Hailed nationwide as being the place for a dry-aged premium steak, this eloquent restaurant offers a dining experience unlike many others. The warm mahogany undertones and dim lighting make this classically romantic restaurant the perfect setting for a special occasion or an exceptional night out on the town. Take your Vegas experience home with this delicious recipe from Capital Grille. CITRUS GLAZED SALMON FILLET 4 (8 oz) Salmon Fillets 2 tsp Kosher Salt 1 stick (4 oz) Unsalted Butter, Clarified ¼ cup + 2 tbsp Citrus Glaze 1 tsp Freshly Ground Black Pepper 4 sprigs Chervil 1. Pre-heat the oven to 350°F and season the salmon fillet on both sides with salt and pepper. 2. Place 3 tbsp of clarified butter in a pre-heated skillet and heat until wisps of smoke appear. Place the salmon fillet, flesh side down, in the pre-heated pan. Sear the fish for approximately four minutes until golden brown and crisp on the surface. Remove from the pan and place on a baking sheet. 3. Liberally brush the fish with citrus glaze and roast until cooked through, but moist, approximately five minutes depending on thickness. During the first few minutes of cooking, the fish will feel fleshy. When the fish begins to feel firm, it is usually perfectly done. 4. Place the cooked salmon on top of roasted vegetables and drizzle a small amount of glaze over the salmon and vegetables. Garnish with chervil and serve immediately. CITRUS HONEY GLAZE ¾ cup Freshly Squeezed Lemon Juice ¾ cup Honey 1 Whole Star Anise 1 tsp Black Peppercorns 2 tbsp Fresh Lemon Zest, no White Pith 2 oz Bulleit Bourbon ½ oz Simple Syrup Ginger Beer 2. Reduce the heat and simmer for 12-15 minutes. 3. Remove from the heat and allow to steep for 10 minutes. 4. Strain, fold in zest and reserve at room temperature until service. Jaleo’s Traditional Paella Johnny Smalls Sliders LA CAVE AT WYNN LAS VEGAS With its low-slung ceilings and cozy nooks, this intimate wine and food hideaway is the ideal spot for indulging in hot and cold small plates, oven-fried flatbreads and other tasty items that are perfect for sharing. A perennial favorite in Washington, D.C., one visit to Jaleo’s new Las Vegas location and it’s easy to see why Chef José Andrés’ restaurant set the standard for Spanish cuisine in the U.S. for almost two decades—nothing on its menu disappoints! Must-tries include the filling Rossejat, a traditional paella of fried pasta with cuttlefish and Norwegian lobster; the juicy Carne Asada con Piquillos Julián de Lodosa (grilled hanger steak with piquillo pepper confit); and the flavorful Croquetas de Pollo, traditional chicken fritters served in a shoe. LAS VEGAS DINING 15 Celine Dion CELINE DION’S NEW LAS VEGAS SHOW IS TRULY IN A CLASS BY ITSELF by Heather Turk There’s a reason why Celine Dion has sold more than 200 million albums around the world, and it’s showcased front and center in her new show at The Colosseum at Caesars Palace. Not to say that it wasn’t showcased in “A New Day…,” Dion’s first Las Vegas production. In fact, Dion’s powerhouse vocals could hardly ever just disappear into the background, but “A New Day…” was such a visual feast that sometimes it was easy to forget Dion was actually somewhere onstage performing live. Dion’s latest triumph is a much more personal, intimate production, something ticketholders will realize before the five-time Grammy Award winner even steps onstage. The show opens with a brief video that shows the celebrated songstress taking her final bow at The Colosseum on Dec. 15, 2007, saying how she hopes to one day return. Then, audiences are taken around the world with Dion as they follow her on her Taking Chances World Tour. Clips of Dion performing and interacting with the public are interspersed with rare footage showcasing the singer in her most important role—as a mom. The video concludes with Dion returning to Caesars Palace last February for rehearsals before the curtain parts, revealing the singer in one of seven breathtaking outfits she wears throughout the evening. Celine Dion 16 ENTERTAINMENT LAS VEGAS However, the one thing that will really stick with audiences is just how amazing Dion’s voice sounds. A total of 31 join Dion on her latest venture, which features Dion singing not only some of her biggest hits (including “Beauty and the Beast”) but also songs by Ella Fitzgerald, Michael Jackson, Janis Ian and several others. Although listening to Dion sing Billy Joel’s “Lullabye” while footage of her sons plays behind her is touching, it’s Dion’s emotional performance of Jacques Brel’s “Ne Me Quitte Pas,” which literally moves the singer to tears, that truly steals the show. And that says a lot considering the 90-minute production also features Dion singing a duet with herself! Other memorable moments include a performance with Stevie Wonder, a tribute to James Bond and a wet and wild encore that has to be seen to be believed. Trainer for a Day Program DIVE INTO THE MIRAGE’S DOLPHIN TRAINER FOR A DAY PROGRAM by Heather Turk Dreams come true in Las Vegas every day, but not every dream requires you to risk your life’s savings on black for it to become a reality. Whether you’re male or female, a teenager or an adult, odds are at some point in your life you’ve dreamt of interacting with dolphins. Well, thanks to The Mirage’s Trainer for a Day program at Siegfried & Roy’s Secret Garden and Dolphin Habitat, that dream can become a reality. Open to dolphin lovers ages 13 and older, the all-day program truly offers an experience of a lifetime, letting guests work side-by-side with The Mirage’s dolphin care specialists as they work with the facility’s beautiful Common Bottlenose Dolphins. Every participant’s experience is different based on each dolphin’s need, guaranteeing that no two programs are ever exactly the same. The adventure begins at 9:45 a.m. when participants are greeted by their program facilitator for a brief behind-the-scenes tour of the Dolphin Habitat to help familiarize them with their surroundings. During the tour, guests are given a detailed lesson on a dolphin’s anatomy so that they know more about the mammals they’re about to work with, and will learn the basic hand signals used to communicate with them. Following a quick continental breakfast, guests will change into their wetsuits and meet up with the dolphin care specialists to see what the day has in store. Guests may also get to kiss a dolphin or partake in a quick splashing game with one of them. Participants might even be asked to do a little elbow work, scrubbing the dolphins’ food buckets. It’s all part of being a trainer for the day. The $550 program concludes around 4 p.m. and, with the exception of a tasty hour-long, threecourse lunch, participants are generally with the dolphins for the duration of the day. Although the experience isn’t anything guests will soon forget, participants are given a photo CD of their experience to take home with them, as well as other keepsakes. Just ask Celine Dion, who asked Brown to open for her on the North American leg Criss Angel of her Taking Chances World Tour. Not surprisingly, the Golden Nugget recently announced that it had signed Brown on for another six years, with the option to renew his critically acclaimed show “Gordie Brown Live” every two years. Since returning to the Golden Nugget on Feb. 5, 2009 (Brown previously performed at the downtown hotel for two years before moving to The Venetian in 2006 and then briefly to the V Theater inside the Miracle Mile Shops at Planet Hollywood Resort & Casino), Brown’s hit show “Gordie Brown Live” has been embraced by audiences of all ages. Part of the reason no two shows are ever the same is because Brown tailors each night’s performance to the audience on hand. While Brown anxiously awaits the day Pacino and Carrey see him perform, he’s made sure to make use of the limited free time he has (Brown is currently traveling back and forth between Las Vegas and L.A. doing some acting work and developing his “Being at the Nugget the audience’s age changes nightly, so I always adjust my show accordingly,” Brown said. “I never want to go one way and not the other. ONE MAN’S TALE OF HOW BLUE MAN GROUP CHANGED HIS LIFE by Heather Turk A lot of shows are entertaining, but very few are ever life-changing. However, for Scott Bishop, seeing a performance of Blue Man Group back in New York in 1997 changed his life. “I was instantly enthralled,” Bishop, who at the time was touring the world with a percussion performance group called Scrap Arts Music, said. “The show was just so innovative.” Photo by James Porto and courtesy of Blue Man Productions It wasn’t until January 2005, though, that Bishop actually auditioned to be a Blue Man. Bishop attended a casting call in Canada, and out of the hundreds of people who auditioned, was one of only two to get picked. “It was like winning the lottery,” Bishop recalled. “I had spent many years working as a freelance musician, living pretty much hand-to-mouth. I survived however I could—99-cent cheeseburgers at McDonald’s, credit cards… It was a hard life, and I was so grateful for the opportunity. I just love being onstage and interacting with audiences.” Following two months of training in New York, Bishop became part of the original cast that opened Blue Man Group in Toronto. Since then, he has performed the show in Germany, Switzerland and on the Megastar World Tour before joining the Las Vegas cast at The Venetian last July. Bishop said that the people who come to see the show are what makes it a different experience across the globe. “In Toronto and Germany, the audiences are much more reserved,” Bishop stated. “They don’t show any expression until the end when they clap. But in Las Vegas, the audience is very vocal. They’re excited to be there.” Bishop credits Blue Man Group’s worldwide popularity with the fact that it’s so different from other productions. “THE BLUE MAN CHARACTER IS SO UNIQUE. A picnic lunch is one of the most pleasurable aspects of visiting Mount Charleston, which is located about 35 miles northwest of the Strip. Not only will you enjoy fresh air and more than 50 miles of trails, but the temperature is 20 to 30 degrees cooler than it is on the valley floor. Here are some of the best places to lay your picnic blanket. MARY JANE FALLS This is one of the easiest and most popular hikes at Mount Charleston. The trail is 2.4 miles round-trip. It utilizes switchbacks and can be strenuous, due to a 900foot elevation gain. The payoff is a 100-foot waterfall. Apt to be more of a trickle during this time of year, it’s still a wonderful spot to pull out your picnic basket amid ponderosa pine and aspen trees. Wadowski If you think all breweries are the same, then clearly you’ve never been to Karl Strauss Brewing Company. Founded in 1989, Karl Strauss Brewing Company was the first brewpub to open in San Diego, Calif., in more than 50 years. Its founders, recent college graduates Chris Cramer and Matt Rattner, wanted to open a microbrewery in Cramer’s hometown to reintroduce locally brewed, handcrafted beer to its residents, a concept banned by Prohibition in the 1930s. With the help of Cramer’s cousin Karl (as in Karl M. Strauss), a world-renowned master brewer for more than 50 years, the duo opened their first brewpub in downtown San Diego on Feb. 2, 1989. Cirque du Soleil’s latest permanent production is a lyrical, fanciful, kinetic foray into the seventh art that brings together dance, acrobatics, live video and filmed sequences to take spectators on a fantastic voyage through the history of cinema and its genres. Written and directed by directorchoreographer Philippe Decouflé, whose credits include the opening and closing ceremonies of the 1992 Winter Olympics, and featuring music by Grammy- and Emmy Award-winning composer Danny Elfman (“Batman,” “Desperate Housewives”), “Iris” will be presented exclusively at the Kodak Theatre, home of the Academy Awards. Preview performances begin July 21 and the show is set to have its gala premiere on Sept. 25. “WHILE ‘IRIS’ DOES NOT REFERENCE INDIVIDUAL FILMS, IT DOES SPEAK ABOUT HOW MOVIES ARE MADE, WHAT THEY MEAN TO US, THE VARIOUS GENRES AND HOW WE EXPERIENCE THEM.” “For many reasons—especially a large population that has traditionally shown a very big interest in and support of Cirque du Soleil, a base of tourists and the long-term availability of an iconic venue with a very appropriate address—Los Angeles seemed a natural choice for not just a resident Cirque du Soleil show, but for this resident Cirque du Soleil show,” said Chantal Côté, corporate PR manager for Cirque du Soleil. “While ‘Iris’ does not reference individual films, it does speak about how movies are made, what they mean to us, the various genres and how we experience them.” Unlike Cirque du Soleil’s Las Vegas shows, “Iris” will have an intermission, bringing its total running time to approximately two hours. The show will feature 72 performers, 200 costumes, 8,300 square feet of floor surface, 174 loudspeakers, 603 lighting features, 20 video projectors and 166,000 watts of sound. However, “Iris” has been designed to be entirely removable so that it can be stored for two months when the Academy of Motion Picture Arts and Sciences needs the theater for the Oscars. Here are a few can’t-miss restaurants that are using truly local and farm-fresh ingredients: KAI As the only AAA Five Diamond and Forbes Five Star award-winning restaurant in the state of Arizona, Kai is truly a special place to enjoy a spectacular meal. Located within the Sheraton Wild Horse Pass Resort in Chandler, Kai goes above and beyond to bring its guests a unique dining experience. The cuisine here is described as “Native American with Global Accents,” and uses many locally-sourced products in its dishes. Kai Filet Joe’s Farm Grill JOE’S FARM GRILL Recently featured on Food Network’s “Diners, Driveins, and Dives” with Guy Fieri, this restaurant prides itself on “doing common food uncommonly well and served quickly.” Created by Joe Johnston in the farm house that he grew up in as a child in Gilbert, this restaurant serves such favorites as burgers, pizzas and salads. Joe’s Farm Grill prides itself on emphasizing the use of local products and much of the produce that is used can be traced to the Johnston farm itself. If a product is unavailable, the restaurant looks to other local farmers across the state. Joe’s Farm Grill is located at 3000 E. Ray Rd. in Gilbert and is open 8 a.m. to 9 p.m. Quiessence 54 DINING PHOENIX Located on the historic Farm at South Mountain property in Phoenix, this restaurant is truly reliant on local farmers, as its menu changes daily based on what is available. Rated a AAA Four Diamond restaurant, Quiessence and its contemporary American cuisine has also been called “the best restaurant in Phoenix” by Phoenix Magazine. Maya’s Farm, located just yards from the restaurant, frequently dictates what will be on that day’s menu. It covers 2,992 acres of peaceful wilderness just north of Phoenix and Mesa. Once packed with miners, the area is now one of Maricopa County’s newest parks attracting thousands of visitors each year. Cave Creek Regional Park has a long history. The Hohokam Indians settled in its majestic foothills in 800 A.D. and thrived for many centuries. Reminders of their presence—petroglyphs and arrowheads—are still around. In the 1870s, miners stricken with gold fever or a desire for silver, copper, lead and tungsten came to try their luck. They had minimal success and abandoned the area within a century. Brimming with interesting geological formations, it also offers unforgettable views. You can see the sprawl of Phoenix to the south along with breathtaking sunsets to the west. Plus, unique desert plants abound—like the saguaro, a giant cactus that flourishes in the Southwest. What truly draws visitors to Cave Creek Regional Park, however, is its variety of recreational opportunities. Hikers will discover more than 13 miles of trails amid elevations ranging from 2,000 to 3,060 feet. The two-mile Overton Trail provides an easy walk, and it can be combined Horseback Riding Nature Center with the 5.8-mile Go John loop for a more strenuous trek that meanders around a mountain. You’ll feel as if you’re miles from civilization. Free guided hikes are available to the historic mining sites, as well. Other activities at Cave Creek Regional Park include mountain biking, picnicking and camping. Horseback riding is also popular. Cave Creek Trail Rides, 623.742.6700, offers several fun outings— all with the option of dressing up in authentic cowboy hats, boots and chaps. The one- to three-hour rides are designed to give you a taste of life in the Old West. And don’t forget to stop by the Nature Center, which is open daily from 8 a.m. to 4 p.m. In addition to multimedia exhibits about the region, you can get a close look at live snakes, a desert tortoise and a Gila monster. To visit Cave Creek Regional Park, take Interstate 17 to Carefree Highway and drive east for seven miles. You’ll turn left on 32nd Street, which leads to the entrance. Several private clubs have loosened their members-only policies. At Superstition Mountain Golf & Country Club, which is located on the eastern edge of Mesa, the public is now allowed to play on two divine Jack Nicklaus-designed courses as “club guests.” We keep one of the courses private for our members every day, and one course is available for club guest play,” said Gene Blum, general manager. “We rotate them daily, so everyone has the chance to play both courses.” A prestigious venue that has hosted countless tournaments, Superstition Mountain Golf & Country Club boasts the championship Prospector and Lost Gold courses. Both have 18 impeccably conditioned holes and lie at the foot of a magnificent mountain. “The first and most notable advantage our courses have is the view of Superstition Mountain,” said Blum. “No matter where you are in your game, the mountain is present.” “Intermediate players have the opportunity to make a couple of birdies when they are able to manage the course, but still be challenged to grind out a par or bogey to keep their round alive,” explained Blum. “And advanced players will really appreciate the design and conditioning. The rates are lower, and golfers often find they have the course to themselves during their round. Although it’s not always easy to score, the courses are enjoyable for all skill levels. Unlabeled seats or seats manufactured before Jan. 1, 1981, are not acceptable. Child restraint seats are to be placed into a window seat and secured with an aircraft seat belt. ELECTRONIC DEVICES Prior to departure, passengers may use cellular phones (and two-way pagers) only when the main cabin door is open. After landing, the flight attendant will make an announcement indicating when it is permissible to use cell phones, while the plane is taxiing into the gate area. Electronic games, laptop computers, tape/ CD/DVD and MP3 players may be used in flight. An announcement will be made when it is permissible to do so. TVs, radio receivers and/or transmitters (including AM/FM/SW, CB and scanners), and remote-controlled toys are not permitted for use at any time.
