CHEF HUBERT KELLER’S FLEUR TAKES GUESTS ON A
CULINARY TOUR OF THE GLOBE
by J. Trent
For a one-stop culinary world tour that will tantalize the taste buds but won’t break
the bank, look no further than Chef Hubert Keller’s inventive new restaurant Fleur.
Located in Mandalay Bay, Fleur offers
a menu of small plates designed to fit
every palate and budget,
and is based on Keller’s
global travels.

“[Fleur] is bright, open,
and based on countries
that I lived in, places that I
traveled to,” said Keller. “We
created cuisine around the
world with a little twist
and excitement.”
The “twists” were carefully
designed to both entertain
diners and enhance the
experience and flavor of
the dishes. Fleur’s Kushi

are topped with margarita
sorbet and orange purée
and served on an illuminated block of dry ice

Risotto is served with scallion, lemon and
basil, and could make the
most committed carnivore forget this dish is
meat-free.

Don’t miss the “In the

famously created by Keller

its finest. And leave room

“I’m hoping we can take

LAS VEGAS’ HIDDEN DINING GEMS REVEALED
by Heather Turk
There aren’t many best-kept secrets in Las Vegas anymore, but that doesn’t mean
there aren’t still a few hidden dining gems in town. Here are three restaurants that
always come highly recommended by those who’ve stumbled upon them.
TABLEAU AT WYNN LAS VEGAS
Tableau
BATTISTA’S HOLE IN THE WALL
Located just behind the Flamingo at
4041 Audrie St., Battista’s Hole in the
Wall has been serving fine Italian cuisine
for 41 years. Guests can dine on one of
25 tempting dinner selections, such as
the tasty (and filling!) 10-oz. Chicken
Parmegiana, the Fresh Fish of the
Day or Battista’s best-selling Lasagna,
each accompanied by your choice of
minestrone soup or Italian salad, garlic
bread, a pasta side and homemade
cappuccino. Wash everything down
with all the free house wine you can
drink—red or white—while enjoying
live music by the restaurant’s longtime
strolling accordion player, Gordy (he’s too
cute!). Dinner ranges from $21.95-$37.95,
making Battista’s not only a memorable
dining experience, but an affordable one,
too. Now that’s amore!

Battista’s Hole in the Wall
LOTUS OF SIAM
Located at 953 E. Sahara Ave., Ste. A5, Lotus
of Siam stands apart from its competition
thanks to its distinct, authentic northernstyle Thai food. Palate-pleasing selections
include the Sai Oua, a slightly spicy
northern-style sausage stuffed with
ground pork and fresh and dried herbs and
spices, and the Khao Soi Braised Short Rib:
northern Thai egg noodles served in a curry
sauce with coconut cream and braised
short rib, garnished with sliced red onion,
lime and pickled vegetables. Even Chef
Saipin Chutima’s Bangkok-style dishes
don’t disappoint, making it easy to see why
Lotus of Siam is frequently hailed as one of
the country’s best Thai restaurants.

Located poolside in the Tower Suites lobby
at Wynn Las Vegas, Tableau is the perfect
spot for breakfast, lunch or brunch during
the summer. Guests can dine in a bright
and airy atrium setting surrounded by
gorgeous pools and garden views as they
dig in to Chef David Spero’s impeccably
prepared modern American cuisine.
Must-tries for lunch include the savory
Sliced N.Y. Steak Salad, the flavorful
Sweet Squash Soup and the juicy Roasted

never had chicken that’s tasted this good!
As delectable as everything is, be sure to
save room for dessert; the restaurant’s
signature Milk and Cookies Soufflé—

simply to die for!
WE DARE YOU TO LEAVE ROOM FOR DINNER AFTER
DIPPING INTO THESE ARTISAN BREAD BASKETS
by Mary Faybik
After years of skipping the bread basket at dinner, people are tempted once again
to dive in with their butter knife for a carb fix. These breads are far from your
standard dinner rolls with flavors as thoughtful and enticing as many of the main
dishes with which you choose to pair them.
Break some bread before dinner at Fiamma Trattoria & Bar at MGM Grand. This molto
bene Italian eatery offers Foccaccina, a wood-oven-baked Italian flatbread dusted
with grated Reggiano cheese; and Grissini, a crispy Italian breadstick, to complement
Fiamma’s traditional antipasto.
Photos courtesy of MGM Resorts International and Phil’s Italian Steak House
Phil’s Italian Steak House at TI offers succulent
steaks, delectable pastas and a variety of seafood
dishes to satisfy any taste bud, but what many come
back for are the loaded baked potato rolls served
with dinner. Based on a traditional Parker House
white roll recipe, these buns are loaded with Russet
potatoes, apple smoked bacon, cheddar cheese and
green onion. These tasty treats are served warm
with whipped sour cream butter.
Fiamma Trattoria & Bar
Joël Robuchon at MGM Grand features a bread cart
fit for royalty. Baked fresh daily, guests are invited
to choose from more than 12 unique offerings such
as Bacon and Mustard Bread, Walnut and Raisin
Bread, Rosemary Brioche and Saffron Foccacia.
Once guests choose their selections, the breads are
individually heated and presented tableside with
gourmet French butter that is shaved into spirals
and sprinkled with sea salt.
Visit Gilley’s at TI for some finger-lickin’ good
barbecue and keep your carb kick going with an
appetizer of Southern Style Hush Puppies served with
smoked onion chipotle mayo and cilantro ranch.
Save room for dessert—Gilley’s makes a decadent
Hot Apple Biscuit Bread Pudding made with warm
buttermilk biscuits topped with Granny Smith apples
and raisins and then drenched in freshly made
custard and topped off with a bourbon anglaise.
Phil’s Steak House
Aureole at Mandalay Bay turns the buttery breads
we know and love into signature desserts. Savor
their Dulche de Leche, a warm bread covered with a
milky caramel drizzle, or the sinfully sweet Brioche
Bread Pudding for the perfect way to end your
carbohydrate craze in Vegas.

Citrus Glazed Salmon Fillet
TAKE VEGAS HOME TO YOUR KITCHEN COURTESY OF
CAPITAL GRILLE
by Mary Faybik
Vegas and fine dining go hand in hand, so it’s no wonder the famous Capital Grille
has planted roots in the heart of the Strip. Hailed nationwide as being the place
for a dry-aged premium steak, this eloquent restaurant offers a dining experience
unlike many others. The warm mahogany undertones and dim lighting make this
classically romantic restaurant the perfect setting for a special occasion or an
exceptional night out on the town. Take your Vegas experience home with this
delicious recipe from Capital Grille.
CITRUS GLAZED SALMON FILLET
4 (8 oz) Salmon Fillets 2 tsp Kosher Salt
1 stick (4 oz) Unsalted Butter, Clarified ¼ cup + 2 tbsp Citrus Glaze
1 tsp Freshly Ground Black Pepper
4 sprigs Chervil
1. Pre-heat the oven to 350°F and season the salmon fillet on both sides with salt and pepper.
2. Place 3 tbsp of clarified butter in a pre-heated skillet and heat until wisps of smoke
appear. Place the salmon fillet, flesh side down, in the pre-heated pan. Sear the fish for
approximately four minutes until golden brown and crisp on the surface. Remove from
the pan and place on a baking sheet.
3. Liberally brush the fish with citrus glaze and roast until cooked through, but moist,
approximately five minutes depending on thickness. During the first few minutes of
cooking, the fish will feel fleshy. When the fish begins to feel firm, it is usually perfectly done.
4. Place the cooked salmon on top of roasted vegetables and drizzle a small amount of
glaze over the salmon and vegetables. Garnish with chervil and serve immediately.
CITRUS HONEY GLAZE
¾ cup Freshly Squeezed Lemon Juice
¾ cup Honey
1 Whole Star Anise
1 tsp Black Peppercorns
2 tbsp Fresh Lemon Zest, no White Pith
2 oz Bulleit Bourbon
½ oz Simple Syrup
Ginger Beer
2. Reduce the heat and simmer for 12-15 minutes.
3. Remove from the heat and allow to steep for 10 minutes.
4. Strain, fold in zest and reserve at room temperature until service.
Remaining Citrus glaze can be refrigerated for up to three days and goes well with most
fish and chicken dishes.

whole new meaning to word “chocoholic.” Guests can
choose from such flavors as the Orange Truffle—Grand

BEER FLOATS AT BURGER BAR INSIDE

Burger Bar’s Beer Floats substitute real beer for root
beer, resulting in one of the tastiest frozen drinks
around. Stout fans are sure to love the Irish Sweetness—
Irish Stout topped with coffee ice cream and whipped
cream—while those who prefer fruitier drinks will
enjoy the Raspberry Velvet: berry beer topped with
vanilla ice cream and whipped cream. Can’t decide on
just one flavor? Then try the Burger Bar Classic Beer

SPIKED MILKSHAKES AT BLT BURGER INSIDE THE MIRAGE
BLT Burger’s popular Spiked Milkshakes add some alcohol to the childhood classic,
resulting in a true treat for your tastebuds. Popular flavors include The All Nighter, a

SMALL PLATE RESTAURANTS ARE LEAVING A BIG MARK
ON LAS VEGAS
by Heather Turk

Size does matter, as proven by the latest culinary craze to hit Las Vegas: small
plates. Better known as tapas, several Strip restaurants have opened recently that
feature the bite-sized dishes, which are perfect for those looking for a delicious
pre-show snack. Here’s a look at three restaurants whose menu items might be
small, but are always big on taste.
Jaleo’s Traditional Paella
Johnny Smalls Sliders
LA CAVE AT WYNN LAS VEGAS
With its low-slung ceilings and cozy nooks, this intimate wine and food hideaway is
the ideal spot for indulging in hot and cold small plates, oven-fried flatbreads and other
tasty items that are perfect for sharing. Dig in to such memorable dishes as the chefrecommended beef filet with crostini and blue cheese and the incredible Canadian
bacon, poached quail egg, Fontina flatbread made with Nueske’s bacon—easily one of
the tastiest flatbreads in town! As for dessert, the bite-sized beignets, accompanied by
crème anglaise, chocolate sauce and raspberry sauce, are perfect for sharing, but so
yummy, you’ll want to eat them all yourself!
JOHNNY SMALLS AT HARD ROCK HOTEL & CASINO
This hip small plate restaurant offers guests a delicious alternative to the dinner buffet
with its affordable all-you-can-eat tapas special: just $19.99 with a Rockstar Players
Card, $24.99 without. Guests can order items two at a time and choose from such fun,
palate-pleasing selections as the Jack & Coke—skewers of Kobe beef marinated in a
sweet whiskey cola—and the savory chicken & waffles: Southern-fried chicken wings
served with maple waffle fries and pepper gravy. Additionally, Johnny Smalls now offers
lunchtime and late-night all-you-can-eat specials for only $15.99 ($17.99 without the
players card), so both the early bird and the night owl can get the worm!
JALEO AT THE COSMOPOLITAN OF LAS VEGAS
Finally, Las Vegas wouldn’t be the new culinary capital of America if it wasn’t home
to Jaleo, one of the country’s first successful tapas restaurants. A perennial favorite in
Washington, D.C., one visit to Jaleo’s new Las Vegas location and it’s easy to see why
Chef José Andrés’ restaurant set the standard for Spanish cuisine in the U.S. for almost
two decades—nothing on its menu disappoints! Must-tries include the filling Rossejat,
a traditional paella of fried pasta with cuttlefish and Norwegian lobster; the juicy Carne
Asada con Piquillos Julián de Lodosa (grilled hanger steak with piquillo pepper confit);
and the flavorful Croquetas de Pollo, traditional chicken fritters served in a shoe.

Celine Dion
CELINE DION’S NEW LAS VEGAS SHOW IS TRULY IN
A CLASS BY ITSELF
by Heather Turk
There’s a reason why Celine Dion has sold more than 200 million albums around
the world, and it’s showcased front and center in her new show at The Colosseum
at Caesars Palace.
Not to say that it wasn’t showcased in “A New Day…,” Dion’s first Las Vegas production.
In fact, Dion’s powerhouse vocals could hardly ever just disappear into the background,
but “A New Day…” was such a visual feast that sometimes it was easy to forget Dion was
actually somewhere onstage performing live.
Dion’s latest triumph is a much more personal, intimate production, something
ticketholders will realize before the five-time Grammy Award winner even steps onstage.
The show opens with a brief video that shows the celebrated songstress taking her final
bow at The Colosseum on Dec. 15, 2007, saying how she hopes to one day return. Then,
audiences are taken around the world with Dion as they follow her on her Taking Chances
World Tour. Clips of Dion performing and interacting with the public are interspersed
with rare footage showcasing the singer in her most
important role—as a mom. The video concludes with
Dion returning to Caesars Palace last February for
rehearsals before the curtain parts, revealing the
singer in one of seven breathtaking outfits she wears
throughout the evening.

ENTERTAINMENT LAS VEGAS
However, the one thing that will really stick with
audiences is just how amazing Dion’s voice
sounds. Whether or not you’re a fan of her music,
it’s impossible not to be entertained by Dion’s
pitch-perfect vocals. For tickets, call 877.4.CELINE
(423.5463).
Photos by Gérard Schachmes
After singing the first verse of Journey’s “Open
Arms,” the curtain behind Dion finally falls, revealing
a stage full of musicians. A total of 31 join Dion on
her latest venture, which features Dion singing not
only some of her biggest hits (including “Beauty and
the Beast”) but also songs by Ella Fitzgerald, Michael
Jackson, Janis Ian and several others. Although
listening to Dion sing Billy Joel’s “Lullabye” while
footage of her sons plays behind her is touching, it’s
Dion’s emotional performance of Jacques Brel’s “Ne
Me Quitte Pas,” which literally moves the singer to
tears, that truly steals the show. And that says a lot
considering the 90-minute production also features
Dion singing a duet with herself! Other memorable
moments include a performance with Stevie Wonder,
a tribute to James Bond and a wet and wild encore
that has to be seen to be believed.
Trainer for a Day Program
DIVE INTO THE MIRAGE’S DOLPHIN TRAINER FOR
A DAY PROGRAM
by Heather Turk
Dreams come true in Las Vegas every day, but not every dream requires you to risk
your life’s savings on black for it to become a reality.
Whether you’re male or female, a teenager or an adult, odds are at some point in your
life you’ve dreamt of interacting with dolphins. Well, thanks to The Mirage’s Trainer for
a Day program at Siegfried & Roy’s Secret Garden and Dolphin Habitat, that dream can
become a reality. Open to dolphin lovers ages 13 and older, the all-day program truly
offers an experience of a lifetime, letting guests work side-by-side with The Mirage’s
dolphin care specialists as they work with the facility’s beautiful Common Bottlenose
Dolphins. Every participant’s experience is different based on each dolphin’s need,
guaranteeing that no two programs are ever exactly the same.
The adventure begins at 9:45 a.m. when
participants are greeted by their program
facilitator for a brief behind-the-scenes tour of the
Dolphin Habitat to help familiarize them with their
surroundings. During the tour, guests are given
a detailed lesson on a dolphin’s anatomy so that
they know more about the mammals they’re about
to work with, and will learn the basic hand signals
used to communicate with them. Following a
quick continental breakfast, guests will change
into their wetsuits and meet up with the dolphin
care specialists to see what the day has in store.
Trainer for a Day Education Session

While participants won’t get to swim with the
animals, they usually do get in the water, and may
even get to grab onto a dorsal fin and get towed
around by a dolphin—talk about the ride of your
life! Guests may also get to kiss a dolphin or partake
in a quick splashing game with one of them.
Participants might even be asked to do a little elbow
work, scrubbing the dolphins’ food buckets. It’s all
part of being a trainer for the day.
The $550 program concludes around 4 p.m. and,
with the exception of a tasty hour-long, threecourse lunch, participants are generally with the
dolphins for the duration of the day. Although
the experience isn’t anything guests will soon
forget, participants are given a photo CD of their
experience to take home with them, as well as
other keepsakes. Since each program is limited to
just four participants, spots do go fast. The Trainer
for a Day program is available Fridays through
Wednesdays. For reservations, call 702.792.7889.

Gordie Brown
COMEDIAN-IMPRESSIONIST GORDIE BROWN KNOWS HOW
TO KEEP AUDIENCES ENTERTAINED
celebrity has ever seen Brown impersonate
him live before.
“Garry Shandling saw me one night,” Brown
recalled. “He was in the crowd heckling me
going, ‘I don’t look like that. I don’t sound
like that.’ Next thing you know we’re onstage
together side by side doing Garry Shandling.
I was mimicking his moves so it looked like
we were identical twins. It was a lot of fun.
He was a great sport.” Brown named one
Hollywood legend he impersonates that
he wishes would see the show. “Al Pacino.
I would love that,” Brown said. “Jim Carrey,
too. [Impersonating Carrey] ‘Well, let me
show you how it’s really done.’”
by Heather Turk
There aren’t many shows in Las Vegas
that consistently change night after
night, but as anyone who has seen Gordie
Brown perform live before knows, the
comedian-impressionist never does the
same show twice.
“Even my band will never see the same
show,” Brown said. “They don’t know where
I’m going, but they’re amazing at following.”
Currently performing in the Gordie Brown
Showroom at the Golden Nugget, Brown is
one of Las Vegas’ most beloved entertainers.
Just ask Celine Dion, who asked Brown to
open for her on the North American leg
Criss Angel
of her Taking Chances World Tour.
Not
surprisingly, the Golden Nugget recently
announced that it had signed Brown on for
another six years, with the option to renew
his critically acclaimed show “Gordie Brown
Live” every two years.
Since returning to the Golden Nugget on
Feb. 5, 2009 (Brown previously performed
at the downtown hotel for two years before
moving to The Venetian in 2006 and then
briefly to the V Theater inside the Miracle
Mile Shops at Planet Hollywood Resort &
Casino), Brown’s hit show “Gordie Brown
Live” has been embraced by audiences of
all ages. Part of the reason no two shows
are ever the same is because Brown tailors
each night’s performance to the audience
on hand.
While Brown anxiously awaits the day
Pacino and Carrey see him perform, he’s
made sure to make use of the limited free
time he has (Brown is currently traveling
back and forth between Las Vegas and L.A.
doing some acting work and developing his
“Being at the Nugget the audience’s age
changes nightly, so I always adjust my show
accordingly,” Brown said. “I never want to go
one way and not the other. I always want to
feed material to the young so that they enjoy
the show because that’s my future.”
“The first thing to go in a voice when it
doesn’t get enough sleep is the high range,
and that takes me out of doing opera—
Andrea Bocelli—and also kicks out the Bee
Gees, Aaron Neville and Natalie Cole,” Brown
stated. “But that’s okay because I have a lot
of material and I know how to work around
something like that.” Given all the celebrity
impressions Brown can do, it’s surprising
to learn that, to his recollection, only one

With more than 100 impressions in his
repertoire, everyone from Michael Jackson
and Elvis (the first impression Brown ever
learned back when he was just 16) to Jack

only easily change the show based on his
audience’s demographic, but also keep the
show running during nights when his voice

own sitcom) to see Celine Dion’s new show
at The Colosseum at Caesars Palace. “It was
incredible,” Brown said. “I was blown away.
Her voice is just phenomenal.” Brown also
recommends a few other shows to Sunseeker
readers—he said that hypnotist Marc Savard,
who performs at the V Theater, is “really
talented,” and that “Vegas! The Show” at the
Saxe Theater (also inside the Miracle Mile
Shops) is “really wonderful.”
Of course, if you were to ask Brown’s fans
what show you should see during your Vegas
vacation, there would only be one answer.
“[I remember this one instance where] this
woman collapsed in the second row while
watching my show,” Brown recalled. “I went
backstage and got some sugar and Gatorade,
as I didn’t know what it was, but it could
have been sugar-related and that can be very
dangerous. Anyway, by the time I came back
she was alert and she did not want to leave.
She said, ‘I’ve been waiting so long to see

M&M’s World
M&M’S WORLD OFFERS FAMILIES TREATS APLENTY
by Patrick D. Byrnes
The understanding is immediate when standing in front of Las Vegas’ M&M’s World:
this is a special place that’s so much more than candy. Smiling M&M’s characters
greet guests from the awning and in the street-side window displays, and inside
the walls are ablaze with bright colors of every M&M’s hue.
Founded in 1997, M&M’s World is located
across the street from New York New

inception, M&M’s World has captivated
both young and old alike with its diverse

M&M’s World is open every day from 9 a.m.

The first floor is devoted to souvenirs, so

The store’s grand stairway features a
mural of the M&M’s characters showing
their evolution from original drawings of
the characters in 1954 as milk chocolate
candies with stick arms and legs to the
lively, plump shapes they are today.
On the second floor, you’ll find an entire

can imagine—22 to be exact. From the

ONE MAN’S TALE OF HOW BLUE MAN GROUP
CHANGED HIS LIFE
by Heather Turk
A lot of shows are entertaining, but very few are ever life-changing. However, for
Scott Bishop, seeing a performance of Blue Man Group back in New York in 1997
changed his life.
“I was instantly enthralled,” Bishop, who
at the time was touring the world with
a percussion performance group called
Scrap Arts Music, said. “The show was just
so innovative.”
Photo by James Porto and courtesy of Blue Man Productions
It wasn’t until January 2005, though, that
Bishop actually auditioned to be a Blue
Man. Bishop attended a casting call in
Canada, and out of the hundreds of people
who auditioned, was one of only two to get
picked. “It was like winning the lottery,”
Bishop recalled. “I had spent many years
working as a freelance musician, living
pretty much hand-to-mouth. I survived
however I could—99-cent cheeseburgers
at McDonald’s, credit cards… It was a
hard life, and I was so grateful for the
opportunity. I just love being onstage and
interacting with audiences.”
Following two months of training in New
York, Bishop became part of the original
cast that opened Blue Man Group in
Toronto. Since then, he has performed the
show in Germany, Switzerland and on the
Megastar World Tour before joining the
Las Vegas cast at The Venetian last July.
Bishop said that the people who come to
see the show are what makes it a different
experience across the globe. “In Toronto
and Germany, the audiences are much
more reserved,” Bishop stated. “They don’t
show any expression until the end when
they clap. But in Las Vegas, the audience
is very vocal. They’re excited to be there.”
Bishop credits Blue Man Group’s worldwide
popularity with the fact that it’s so different
from other productions.
“THE BLUE MAN
CHARACTER IS
SO UNIQUE. IT’S
A CHARACTER
THAT DOESN’T
EXIST ANYPLACE
ELSE, YET IT’S
UNIVERSAL
BECAUSE IT
ENCOMPASSES SO
MANY ASPECTS OF
HUMAN NATURE.”
“The Blue Man character is so unique,” he
explained. “It’s a character that doesn’t
exist anyplace else, yet it’s universal
because it encompasses so many aspects
of human nature.”
“I wish I could go back in history and start
this experience earlier,” he said. “My only
regret is not auditioning for the show back
in 1997.”

Mesquite Landscape
MAKE A BREAK FOR THE BORDER
by Yvonne Newman
If the horde of tourists and big-city atmosphere in Las Vegas begin to overwhelm
you, take a 90-minute drive north to Mesquite. Set in the picturesque Virgin River
Valley, this bustling little resort destination straddles the Nevada/Utah state line.
Not only does it offer a small-town feeling combined with a Sin City-like menu of
attractions, but it also provides easy access to Utah’s breathtaking Canyon Country.
The border city is home to three casinos:
the CasaBlanca, Eureka and Virgin River
Resorts. All of them boast plenty of slots,
table games and sports book action. Each
one also offers a lounge—the Skydome
Lounge, Season’s Lounge and River
Lounge, respectively—which has no cover
charge and features live pop, rock and
country music bands nightly. Plus, the
CasaBlanca regularly hosts headlining
entertainers such as Jay Leno, Bill Engvall
and Wynonna Judd.
Photos courtesy of Las Vegas News Bureau
There’s no lack of pampering to be had in
Mesquite. The Spa at CasaBlanca is just
the place to indulge in a relaxing massage,
body wrap or facial. It also houses a steam
room and several soothing mineral pools.
Similarly, Spa Eureka has a full-service
menu that includes hot stone treatments,
reflexology, shiatsu and massages in a
poolside cabana.
Mesquite is emerging as a first-rate golfing
destination, as well. Five spectacular
courses lie in the foothills of the Virgin
Mountains. The 18-hole Conestoga Golf
Course is the city’s newest challenge. It’s
artfully woven into the contours of canyons
and past rugged rock outcroppings.
The Palms Golf Club, which is set amid
lakes, sand traps and 200 palm trees, also
provides a unique playing experience for
all skill levels.
In partnership with the casinos, this
friendly town hosts many special events
during the summer, such as the 2011 Miss
Nevada Pageant (July 2), the Mesquite Jazz
Festival (July 15-17) and thrilling motocross
races at the nearby the Mesquite MX Park.
The Eureka Casino Resort
CasaBlanca Casino
Of course, there are non-casino attractions
to be enjoyed, too. Take in the historic
Virgin Valley Museum, home to city’s
first slot machine, and the Mesquite Fine
Arts Center and Gallery. Hike or picnic in
the nearby Virgin River Gorge Recreation
Area, just 20 miles northeast of Mesquite.
Or drive a few hours longer to access Zion
National Park, Bryce Canyon National Park
and Cedar Breaks National Monument.
For more information, stop by the Nevada

ESCAPE THOSE SCORCHING SUMMER TEMPS AT
MINUS5 ICE BAR
by Heather Turk
The temperature outside may be hot, but believe it or not, there is a place to cool
off in Las Vegas where it’s always a brisk -5° Celsius.
With two Strip locations to choose from—
the original inside Mandalay Place and
another inside the Monte Carlo—Minus5
Ice Bar offers Vegas visitors the perfect
place to chill. The unique ice-themed
experience allows guests ages 21 and older
to enjoy a selection of signature cocktails
served in glasses molded completely out of
ice all within a -5° Celsius (23° Fahrenheit)
ice environment.

The experience begins with guests
picking out an entry package that suits
them best. For instance, at the Monte Carlo
location, guests can choose from a Basic
package ($15) that includes entry into the
ice bar, as well as use of a Minus5 parka,
gloves and boots to help keep them warm;
a Fur Coat package ($45) that includes a
fur coat upgrade, as well as one cocktail
once inside the ice bar; and a VIP Package
($55) that adds to the Fur Coat package
a souvenir eskimo hat that guests can
take home with them. (Packages at the
Mandalay Place Minus5 are slightly
different and range from $25-$75.) Guests
will then lock up any electronics they have
(including mobile phones) in a private
locker before bundling up and entering
the icy wonderland.
Once inside, guests will discover a frozen
room complete with ice walls, an ice bar,
ice chairs covered with faux fur pelts, ice
tables and a variety of ice sculptures. The
experience is rounded out with a state-ofthe-art sound and LED light show. Since
all phones and cameras were locked up for
protection, a professional photographer
is on-hand to take photographs, which
guests can either purchase upon leaving
the venue or share for free on Facebook,
as all pictures are available online.

Minus5 Ice Bar Drinks
Guests can stay as long as they like and
purchase additional cocktails at the bar
for just $10 each (beer costs $7). Must-try

Gold to Go ATM at the Golden Nugget
YOU NEVER KNOW WHAT YOU’LL FIND IN A LAS VEGAS
VENDING MACHINE
by H. Wadowski
If you think vending machines only dispense chips and soda, clearly you haven’t
been to Las Vegas in a while. Some of the city’s biggest resorts are redefining the
way guests look at vending machines of all types—even ATMs! Here’s a look at
three vending machines that are sure to have you doing a double take.
GOLD TO GO ATM AT THE
GOLDEN NUGGET
You don’t have to be rich to be an art
collector. Made out of old cigarette
vending machines, Art-o-mats dispense
small pieces of artwork that were created
by more than 400 artists from across
the country. Simply insert $5 into the
machine, pull a knob and receive your
desired artwork. More than 90 Art-o-mat
machines are currently in existence and
The Cosmopolitan is home to six of them—
one of which previously resided at the
Andy Warhol Museum. Each one features a
variety of original works, including jewelry!
If you don’t leave Las Vegas with one of
those oversized Megabucks checks, this
is the next best thing. The Gold to go ATM
is the world’s first gold vending machine,
dispensing gold bars ranging from one
gram to one ounce and gold coins. The
ATM is always online, updating its prices
every 10 minutes based on current gold
spot prices. At press time, guests could
take home a one gram bar for just $62 and
a 10 gram bar for $600. As if the bars of
gold weren’t unique enough, the Golden
Nugget is only the second location in
North America to have a permanent

Center in Boca Raton, Fla.). Talk about
hitting the jackpot!

VEGAS GOLF IS COOLER AFTER SUNSET
by Yvonne Newman
During summer, a daytime round of golf in Las Vegas can be a sizzling experience—
not because of brilliant drives or great iron shots, but due to the hot, hot sun.
Fortunately, a few courses in town are lit for evening play. This means you can tee
off at night under a sky that’s free from UV rays and play without fear of a sunburn.
ANGEL PARK GOLF CLUB, SUMMERLIN
This stunning 36-hole golf course designed by
Arnold Palmer is situated about 15 minutes from the
Strip. Twelve of its holes comprise the Cloud Nine
short course, which is brightly lit in the evening.
Here players will discover replicas of golf’s most
famous par-3 holes, including one dubbed the
“Valley of Sin” from St. Andrews in Scotland and
another called “Island Green” from TPC Sawgrass in
Florida. Angel Park also boasts a nine-hole putting
course on natural grass that shines at night.

CALLAWAY GOLF CENTER, SOUTH STRIP
Located south of Mandalay Bay, this facility was designed by Robert Cupp. It sits on 42
lushly landscaped acres, complete with lakes, streams and waterfalls. The training center
features the short Divine Nine course, which is fully illuminated for night play. A two-level
driving range with 113 hitting stations is lit, as well. What’s more, players will discover the
brightness at Callaway Golf Center is supplemented by neon from the nearby Strip.

the fairways—which are lovely when lit up at night.

THREE GREAT PLACES TO PICNIC
AT MOUNT CHARLESTON
by Yvonne Newman
Need a respite from Vegas’ summer temps? Picture
yourself in an alpine paradise devouring a sandwich
while sipping on a cool drink. A picnic lunch is
one of the most pleasurable aspects of visiting
Mount Charleston, which is located about 35 miles
northwest of the Strip. Not only will you enjoy
fresh air and more than 50 miles of trails, but the
temperature is 20 to 30 degrees cooler than it is on
the valley floor. Here are some of the best places to
lay your picnic blanket.
MARY JANE FALLS
This is one of the easiest and most popular hikes at
Mount Charleston. The trail is 2.4 miles round-trip. It
utilizes switchbacks and can be strenuous, due to a 900foot elevation gain. The payoff is a 100-foot waterfall.
Apt to be more of a trickle during this time of year, it’s
still a wonderful spot to pull out your picnic basket amid
ponderosa pine and aspen trees.
Cathedral Rock Trail

CATHEDRAL ROCK
A moderate hike, this round-trip journey is three miles
long with a climb of 1,000 feet. It ends on top of a rock
outcropping, which makes for a fine place to eat—
thanks to breathtaking views of the little town of Mount
Charleston and the surrounding Spring Mountains.
There’s also a picnic area near the trailhead that boasts
tables and barbecues.
MOUNT CHARLESTON LODGE
If you’re feeling lazy and would like to partake of a
meal in the mountains without any exertion, stop by
the Mount Charleston Lodge. Situated at an elevation
of 7,717 feet, you’ll discover spectacular views on a
huge outdoor patio. There’s a mouth-watering menu
that includes everything from salads and burgers
to sandwiches (try the Mountain Club or the Mount
Charleston Cheese Steak, a variation on the classic
Philly). The rustic atmosphere is sure to charm you.
All of these picnic spots are located in Kyle Canyon
at Mount Charleston. To get there, take U.S. Hwy. 95
north to state route 157. For more information, call

HELI USA AND GRAND CANYON RANCH OFFER A
UNIQUE EXPERIENCE OF SIMPLER TIMES
by Matt Seli
In this day and age of the Internet, video chatting and smart phones, it is hard to
find a place where one can reconnect with nature and enjoy life’s simple pleasures.
Just imagining horseback riding, campfires, and sing-alongs reminds us of easier
times when we weren’t bombarded with emails and text messages, but were
instead clear-headed and free from life’s stresses. Heli USA and Grand Canyon
Ranch want to bring people back to these times, if only for a short while, and offer
it all without the headaches of traffic and other travel stresses.
Photos courtesy of Heli USA and Grand Canyon Ranch
This incredible adventure begins at McCarran
International Airport where visitors are
welcomed aboard one of Heli USA’s luxurious
helicopters. As the rotors on the “time machine”
begin to spin faster and faster, the vessel takes
flight and visitors are on their way to the oldest
working ranch in Mohave County. During the
35-minute flight, the pilot will point out various
landmarks including the Colorado River and
Hoover Dam as the aircraft makes its way to one
of the Seven Natural Wonders of the World—the
Grand Canyon. The portion of the flight that
makes its way through the Grand Canyon is
truly a sight to behold, and may be worth the
price of admission just on its own. Shortly after
taking in these beautiful sights, passengers are
greeted by real-life cowboys as they land at their
destination: Grand Canyon Ranch.
The Grand Canyon Ranch property includes 165
square miles of wilderness and is home to all sorts
of wildlife ranging from horses and cattle to buffalo
and coyotes. Visitors will also have a chance to
meet some of the ranch dogs. Upon arriving at the
ranch, visitors can take a sunset horseback ride,
take a nap in their cabins or authentic Indian tipis,
or take some time to chat with some of the friendly
employees and cowboys over a cold drink. The real
entertainment begins at night, however, as after a
delicious cowboy cookout, guests are welcomed
around the fire for a night full of laughter, singing
and talking with new friends before retiring for
the night and preparing for the morning’s flight
back to Las Vegas.

KARL STRAUSS BREWING COMPANY PROVES THAT
CALIFORNIA BREWPUBS ARE NOT CREATED EQUAL
by H. Wadowski
If you think all breweries are the same, then clearly you’ve never been to Karl
Strauss Brewing Company.
Founded in 1989, Karl Strauss Brewing
Company was the first brewpub to open in
San Diego, Calif., in more than 50 years. Its
founders, recent college graduates Chris
Cramer and Matt Rattner, wanted to open
a microbrewery in Cramer’s hometown to
reintroduce locally brewed, handcrafted
beer to its residents, a concept banned by
Prohibition in the 1930s. With the help of
Cramer’s cousin Karl (as in Karl M. Strauss),
a world-renowned master brewer for more
than 50 years, the duo opened their first
brewpub in downtown San Diego on Feb.
2, 1989. Five years later they opened their
second brewery restaurant in San Diego,
followed by four more locations throughout
Southern California: La Jolla, Carlsbad,
Universal CityWalk and Costa Mesa.
Photos courtesy of Karl Strauss Brewing Company
“As the first brewery to open in San Diego
in more than 50 years, Karl Strauss Brewing
Company has been through the rise and
fall and rise of craft beer,” said Rattner, cofounder and president of Karl Strauss
Brewing Company. “By staying
true to brewing quality beer and
at the same time reinventing
ourselves, we have been able
to turn many people on to craft
beer over the last 22 years.”
In addition to brewing six core
beers regularly, including the
award-winning Windansea
Wheat Hefeweizen, Woodie Gold
(a nod to a classic European lager)
and Karl Strauss’ original Amber
Lager, Karl Strauss brews a host of
specialty beers and seasonal releases
so that beer drinkers always have
something new to enjoy. Specialty
selections on tap this summer for
a limited time include the Whistler
Imperial Pils, a bold Imperial Pilsner brewed
with Moravian malts and Noble Saaz
hops that’s pouring through July, and the
Boardwalk Black Rye, a spicy black rye ale
with a robust West Coast hop profile that’s
scheduled to make its debut on Aug. 1.
Of course, given the fact that Karl Strauss
ships its beer to more than 2,500 bars, restaurants, liquor stores and grocery stores
throughout Southern California, it’s really
its food menu that makes the restaurant
worth checking out. Unlike traditional
pub grub, Karl Strauss’ mouth-watering
menu items aren’t overly greasy. Be sure

CIRQUE DU SOLEIL OPENS ITS FIRST PERMANENT
PRODUCTION IN LOS ANGELES
by Heather Turk
With seven permanent productions in Las Vegas and another one honoring Michael
Jackson opening in 2013, it’s about time Cirque du Soleil opened a resident show in Los
Angeles—and “Iris A Journey through the World of Cinema” seems like the perfect fit.
Cirque du Soleil’s latest permanent
production is a lyrical, fanciful, kinetic
foray into the seventh art that brings
together dance, acrobatics, live video
and filmed sequences to take spectators
on a fantastic voyage through the
history of cinema and its genres.
Written and directed by directorchoreographer Philippe Decouflé,
whose credits include the opening and
closing ceremonies of the 1992 Winter
Olympics, and featuring music by
Grammy- and Emmy Award-winning
composer Danny Elfman (“Batman,”
“Desperate Housewives”), “Iris” will
be presented exclusively at the Kodak
Theatre, home of the Academy Awards.
Preview performances begin July 21
and the show is set to have its gala
premiere on Sept. 25.
“WHILE ‘IRIS’ DOES
NOT REFERENCE
INDIVIDUAL FILMS, IT
DOES SPEAK ABOUT
HOW MOVIES ARE
MADE, WHAT THEY
MEAN TO US, THE
VARIOUS GENRES
AND HOW WE
EXPERIENCE THEM.”
“For many reasons—especially a large population that has traditionally shown a very
big interest in and support of Cirque du Soleil, a base of tourists and the long-term
availability of an iconic venue with a very appropriate address—Los Angeles seemed a
natural choice for not just a resident Cirque du Soleil show, but for this resident Cirque du
Soleil show,” said Chantal Côté, corporate PR manager for Cirque du Soleil. “While ‘Iris’
does not reference individual films, it does speak about how movies are made, what they
mean to us, the various genres and how we experience them.”
Unlike Cirque du Soleil’s Las Vegas shows, “Iris” will have an intermission, bringing its
total running time to approximately two hours. Tickets range from $43-$253, with preview
performances costing just $33-$203. “Iris” will perform eight shows a week: Tue.-Fri. at
8 p.m., Sat. at 2 and 8 p.m. and Sun. at 1 and 6:30 p.m. For tickets, call 877.943.IRIS (4747).

“Iris” will join Cirque du Soleil’s other resident productions in terms of scale, scope
and size. The show will feature 72 performers, 200 costumes, 8,300 square feet of floor
surface, 174 loudspeakers, 603 lighting features, 20 video projectors and 166,000 watts
of sound. However, “Iris” has been designed to be entirely removable so that it can be
stored for two months when the Academy of Motion Picture Arts and Sciences needs the
theater for the Oscars. Once the space is returned, though, “Iris” can easily be remounted
and resume performances.

PHOENIX RESTAURANTS EMBRACE LOCAL PRODUCTS
by Matt Seli
Located in the heart of the Sonoran Desert, Phoenix and the other towns that make
up the Greater Metropolitan Phoenix Area aren’t usually thought of as agricultural
hotspots. The desert soil is full of nutrients, however, and farming here has been
a way of life for thousands of years. To serve customers the best dishes while also
supporting local agriculture, Phoenix-area restaurants and their chefs have been
shopping in their own backyard. Here are a few can’t-miss restaurants that are
using truly local and farm-fresh ingredients:
KAI
As the only AAA Five Diamond and Forbes Five Star
award-winning restaurant in the state of Arizona,
Kai is truly a special place to enjoy a spectacular
meal. Located within the Sheraton Wild Horse Pass
Resort in Chandler, Kai goes above and beyond to
bring its guests a unique dining experience. The
cuisine here is described as “Native American with
Global Accents,” and uses many locally-sourced
products in its dishes.

Joe’s Farm Grill
JOE’S FARM GRILL
Recently featured on Food Network’s “Diners, Driveins, and Dives” with Guy Fieri, this restaurant prides
itself on “doing common food uncommonly well and
served quickly.” Created by Joe Johnston in the farm
house that he grew up in as a child in Gilbert, this
restaurant serves such favorites as burgers, pizzas and
salads. Joe’s Farm Grill prides itself on emphasizing
the use of local products and much of the produce
that is used can be traced to the Johnston farm itself.
If a product is unavailable, the restaurant looks to
other local farmers across the state. Joe’s Farm Grill is
located at 3000 E. Ray Rd. in Gilbert and is open 8 a.m.
to 9 p.m.
Quiessence

DINING PHOENIX
Located on the historic Farm at South Mountain
property in Phoenix, this restaurant is truly reliant on
local farmers, as its menu changes daily based on what
is available. Rated a AAA Four Diamond restaurant,
Quiessence and its contemporary American cuisine
has also been called “the best restaurant in Phoenix”
by Phoenix Magazine. Maya’s Farm, located just yards
from the restaurant, frequently dictates what will be
on that day’s menu. The restaurant, located at 6106 S.
32nd St., also boasts an extensive wine list of which
contains many Arizona-grown selections.

GET BACK TO NATURE AT THIS LUSH DESERT OASIS
by Yvonne Newman
In the heart of the Sonoran Desert, you’ll find Cave Creek Regional Park. It covers
2,992 acres of peaceful wilderness just north of Phoenix and Mesa. Once packed
with miners, the area is now one of Maricopa County’s newest parks attracting
thousands of visitors each year.
Cave Creek Regional Park has a long
history. The Hohokam Indians settled
in its majestic foothills in 800 A.D. and
thrived for many centuries. Reminders
of their presence—petroglyphs and
arrowheads—are still around. In the 1870s,
miners stricken with gold fever or a desire
for silver, copper, lead and tungsten came
to try their luck. They had minimal success
and abandoned the area within a century.

Dedicated in 1992, Cave Creek Regional
Park has a landscape as impressive as
its history. Brimming with interesting
geological formations, it also offers
unforgettable views. You can see the
sprawl of Phoenix to the south along with
breathtaking sunsets to the west. Plus,
unique desert plants abound—like the
saguaro, a giant cactus that flourishes in
the Southwest.
What truly draws visitors to Cave Creek
Regional Park, however, is its variety of
recreational opportunities. Hikers will
discover more than 13 miles of trails amid
elevations ranging from 2,000 to 3,060
feet. The two-mile Overton Trail provides
an easy walk, and it can be combined
Horseback Riding
Nature Center
with the 5.8-mile Go John loop for a more
strenuous trek that meanders around a
mountain. You’ll feel as if you’re miles from
civilization. Free guided hikes are available
to the historic mining sites, as well.
Other activities at Cave Creek Regional
Park include mountain biking, picnicking
and camping. Horseback riding is
also popular. Cave Creek Trail Rides,
623.742.6700, offers several fun outings—
all with the option of dressing up in
authentic cowboy hats, boots and chaps.
The one- to three-hour rides are designed
to give you a taste of life in the Old West.
And don’t forget to stop by the Nature Center,
which is open daily from 8 a.m. to 4 p.m.
In addition to multimedia exhibits about
the region, you can get a close look at live
snakes, a desert tortoise and a Gila monster.
To visit Cave Creek Regional Park, take
Interstate 17 to Carefree Highway and
drive east for seven miles. You’ll turn
left on 32nd Street, which leads to the
entrance. There is a fee of $6 per vehicle.
Park hours are Sunday through Thursday
from 6 a.m. to 8 p.m. and Friday through
Sunday from 6 a.m. to 10 p.m. For more
information, call 623.465.0431.

Superstition Mountain Golf Course
SUPERSTITION MOUNTAIN GOLF & COUNTRY CLUB
OFFERS A TREASURE TROVE OF GOLF
by Yvonne Newman
The economic downtown hasn’t brought all bad news, especially for golfers. Several
private clubs have loosened their members-only policies. At Superstition Mountain
Golf & Country Club, which is located on the eastern edge of Mesa, the public is now
allowed to play on two divine Jack Nicklaus-designed courses as “club guests.”
We keep one of the courses private for
our members every day, and one course
is available for club guest play,” said Gene
Blum, general manager. “We rotate them
daily, so everyone has the chance to play
both courses.”
A prestigious venue that has hosted countless
tournaments, Superstition Mountain Golf
& Country Club boasts the championship
Prospector and Lost Gold courses. Both
have 18 impeccably conditioned holes and
lie at the foot of a magnificent mountain.
“The first and most notable advantage
our courses have is the view of
Superstition Mountain,” said Blum. “No
matter where you are in your game, the
mountain is present.”
“Intermediate players have the opportunity to make a couple of birdies when
they are able to manage the course, but
still be challenged to grind out a par or
bogey to keep their round alive,” explained
Blum. “And advanced players will really
appreciate the design and conditioning.
Regardless of how well a shot is hit, it
must be from the correct angle to get in
close to the pin.”

RECREATION PHOENIX
Summer is a great time to play at
Superstition Mountain Golf & Country
Club. The rates are lower, and golfers often
find they have the course to themselves
during their round. The service bestowed
here is unmatched, as well.
“We’re one of the few courses in the valley
that not only provides bottled water in the
cart at the start of the round, but also has
several refill stations during your round
to stay hydrated in the heat,” added Blum.
“Plus, it’s hard to beat a morning round of
golf followed by a cool drink at the resort’s
pool in the afternoon.”
For more information or to reserve a tee
time, call 480.983.3200.

These courses are devised to be inviting
and challenging. Golfers can play from
five separate tee markers, depending on
their ability. Although it’s not always easy
to score, the courses are enjoyable for all
skill levels. For example, there is plenty
of room off the tee boxes and around the
greens for beginning players to stay in the
grass if they make a poor shot.
“THE FIRST AND
MOST NOTABLE
ADVANTAGE OUR
COURSES HAVE
IS THE VIEW OF
SUPERSTITION
MOUNTAIN. NO
MATTER WHERE YOU
ARE IN YOUR GAME,
THE MOUNTAIN
IS PRESENT.”

SAFETY FIRST
SMOKING
Customer safety is Allegiant’s® first concern.
Please be advised that interference with the
duties of crew members, including flight
attendants, is a violation of federal laws.
Smoking and the use of other tobacco
products are not permitted on any Allegiant
flight. Federal law imposes fines of $1,000 for
smoking and up to $2,000 for any attempt to
disable an aircraft smoke detector.
Our crews are thoroughly trained in all safety
procedures. To ensure your own safety, we
hope you take a moment to review the safety
information card located in the seat pocket in
front of you. Be aware of the following:
•Location of the nearest emergency exit
•Location of your emergency oxygen
mask, if needed
•Correct procedure for exiting the
cabin in an emergency
SEAT BELTS
Seat belts must be fastened ANY TIME the
seat belt sign is on, during taxi, takeoff and
landing. Once the seat belt sign is turned
off, you may walk around the cabin. Due
to unexpected turbulence, it is strongly
recommended that you keep your seat
belt fastened any time while in your seat.
Allegiant’s exit seating policy does not
allow the use of seat belt extensions in the
exit seats due to tripping hazards.
CHILD RESTRAINT SEATS
Federal Aviation Administration requires
that all child restraint seats used on
planes meet federal safety standards.
Acceptable seats bear proper labeling “THIS
RESTRAINT IS CERTIFIED FOR USE IN
MOTOR VEHICLES AND AIRCRAFT” from
the manufacturer. Unlabeled seats or seats
manufactured before Jan. 1, 1981, are not
acceptable. Child restraint seats are to be
placed into a window seat and secured with
an aircraft seat belt.
ELECTRONIC DEVICES
Prior to departure, passengers may use
cellular phones (and two-way pagers) only
when the main cabin door is open. After
landing, the flight attendant will make
an announcement indicating when it is
permissible to use cell phones, while the
plane is taxiing into the gate area.
Electronic games, laptop computers, tape/
CD/DVD and MP3 players may be used in
flight. An announcement will be made when
it is permissible to do so. TVs, radio receivers
and/or transmitters (including AM/FM/SW,
CB and scanners), and remote-controlled
toys are not permitted for use at any time.
For reasons of safety, Allegiant recommends
that passengers not wear headsets during
taxi, takeoff and landing.
ALCOHOLIC BEVERAGES
Allegiant is forbidden to serve alcoholic
beverages to anyone who appears to be
intoxicated or who has not yet reached
the age of 21. It is a violation of federal
regulations to drink alcoholic beverages
during a flight unless they have been
served by Allegiant personnel.
