
pastas and a new gluten-free set separated
from all wheat and gluten-containing
products, shopping Pilgrim’s Bulk has
never been easier or more enticing.
Hollie , Bulk Manager, has been working
for Pilgrim’s Market for about 5 years.
While she started in grocery and as a cashier, she eventually became the “Spice
Girl” when her sister left that position.
In 2007, the former Bulk Manager left Pilgrim’s, and Hollie’s responsibilities expanded from
spices to ordering, stocking and maintaining the entire Bulk Department.
“Shopping bulk allows you to buy what you need without leaving an excess of little-used ingredients in your cupboard,” explains Hollie. It also offers fresher and higher quality products,
since bulk ensures a more rapid turnover than packed foods that you buy off the shelf. With
the expansion, Hollie is also able to offer new grains, pastas, formerly pre-packaged snacks and
gluten-free flours. This month, she is featuring the Pacific Northwest Farmer’s Co-op, a local
group of 750 family farmers offering 4 delicious varieties of Non-GMO Verified grains for
your supper table. Check out what’s new today!

Introducing Omega Juicers
Aloe Vera – Nutrify Your Skin, Hair and Digestion
You asked for juicers, and we listened! Omega Juicers develops some of the most efficient and reliable commercial capacity juicers on the market today, and they are now available
at Pilgrim’s Market. Omega’s Masticating style juicer allows
health conscious consumers to juice any fruit and vegetable
with high yield and low waste. First, the juice is extracted
through a crushing stage, then, before the pulp is ejected, it is
squeezed again through a second pressing stage. The result is
more juice and extremely dry pulp. It also uses an 80 RPM “low speed juicing system”
that reduces heat buildup and oxidation while keeping healthy enzymes intact. Discover the health benefits that an Omega Juicer can add to your diet and lifestyle!
VITAMIX: THE BRAND CHOSEN BY LEADING CHEFS WORLDWIDE
The health benefits of eating less processed, less-refined foods
are well documented. However, preparing whole foods wasn’t
always the easiest or best-tasting choice. Owning a Vitamix
changes all that forever. With the flip of a switch, you discover that creating delicious and healthy raw, vegan and vegetarian meals is easier than you ever imagined with the Vitamix
TurboBlend.

Now that summer has ended and school has started
again, it is time to look to rebuilding your skin from
seasonal sun damage. Discover the natural skin and
health support benefits of aloe vera! Aloe can not
only assist in your skin’s summer recovery, but it is
also handy for those cuts, scrapes and bruises that are
a natural part of school time.
Believed to have originated in the Sudan, aloe vera, or
medicinal aloe, can be useful on skin due to the presence of polysaccharides and other naturally-occurring
compounds. It has long been associated with herbal
medicine, with records of aloe vera use dating back to
the 16th century BC. In addition to its common skin
and sunburn application, it has been used as an antibacterial, antifungal and moisturizer for oily skin, and
aloe juice is popular as a digestive supplement (ask for
more information in our Supplements Department).
It is also a favorite of vegans for retwisting dreadlocked hair.
Pick up your very own aloe vera plant today in Pilgrim’s Floral and Seed Department! They are easy to
care for and fun to grow with kids.

Employee Spo tlight
Shelly Walker, CNC, Family Herbalist, Cholestech Technician, Enzyme Expert
Shelly Walker has
been a vital part of
the Pilgrim’s Market team since the
store first opened,
She came from
several
years
working as the
district manager
of an independent home care
agency that provided attentive care services
for the disabled, elderly and terminally ill,
and she was ready for a change. Excited that
Pilgrim’s Market was opening not far from
her home, she stopped in to see if they were
hiring. Although the store wasn’t open yet,
Joe Hamilton (owner of Pilgrim’s Market)
gave her an application, and her hiring process began. She started out behind the scenes
checking in inventory, pricing and stocking,
and eventually she transitioned into cashiering and working in the produce, bulk and
herb departments.
Moving into the supplements department was
a natural progression for Shelly, since she was
continually interacting with customers with
needs that often went beyond her knowledge
and experience. This developed a strong desire in her to serve the public in a greater capacity than merely looking up answers in The
Prescription for Nutritional Healing. Shelly
adds, “As I started getting more exposure to
the companies that were manufacturing the
products we offered, Joe and Sarah Hamilton
allowed me to receive specialized training at
the facilities of manufacturers like Nature’s
Way, Enzymatic Therapy, Hyland’s Laboratories. These trainings planted seeds in me.”
Her personal experiences with the terminally
ill also influenced her decision to pursue natural health education and certification. “I had
an allopathic background, a very conventional approach,” she explains. “Ten years ago, I
saw the benefits of colon cleansing, detoxing
and juicing in my own life, and it opened my
eyes to a whole different way of working with
the body, the immune system and the person.
I started providing lectures on cleansing and
detoxing. I was using herbs and nutritious
foods to administer life and healing to the
body, and the side perk was often weight loss.
This motivated many customers to start their
journeys to recovering health.” Through her
new knowledge and her personal experience,
she was able to see victories in her own life as
well as the lives of others. “These people compelled me and built my confidence,” states
Shelly.
Today, she continues to share the things that
have been tried and true, that have the greatest potential to assist each person in recovering their health. Many return with stories of
success gained due to her recommendations.
In the words of one customer named Judy,
“Over the years Shelly has helped myself and
my family more than I can say. My Mother
walks better because of her, and, with Shelly’s
help and guidance, I have recovered from an
illness that almost took my life.” Another
customer, Lee, says, “Without Shelly’s help
I probably wouldn’t be here. Approximately
6 months ago, I talked to her after being diagnosed with cancer. She immediately recommended a protocol to follow, and it has
worked very well.” In addition to the help
and advice she affords customers, Shelly also
offers wellness consultations, cholesterol
screenings and hair analyses (see details at
right).
She does not claim to have all the answers,
though. “I am still learning and pursuing
knowledge,” she admits. “And I would encourage others to do the same. Our Health
Education Center and Wellness Center offer
amazing resources for those looking to gain
knowledge.” In addition to her work at Pilgrim’s Market, Shelly focuses her time on her
family – her husband, Brian, and her little
one, Carly Sue – as well as on her relationship with God. “They go hand in hand,” she
says. “I cannot do one without the other.” In
the next few years, she is also looking forward
to co-authoring a book addressing the risks
of and safe alternatives to vaccines and other
health issues.* For now, however, her time
is enriched with the satisfaction of knowing
that she is walking alongside people on their
journeys towards health and wellness.
*You can read the story of Shelly’s experience
with vaccines and the resulting death of her
son Vance in Chapter 1 of Autism: The diagnosis, treatment, & etiology of the undeniable
epidemic by Oller, J. W., Jr., & Oller, S. D.
(2010), available to read online (http://samples.jbpub.com/9780763752804/52800_

SHELLY’S HEALTH TIP
Most medical and wellness professionals
recommend that everyone take a wholefood multi-vitamin and a good quality
fish oil. I agree and would add probiotics and enzymes to that list. Food simply isn’t enough to fill in the gaps that
are required to maintain good health.
Even the American Medical Association
acknowledged this in 2002: “…suboptimal intake of some vitamins…is a risk
factor for chronic diseases and common
in the general population, especially the
elderly.”* We can eat as best as we can,
but we also need to understand that our
nutritional foundations have changed
over the years. This regimen, I think, has
the potential to maintain optimal health
in most people and allow us to meet out
potential as we put out every day.
