His dinner was delicious. He served some jasmine rice with the meal. We substituted some of the veggie stock for water to the rice to add flavor. I would suggest warming up the leftover veggies from Brad’s Vegetable Stock and serving them with rice or noodles to the vegetable lovers in your family. Add beef, chicken or tofu, if desired. —Annie BRAD’S VEGETABLE STOCK Homemade Stock Dear Annie, I make a lot of recipes using a storebought vegetable stock. I would like to make my own sometime. Please help me decide what vegetables to put in my stock. Carrie Sue from Raleigh, North Carolina Dear Carrie Sue, Just last week my son blanched some veggies for a tofu dinner he was preparing for us for the next day. I used the vegetable stock for a butternut squash soup I was preparing. His dinner was delicious and so was my soup. I have recreated the recipe for you. He served all the blanched vegetables with a firm tofu (cut into cubes), leftover roasted chicken pieces and added 2 to 3 tablespoons of a store-bought Thai 1 eggplant, peeled and chopped into 1” pieces 1 cup baby carrots 1 cup chopped onions 1/2 cup celery stalks, chopped 1/2 cup mushrooms, sliced 1 parsnip, peeled and sliced 1 cup zucchini squash, peeled and sliced 2-3 garlic cloves 1/2 cup chopped fresh parsley 1 small fennel bulb, cut into small pieces 1 bay leaf salt and pepper to taste Combine all of the ingredients in a stockpot large enough to hold them with at least 6 inches of room at the top of the pot. Add cold water to cover by one inch. Bring to a full simmer over a medium heat and simmer uncovered, for 2 hours. Strain through a fine mesh sieve, pressing on the vegetables with the back of a large spoon to force out as much of the liquid as possible. Born in Derby, England, he was a true Brit even though he was a dedicated and patriotic American. By calling him a true Brit, I mean he had the personality and character of one. A bit pompous, but very jovial. Father was a great reader as I am also. We shared many books and magazines. I like to think he was also a great thinker, but his drinking got in the way of his thinking. He was a store manager. First he managed a lumber yard and store and then was recruited to manage a grocery and automotive place. It started as a grocery store and as the need arose, became a seller of tires and other small automotive parts. He was really good at his job and the drinking did not interfere with his work. He enjoyed American politics and was active and verbal with his friends like the owner of the newspaper. They loved to exchange insults. Kate and I wondered how father would have liked Bingo. “I’ll bet he would have loved it,” I said. “And he would have played well and won often.” “You are such a softie,” said Kate who had been hurt more than once by father’s drinking. “Let’s have a Bingo day, dedicated to father,” I suggested. “Let’s go, play Bingo and put any winnings in Clinton’s campaign fund.” Father was a staunch Democrat and voted the party line. Kate agreed and off we went to see what we could win in father’s name. At first the play went slowly. No one even near us won. Then on a double Bingo, I won and was happy to mentally set the money aside in honor of father. At intermission we spoke with our tablemates, telling them we were having a “remembering father” day and setting our winning aside to help the Democrats. Kate gave me a nudge, but fortunately, these folk were also Democrats so no harm done. After break, Kate got hot. She was on twice and won once on a large picture frame. “I will happily donate this in father’s honor,” she said, settling in for Bonanza. She won again! I could scarcely believe it and the amount we would contribute to Clinton’s campaign was getting to be sizeable. “I wonder if we need to specify this as Bingo winnings,” I said. “Maybe she would consider it gambling and refuse it.” “Don’t be an idiot,” said Kate. “She wouldn’t refuse a dollar stolen from a homeless person.” “Kate, don’t be so nasty,” I insisted, but then we had to get ready for the final blackout of the evening and in just that many minutes, I was on. I was so excited. I kept chanting for my number until my tablemate asked me to stop or to chant silently. But then I won! It was a $600 win and I was happy to set it aside to contribute in father’s name. “Well,” said Kate. “You had quite an evening and you will make a substantial contribution to the Democrats.” “I am going to give it in father’s name,” I said staunchly. “He deserves to be honored.” ...John Lennon appeared on the first cover of Rolling Stone magazine. …Mary Todd Lincoln’s half-sister, Emily Todd, was married to Confederate Gen. Lions symbolize dignity, energy and aggression. The castle and unknown people symbolize you. You keep yourself a bit aloof and do not look for help from friends or family. It sounds like you are struggling with jealousy or anger. Keep a journal of what upsets you and see if the dreams happen when you have an upsetting day. Analyze what sets Dear Judy, Scales in your dream tell me you are undecided about a difficult situation and you are weighing the pros and cons of it. The closed bathroom door tells me you are trying to decide what to do, but you are torn between the right decision and the easy (morally incorrect?) decision. In healthcare facilities, adhering to proper hand-washing techniques is essential in reducing the risk of exposing pratients to the possibility of infections that are transmitted through touch and consequently could lead to dire consequences. The more I play Bingo in major halls—and there ARE a few exceptions—I find that our favorite game is becoming more and more humdrum. And, this “boredom factor” is being demonstrated not only among the caller, but among players, too. You may remember the reason I first started writing this column was because I had seen a woman who won $30,000 on a progressive Dual Dab who wasn’t thrilled at all. I happened to be looking at her when she won. Instead of screaming, BINGO, she raised her hand about halfway up and, in a quiet voice, mumbled, “Bingo.” I wondered at the time how anyone could be so lackadaisical about Bingo that they actually seemed uninterested when they won such a large jackpot. I called the nice folks at the Bingo Bugle, asking if I could write a letter to the editor about what I had seen. Instead, I was told that the publication could use a columnist with my background in journalism and my in- terest in Bingo. So, Bob on Bingo was born. Now, once again I want to tell the employees of Bingo halls who are reading this that I have always been on your side. I know you have a rather boring job, day after day, night after night, game after game. I know the calling can become monotonous and the running and paying off can seem unrewarding. But, bear with me on this. Something has got to be done to make it easier for you and more fun for us…the players. There are some wonderful exceptions in all of this, though. At the Cannery, on the north side of Las Vegas, one of the callers, Steve, is apparently a real delight. Joey in Las Vegas wrote to report: “Bob, you won’t believe Steve at the Cannery. He actually seems to enjoy being a Bingo caller. Because of his upbeat attitude, his love of the game rubs off on all of us. When I go there and he is not working, it’s not the same. To make matters worse, one of the callers at another hall told me that she was instructed by the manager to speak in a monotone voice, showing no emotion.” Thanks, Joey. In other words, at THAT doesn’t want ANYONE to have fun. I don’t know what the answer is. When Bingo callers are being told to sound boring, for my money, the end is near. What do you think? This slender green pod comes from the lovely yellow flower of the seemingly impervious Hibiscus Esculentus plant. While this hardy crop would flourish almost anywhere, okra is grown mainly in the South. Those who’ve eaten okra love it, and when separated from it, for reasons of geography or season, miss it. Known to some as ladies’ fingers, bhindi, bamia or mostly commonly as gumbo, which is its West African name, the okra plant is believed to have arrived in North American with the African slave trade. It’s possible that slaver traders or the captives themselves stowed away seeds to bring to the New World. Okra was cherished by both slaves and slave owners. Southern agricultural journals, dating back to the mid-1800s, account that it was widely enjoyed and eaten frequently during the growing season in a variety of preparations. The Cajun and Creole cuisines of Louisiana resulted from a New World fusion of foods from the diverse cultures of its early settlers. It was in Louisiana that okra gumbo, the famous dish named after its key ingredient, was born. Okra was a predominant ingredient in the regional stew of vegetables and chicken, shrimp or crawfish. The gelatinous liquid in okra helps to thicken gumbos and soups. Slaves also used the seeds as a coffee substitute and the leaves for medicinal purposes. Relatively easy to grow, okra tolerates high temperature and scant water, and also is nutritious. Okra is an excellent source of dietary fiber, vitamins B-6 and C, as well as folic acid, potassium and calcium. Okra also contains properties to help with diet-related illnesses like diabetes. The gelatinous interior found in okra helps to slow the absorption of sugar into the blood by forming a kind of gel coating inside the bowels. This slows down the absorption of food from the gut, evening out the peaks in blood glucose that occur after meals. Even with all its health benefits and historical acclaim, okra has been controversial from its arrival in North America. There are those refuse to eat it or who think it’s a suspicious-looking pod of slimy repute. This is because of the gelatinous substance okra releases when cut. Proper selection and cooking methods will eliminate that truly minor detail and showcase its delicious flavor. When choosing okra, it’s important to look for small, tender pods, as thick, long pods tend to be tough. Okra should never be sliced until immediately before cooking. This help to prevent some of its gelatinous interior from seeping out. Once you’ve tried this delicacy properly cooked, okra will steal your affections, as it has for so many others who salivate at the mere mention of its name. My recipe for Okra and Shrimp Hush Puppies showcases the best qualities of okra in a historical Southern recipe that is packed with Creole flavors. OKRA AND SHRIMP HUSH PUPPIES These hush puppies are the perfect side dish for baked, broiled or fried fish, or it cup self-rising yellow cornmeal mix cup self-rising flour cup medium-size raw shrimp, chopped cup finely diced onion, cup red or green bell pepper, chopped finely cup celery, diced finely cup fresh, chopped okra or frozen and thawed cut okra 1 1/2 teaspoons Creole or Old Bay seasoning 1 large egg, lightly beaten 1/4 cup beef broth 1/2 cup carbonated water 1 teaspoon salt Frying oil 1 1/2 1 1/4 1/2 1/2 1/2 1. Stir together the cornmeal mix and flour in large bowl until combined. Sprinkle shrimp, onion, bell pepper, celery and okra with 1 teaspoon of the Creole seasoning and combine to coat with the spices. Add the shrimp and vegetable mixture to the cornmeal mixture. 2. In a small bowl, stir together the egg, broth, water and the remaining 1/2 teaspoon Creole seasoning. Pour the egg mixture into the cornmeal mixture using just enough to moisten the cornmeal. Let stand 5 to 7 minutes. 3. Pour oil into a Dutch oven to a depth of 4 inches; heat to 350 F. Drop batter by level tablespoonfuls into hot oil, and fry in batches for 2 to 2 1/2 minutes, flipping hush puppies over and frying for another 2 minutes on the other side until golden brown. 4. Although sugary snacks are surefire ways to crash moods and healthy eating intentions, the following two recipes from the book TurboCharged Recipes: Delicious Fuel for Your Lean Fat-Burning Machine, by sibling co-authors Dian Griesel, Ph.D. and Tom Griesel, offer healthful snacks to satisfy the urge for something sweet. Coconut Macadamiaroons 8 8 4 1 oz unsweetened shredded coconut oz almond flour (any nut flour can be used) tbls macadamia nut oil tbl sugar substitute Combine all ingrdients in a stainless steel bowl until well mixed. For each cookie, spoon a tablespoonful of the mixture onto a cookie sheet. Bake in a preheated 325-degree oven for about 6 minutes or until the cookies just start to get browned. Remove from heat and allow to cool on a wire rack. Every August my thoughts return to the many years I spent as an elementary teacher and in my nightly dreams I teach again. Invariably my class is unruly, ignoring my directions, and in general acting like monkeys in a classroom zoo. No matter what I do, I can’t get the students to behave; and often when I wake up and then return to sleep, I return to the same dream. I enjoyed my years with fifth graders, but I have no desire to once again be in charge of them. At the end of each academic year when we were done with curriculum, we played Bingo for small prizes. I taught them basic Bingo patterns and they loved the game. One of their favorites was Last Person Standing. Everyone stood up and as I called numbers, each student had to sit down if the number called was on his Bingo card. The last person still up was the winner. I remember playing a similar game at one of the Bingo games I attended years ago. In that version though, you won if you did not have any of the first sixteen numbers called. You could hear multiple moans and groans as players were eliminated on the fifteenth and sixteenth balls. If no one had a clean Bingo card after ball 16 then the prize money was not awarded and the game continued to a cover all. This month is the last full month of summer. On August 12, 1877, the phonograph was invented by Thomas Edison. I’m told that in his honor, August 13 is Vinyl Record Day. In the late 60s I bought what was called in those days a stereo. It played all sizes of vinyl records with clarity. Then along came tapes and CDs, followed by Walkmans, Bluetooth, and music streaming. I don’t have a clue what the last two are just as most young people have no idea what a joy it is to listen to vinyl records. I’m told there’s been a resurgence of interest in vinyls and I hope that’s true. For years albums and singles could be found at yard sales and they were used in all manner of craft projects instead of their intended purpose. I’m glad I held onto my collection although it languished in our basement for many years along with my beautiful stereo console. Recently my husband brought both the collection and the stereo upstairs. After some cleaning and an oiling of various parts, the turntable is once again working great. She ran into some difficulty, however, when her retiree husband began to complain that she was playing Bingo too much. I suggested that part of his complaint might stem from her going out and leaving him home to fend for himself. I also suggested that if she helped her husband find his own interests, he might stop complaining about her Bingo playing. The topic resulted in a litany of letters from other readers, such as those that follow. —Aunt Bingo Dear Aunt Bingo, I just read the letter in your column from the recently retired woman whose husband is giving her a hard time about going to Bingo. I think your answer hit the nail on the head. This sounds to me like a man who has yet to find his own retirement activities and expects his wife to sit home and make sure he is entertained. I would say that the only part I disagree with is that it is this woman’s responsibility to help her husband find his own retirement things-todo so that she can enjoy Bingo in peace. He is not a child. He didn’t do anything to help her prepare for retirement. Why must the burden now fall to her to coddle and baby him through a retirement he did not prepare for? Travel and spending time with our kids and grandkids were at the top of the list. But there were other things—like me wanting to join a cards club or learning to kayak with some friends on the lake—which I wanted to do alone. I also intended to play more Bingo. At first Terry had no ideas, and I said that he better come up with some because I didn’t think we needed to be together all the time. He agreed (grudgingly) and after retiring got involved with a local gardening co-op and with a croquet club at a golf course up the road. He also got a part-time job doing deliveries—which he loves. It is too bad your reader is in her situation. Now she really may have no choice but to follow your advice and spend the beginning of her retirement helping him figure out how to handle his. My husband and I found ourselves in a similar situation when we retired. We’d worked with a consultant on our financial planning for retirement, but it never occurred to either of us that we should talk with a “social” consultant as well. Both of us found ourselves “stuck” at first with too many hours in the day and not enough activities to occupy our time constructively. Eventually our friends introduced us to senior groups, and we found other thing to do online and through the newspaper. But it must have taken a good two years for us to find our retirement rhythm simply because we weren’t prepared. I strongly advise everyone who is nearing retirement to do some planning about how they will spend all that free time. Going out to dinner or playing Bingo can only do so much. IN NEVADA An Asian experience ■ A unique project opens before the end of the year Purchases and Expansions Boyd Gaming has purchased Aliante Casino and Hotel for $380 million. Station Casinos spent $662 million to build Aliante, which opened in 2008. Boyd has also purchased the Cannery and Eastside Cannery for $230 million. The Cannery opened in 2003 at a cost of $100 million and ECan opened in 2008 for $250 million. Adding the Cannerys and Aliante brings the number of Boyd casinos in southern Nevada to 12. Work begins this month on a $154 million expansion of the Aria’s convention area, which will blend the Cirque du Soleil theater into the existing convention space. MRI has also completed a $1.08 billion sale of the Crystals to Invesco Real Estate and Simon Property Group. Palms Sold The Palms has been sold to Station Casinos. Other than the general announcement, which included the sale price of $312.5 million, very little additional information has been released. The deal is expected to close later this year and it’s likely that the name will be unchanged given the strong brand recognition of the Palms. I never buy more than two and really prefer to play only one, but I see lots of players play four and six sheets per session, which seems extreme to me. How do they keep up? I would be so afraid I was missing numbers. At the same time, these people who play extra packs must have a better chance of winning. —Jay, via email Hi Jay, There is really no “correct number” of packs to play. It’s all a matter of how many you can handle comfortably. I remember my early days of Bingo playing when I felt I needed to play extra packs to stay competitive, and ended up totally stressed out trying to keep up with the caller. One time two ladies sitting near me offered to help mark my cards, which told me I must have looked so frantic that complete strangers felt they needed to step in and rescue me. Funny now. Totally embarrassing then. To this day, like you, I am astonished watching players who can cover half a table with Bingo paper and have no problem keeping up with the caller. It’s all about the magic of hand-eye coordination: some folks are superstars at it, others are not. Luckily, technology has caught up with we slow pokes. If you want to play more cards than you can physically manage, go to a Bingo hall with handheld Bingo devices. You can buy dozens of cards (if your wallet can handle it) and the machine does the tracking for you. If you find you miss the thump-thumpthump of dauber on paper, buy one or two paper packs to play manually and make the rest electronic. That way you have the Hi Guy, I am really ticked off! My wife and I went to Bingo tonight and after we got there and stood in line for 30 minutes waiting to buy our paper, the chairman came out and announced that Bingo was cancelled. We objected and demanded to know why and he said that the turnout was too low and they couldn’t have the games. Everyone complained but he said this didn’t change anything and the games were still cancelled. It was too late for us to get to another game so we went to a diner for pie and coffee and after that just went home—still angry. While it is rare to have Bingo cancelled right in front of you, it does happen—particularly during the summer months when nice weather and travel vacations draw people away or, more commonly, during winter when nasty storms rip through. To be fair to the Bingo sponsor, the cost of operating a Bingo doesn’t grow on trees: it comes from the dollars spent by players when they buy-in to the games. If a head count shows that there aren’t enough players to cover a full session’s prizes plus operating costs, the person in charge has no choice but to slash prizes significantly or cancel the games. Cancellation is usually the simplest option. Try not to hold this against the hall or boycott the games. Remember, the whole reason why the Bingo exists in the first place is to fund charitable work. During the iffy summer season, it might be wise to check the Bingo’s website or call ahead and ask if they are looking at a possible cancellation. I mean, that’s the way it has been in casinos for over fifty years. Bet $10 and get a blackjack, and if the dealer doesn’t have a blackjack, bingo, you are immediately paid $15. (That’s a 3-2 payoff or one and a half times your bet). Casino owners (way back when) initiated the bonus payoff for a blackjack to encourage players to try the game. The bonus payoff also helped to offset the big edge that the casino had over players when the rules of the game specify that a player must act on their hand before the dealer, and if they bust (i.e., hand exceeds 21), they will automatically lose even if the dealer subsequently busts. (So-called “double bust” rule.) Nowadays, things have changed in casinos and that includes the 3-2 payoff for a blackjack. It’s quite common nowadays for casinos to pay only 7-6 or 6-5 or heaven forbid, only even money for a blackjack. Even if you never got a passing grade in grammar school math, you ought to be able to grasp the following logic as why 65 is not better than 3-2. A 3-2 payoff is the same as a 15-10 payoff. (I just multiplied the 3 and the 2 by 5.) Therefore, a 6-5 payoff is the same as a 12-10 payoff (this time I multiplied by 2). Now we have an apple to apples comparison between the two payoff odds. Do you agree that a 15-10 payoff is greater than a 12-10 payoff? Just suppose you bet $10 in a 6-5 game and got a blackjack. How much would you be paid? A 12-10 payoff (in the 6-5 game) would get you $12 (bet $10 and are paid $12, which is what 12-10 means). Get the same blackjack in a 3-2 game, and you’ll be paid $15 (that’s $3 more you’ll get in the 6-5 game). Now do you see that 6-5 is not a better payoff than 3-2? In fact, it’s a much lousier payoff. So what’s the big deal over a measly $3 difference in blackjack payoffs between a 3-2 vs. 6-5 game? It so happens that statistically you can expect to get four blackjacks per hour when you play. Suppose you play a three-hour session at a 6-5 blackjack game. That means you can expect to get 12 blackjacks. If you are short-changed three bucks for every blackjack, you will have donated a total of $36 to the casino coffers over the course of three hours. (If you are a $25 bettor, you’ll be giving them, gulp $180.) Trust me, blackjack is a tough game to beat even using the best strategies so don’t make it harder on yourself by playing 6-5 games. You can go through the same simple math (as I did above) to compare a 7-5 payoff to a 3-2 payoff, but I’ll spare you the trouble. Bottom line: For a $10 bettor, it will cost you an extra buck on every blackjack compared to a 3-2 payoff. That may not seem like much, but if you add up all the blackjacks you’ll get in your lifetime—that would amount to a lot of moola that you’ve given the casinos for no reason. Sorry, but a 7-5 payoff, although slightly better than 6-5, is still not good if you are serious about winning. Now comes the biggie in blackjack payoffs. The trend in Vegas (and elsewhere) these days is to have “part pits” where halfnaked girls on poles do “their thing” while you play blackjack. PA Raises Bingo Prize Limits With Pennsylvania allowing small games of chance, and slot machines and table games at casinos, Bingo gaming in the state has declined. To help revive Bingo, state lawmakers are considering revisions to the 1981 Bingo law—which, except for minor revisions in 1982 and 1988, has remained unchanged. The House Gaming Oversight Committee approved a bill to increase limits for prize payouts from $250 to $500 for any one game of Bingo, from $2,000 to $4,000 for jackpot games, and from $4,000 to $8,000 for the total amount of prizes awarded in one day. The measure would also remove restrictions on the number of days a licensee can conduct Bingo games. “Not long ago, Bingo halls were packed with enthusiastic players, but the game has faced declining popularity amid the rise of casino gaming in Pennsylvania,” said Rep. Kate Klunk, R-169, Hanover, the bill sponsor. “Local organizations that rely on Bingo for fundraising are struggling to bring in the funds they once did, and the state law pertaining to the game is not helping its revival.” $1 Million Bingo Payouts Legal in Alabama Anniston, Alabama, made it legal earlier this year to play $1 million payout Bingo games—the highest amount in the state. But don’t expect the city to become a haven for Bingo parlors anytime soon, city officials said. Anniston city officials said Bingo games could earn big bucks for the city and the nonprofits that would run them. But while the Bingo law provides for big-time payouts, it also contains restrictions designed to keep games small like they’ve always been in the area. Meanwhile, some Anniston nonprofits are wary of attempting Bingo because of the added cost, manpower and expertise needed to run large games effectively. The Anniston City Council updated its Bingo in May, taking advantage of a state law passed in March that increases possible paper Bingo payouts in Calhoun County to $1 million a week from the previous $120,000 maximum. The state law came at the request of the Piedmont, Alabama, mayor and City Council who want to help bring back the Frontier Palace, a 4,500seat Bingo parlor that once operated there.
